Efficacy of active and passive modified atmosphere packaging on quality preservation and storage life of pomegranate fruit and arils: A review

Pomegranate has nutritional value and health benefits due to its bioactive compounds and antioxidant properties. Fruit consumption is strongly recommended due to its high content of vitamins, fiber, minerals, and polyphenols. Supplying ready-to-eat pomegranate can be a beneficial technique to increase consumption with regard to its nutritional properties. However, maintaining nutritional quality and preventing microbial spoilage is a major challenge. Fruit quality is lost with visible symptoms such as weight loss, shriveling, husk scald, chilling injury, fungal rot, aril color degradation, and off-flavor during long-term storage. Therefore, it is very important to use appropriate strategies to maintain pomegranate whole fruit and aril quality. Gases around the product create a suitable environment for oxidative reactions and aerobic microorganism growth. Therefore, changing the atmosphere around the product can help maintain its quality. One of the effective methods to increase the postharvest life of products is to use modified atmosphere packaging (MAP), which reduces microbial spoilage and chilling injury, preserves the quality, and extends the shelf life by reducing the respiration rate. Modified atmosphere packaging, which uses natural atmospheric components (O2, CO2 and N2), has been widely accepted due to the lack of toxic residues on the product. This review discusses on recent research in terms of MAP application on quality properties and postharvest life of pomegranate fruit and arils during storage.

Impact of the Pre-Harvest Biocontrol Agent and Post-Harvest Massive Modified Atmosphere Packaging Application on Organic Table Grape (cv. ‘Allison’) Quality during Storage

The marketing value of table grapes is contingent upon several quality requirements, mostly related to microbial decay, sugar/acidity ratio, and colour. This research explores the impact of combining organic-cultured compatible techniques to delay disorders along with organic grape distribution in post-harvest. Aurebasidum pullulans in-field application on grape bunches at three growing stages as a biocontrol agent against grey mould growth coupled with massive modified atmosphere packaging (MMAP; 20% CO2, 10% O2) equipped with a breathable valve was tested. The in-field treatment had a significant impact on the colour and sugar content of the grapes at harvest and the mould count evolution during storage, whilst the trend of the other parameters was mainly affected by the interaction of the variables tested. The untreated batch experienced the worst behaviour and the packaging was paramount in preserving the moisture content and appearance of the bunches. The findings of this study may contribute to developing novel practices for setting a smart distribution of organic table grapes and reducing food waste.

Selective gas-permeation films with nanoMOFs as gas “Switches” for mango preservation

The storage atmosphere of low O2 and high CO2 concentration can regulate plant cell respiration and microbial growth, which plays a crucial role in food preservation. However, traditional modified atmosphere packaging (MAP) cannot accurately control gas penetration. In this study, a novel strategy for accurately controlling the selective CO2/O2 permeation is developed by using nanoMOFs with different pore structures as gas “switches”. Combined with experimental data and molecular simulation results show that the selective CO2/O2 permeations of nanoMOFs/carboxymethylcellulose(CMC)/Zein are successfully controlled from 2.87 ± 0.12 to 8.65 ± 1.63 owing to the synergistic effect of nanoMOFs with different pore structures and the different affinity between nanoMOFs and molecules of CO2 and O2. In which, 1.6 % HKUST-1/CMC/Zein has the best CO2/O2 selectivity of 8.65 ± 1.63. Furthermore, the 1.6 % HKUST-1/CMC/Zein with excellent antibacterial activity and selective CO2/O2 permeation can maintain the appearance and freshness of mango for at least 7 days compared with other packaging films. Therefore, we have developed a new type of gas “switches” for MAP to accurately control the selective permeation of gases at the molecular level, which will expand the application of MAP in food preservation field.

Modifiye atmosfer ile paketlemenin etli mantının raf ömrü ve kalite özelliklerine etkisi

This study aimed to evaluate the effects of modified atmosphere packaging on the shelf-life and quality characteristics of mantı (a meat-filled pasta product) stored in refrigerator conditions. In this direction, mantı, whose humidity value is reduced to 34% with the pre-drying process, were packaged with different gas mixtures (ambient air, 80% CO2 + 20% N2, 60% CO2 + 40% N2, 40% CO2 + 60% N2, 20% O2 + 40% CO2 + 40% N2) and kept in cold storage for 90 days. In this process, mantı samples were analysed regarding physico-chemical, microbiological, colour and sensory parameters. According to the findings, Escherichia coli, sulfide-reducing anaerobic bacteria and Salmonella spp. were not detected. While total aerobic mesophilic microorganism and mould yeast counts increased throughout storage, they were lowest in packages containing 80% CO2. The high count of microorganisms in the samples packaged with ambient air also showed parallelism with the lipid oxidation values, causing the products to remain below acceptable sensory levels starting from the 60th day of storage. In the modified atmosphere packaging application, the increased amount of carbon dioxide in the package ensured that the texture and flavour properties of the mantı were preserved close to the first day during their shelf life. As a result, the modified atmosphere packaging application preserved the quality characteristics of mantı for a long time, increased their stay in the aisle and allowed them to be acceptable to consumers. While the protective effect increased, especially with the increasing amount of CO2 in the gas composition, the product's sensory properties were also preserved during storage, and economic losses could be prevented.

High-Barrier, Biodegradable Films with Polyvinyl Alcohol/Polylactic Acid + Wax Double Coatings: Influence of Relative Humidity on Transport Properties and Suitability for Modified Atmosphere Packaging Applications.

Polyvinyl alcohol (PVOH) exhibits outstanding gas-barrier properties, which favor its use as a biodegradable, high-barrier coating on food-packaging films, possibly in combination with modified atmospheres. Nonetheless, its high sensitivity to water can result in a severe loss of barrier properties, significantly limiting its applications with fresh foods and in high-humidity conditions. In this work, the water vapor (PWV) and oxygen permeability (PO2) of high-barrier biodegradable films with PVOH/PLA + wax double coatings were extensively characterized in a wide range of relative humidity (from 30 to 90%), aimed at understanding the extent of the interaction of water with the wax and the polymer matrices and the impact of this on the permeation process. What is more, a mathematical model was applied to the PWV data set in order to assess its potential to predict the permeability of the multilayer films by varying storage/working relative humidity (RH) conditions. The carbon dioxide permeability (PCO2) of the films was further evaluated, and the corresponding permselectivity values were calculated. The study was finally augmented through modified atmosphere packaging (MAP) tests, which were carried out on double-coated films loaded with 0 and 5% wax, and UV-Vis analyses. The results pointed out the efficacy of the PLA + wax coating layer in hampering the permeation of water molecules, thus reducing PVOH swelling, as well as the UV-shielding ability of the multilayer structures. Moreover, the MAP tests underlined the suitability of the double-coated films for being used as a sustainable alternative for the preservation of foods under modified atmospheres.

Improvement of shelf-life of cherry (Prunus avium L.) by combined application of modified-atmosphere packaging and antagonistic yeast for long-distance export.

The last decade has seen a growing interest in reducing the use of chemical fungicides for postharvest decay control. In the research for new, safe alternatives, the combined application of biocontrol agents and passive modified-atmosphere packaging (MAP) has been shown to be a promising strategy to extend fruit quality. Therefore, the aim of this work was to evaluate the effect of the combined application of MAP and two antagonistic yeasts, Metschnikowia pulcherrima L672 and Pichia kudriavzevii PK18, on sweet cherry shelf life. Microbiological, physico-chemical, and quality fruit analysis from batches treated with antagonistic yeast were compared with a control batch without yeast application and a batch to which fludioxonil (Scholar®) was applied. The composition of the atmosphere and physico-chemical traits showed similar values among the different batches during cold storage. However, interestingly, the combination of MAP with the antagonistic yeasts M.pulcherrima L672 and P.kudriavzevii PK18 increases the control of microbiological spoilage with results comparable to the application of fludioxonil. In addition, these batches experienced a slight decrease in volatile compounds associated with fresh fruit aroma, whereas in the control batch an increase of altered fruit aromas was observed. The same effect of control of spoilage was observed during the shelf life period. These results showed the positive effect of the combination of antagonistic yeasts and MAP, obtaining similar results in terms of control of microbiological spoilage and physico-chemical quality compared with the application of fludioxonil. © 2023 The Authors. Composition-based statistical model for predicting CO2 solubility in modified atmosphere packaging application

Carbon dioxide (CO 2 ) is an important gas used in modified atmosphere packaging of non-respiring foods where it solubilizes into the aqueous and lipid phases of food and exerts an antimicrobial effect. Prediction of CO2 solubility within food is thus of paramount importance to anticipate its benefit on food preservation. In the present study, machine learning algorithms were applied on a set of 362 values of CO 2 solubilities collected from the scientific literature to tentatively predict the solubility as a function of food composition (water, protein, fat and salt content) and temperature. The best option kept was a random forest algorithm that was used to predict CO 2 solubility in four food case studies (ham, salmon, cheese and pâté) that were further used as input parameters in the MAP’ OPT tool, predicting the evolution of headspace gas composition. Predicted CO 2 solubilities used as input parameters succeeded in representing the CO 2 headspace dynamic as a function of time in the four case studies.

Gas Absorbent Based Modified Atmosphere Packaging to Optimize Dragon Fruit Shelf Life

Dragon fruit is a promising export commodity for Indonesia. But its short shelf-life is a big challenge for an international shipping by sea. This study aims to prolong the dragon fruit shelf life by implementing gas absorbent based Modified Atmosphere Packaging (MAP) in combination with cold storage. This technique decreases the fruit physiological processes by lowering O2 concentration (%) inside the MAP. The selected dragon fruit was packed with gas absorbent-based MAP with different O2 absorber capacities (30 cc; 60 cc; and 120 cc) and plastic types (biodegradable plastic and LDPE). Each treatment was also varied with the use of H2O absorbent and perforation. Then, the dragon fruit in MAP was stored at 5°C and 90% RH for 6 weeks as shipping simulation. After storage, the dragon fruit was transferred to 27°C room temperature without MAP. The results showed that the application of gas absorbent-based MAP, additional treatments, and low temperature were generally able to maintain the quality of dragon fruit up to 6 weeks in cold storage. However, dragon fruit developed signs of chilling injury, increased water loss, increased weight loss, decreased hardness, skin damage, fin withering, and mold growth after transfer at 27°C room temperature without MAP.

Electrospun Smart Oxygen Indicating Tag for Modified Atmosphere Packaging Applications: Fabrication, Characterization and Storage Stability.

Pack integrity is essential for the success of modified atmosphere packaging of food products. Colorimetric oxygen leak indicators or tags are simple and smart tools that can depict the presence or absence of oxygen within a package. However, not many bio-based electrospun materials were explored for this purpose. Ultraviolet light-activated kappa-carrageenan-based smart oxygen indicating tag was developed using the electrospinning technique in this study and its stability during storage was determined. Kappa-carrageenan was used with redox dye, sacrificial electron donor, photocatalyst, and solvent for preparing oxygen indicating electrospun tag. Parameters of electrospinning namely flow rate of the polymer solution, the distance between spinneret and collector, and voltage applied were optimized using Taguchi L9 orthogonal design. Rheological and microstructural studies revealed that the electrospinning solution was pseudoplastic and the mat fibers were compact and non-woven with an average fiber size of 1–2 microns. Oxygen sensitivity at different oxygen concentrations revealed that the tag was sensitive enough to detect as low as 0.4% oxygen. The developed tag was stable for at least 60 days when stored in dark at 25 °C and 65% RH. The developed mat could be highly useful in modified atmosphere packaging applications to check seal integrity in oxygen devoid packages.

The Effect of Packaging Methods on Characteristics of Zalacca During Storage

Modifying storage conditions through modified atmosphere packaging (MAP) is an effort that can be done to maintain the quality and shelf life of zalacca fruit. The application of MAP causes the concentration of O2 and CO2 to change from normal conditions so that it affects the physiological activity of the fruit. MAP in this study was carried out through the application of several packaging techniques for zalacca fruit. The packaging technique includes packaging using plastic wrap, 0.05 mm LDPE plastic with 12 perforations with a diameter of 0.5 cm, packaging with 0.05 mm LDPE plastic by adjusting the composition of the air in the plastic at 9% O2 and CO2 concentrations, and control. Zalacca fruits were cleaned by brushing, treated with immersion in 5% galangal extract, air-dried, packed in various packaging techniques, then stored in a refrigerator at 12°C and stored for 21 days. Observations were made every 7 days on weight-loss parameters, moisture content of skin and flesh, total soluble solids, and visual observations of zalacca fruit appearance. The results showed that the use of wrapping plastic film as a packaging material could reduce weight loss and maintain moisture content and TSS and better maintenance of visual appearance.

Benefits of modified atmosphere packaging in maintaining ‘Hayward’ kiwifruit quality at room temperature retail conditions

ABSTRACT Modified atmosphere packaging (MAP) is a promising approach to extend the storage life of kiwifruit (Actinidia deliciosa) and reduce food waste at retail. To investigate the effect of MAP on maintaining fruit quality during post-storage shelf life, ‘Hayward’ kiwifruit were stored in MAP or air (perforated polyethylene film) at 1°C 60%–70% RH for 35 days before being repacked in either perforated film (air), a non-perforated (MAP) retail bag or in MAP with an ethylene scrubber (ES) and stored at 20°C 67%–70% RH for 10 days (simulating retail conditions). The atmospheres created by MAP were 12%–15% O2 + 3%–4% CO2 at 1°C and 12%–16% O2 + 7%–10% CO2 at 20°C. MAP reduced kiwifruit softening during coolstorage, and this benefit was maintained during subsequent shelf life. However, MAP in simulated retail conditions benefited only weight loss and SSC. Ethylene was detected only in retail bags with rotten fruit, including one with an ES, suggesting that an ES may not be sufficient to manage ethylene in retail conditions. The application of MAP in retail as a means of reducing fruit losses at the end of the supply chain requires further research attention.

Layer-by-layer assembly of lysozyme with iota-carrageenan and gum Arabic for surface modification of food packaging materials with improved barrier properties

The study aimed to investigate the surface modification of biaxially oriented polypropylene (BOPP) by layer-by-layer (LbL) assembly of lysozyme (LZ) with two different polysaccharides, iota-carrageenan (IC) and gum arabic (GA), for food packaging applications. The effects of solution pH, adsorption time, elimination of intermediate drying steps were investigated. The LbL film growth was monitored up to 10 deposition steps by UV–Vis spectroscopy and in situ surface plasmon resonance (SPR). The most successful processing conditions for both types of coatings were pH 7–7 combination with intermediate drying and 20 min adsorption time. SPR pointed out a ‘dissolution/reconstruction’ mechanism in film formation. The thickness and surface morphology of the coatings were characterized by Atomic force microscopy (AFM). The surface roughnesses of LZ/IC coatings were higher than that of LZ/GA coatings indicating a denser matrix in the latter. Deposition of 5 bilayers of LZ/IC and LZ/GA on BOPP resulted in 66.15% and 56.89% reduction in oxygen transmission rate (OTR) of the film, respectively. The corresponding reductions in water vapor transmission rate (WVTR) were 28% and 33.52%, respectively. Elimination of intermediate drying steps resulted in less overall deposition, rougher surfaces, diminished oxygen and water barrier properties. The edible LbL coatings obtained in this study possess good gas barrier properties, which is very promising for their use in the preservation of fresh/fresh-cut produce in combination with modified atmosphere packaging applications. The results promise reduced use of plastic films in food packaging.

Activity of Clove Oil and Chitosan Nanoparticles Incorporated PVA Nanocomposite Against Pythium aphanidermatum.

The loss of fresh produces owing to the microbial infestation is a major challenge to the global food industry. The drastic food loss caused mainly by the fungal attack demands the need for development of active packaging materials with antimicrobial properties. Many studies have already been reported on the applications of polymers like polyvinyl alcohol (PVA) engineered with antimicrobial components as active antifungal packaging materials. In the current study, material properties of PVA alone, PVA incorporated with chitosan nanoparticles (PCS), clove oil (PCO), and their combination (PCSCO) have been studied for its microbial barrier and antifungal properties. All the developed films were characterised by the XRD and FTIR analysis, which confirmed the molecular interactions among the individual components of the nanocomposite. At the same time, the bionanocomposite PCSCO was found to have low moisture content and film solubility indicating its suitability for the modified atmosphere packaging applications. In addition, the presence of chitosan nanoparticles and clove oil was found to provide the microbial barrier properties to the PCS, PCO, and PCSCO films. The PCSCO film was further demonstrated to have superior antifungal activity against the selectedPythium aphanidermatum. The results of the study indicate the potential application of developed nanocomposite film as a promising antifungal packaging material.

Metil Jasmonat ve Modifiye Atmosfer Paketleme Uygulamalarının Soğukta Muhafaza Süresince Kayısı Meyvesinin Fiziksel ve Mekanik Özelliklerine Etkileri

In this study, the effects of methyl jasmonate [MeJA (0.5 and 1.0 mmol L-1)] and modified atmosphere packaging (MAP) applications on the physical and mechanical properties of ‘Precoce de Thyrinthe’ apricot variety during cold storage were investigated. Fruit were stored at 0±0.5C and 90±5% relative humidity for 20 days. Physical properties of apricot such as geometric mean diameter, sphericity, surface area, bulk and fruit densities; mechanical properties such as puncture-compression forces and friction coefficient were determined. It was observed that MeJA application did not produce a significant difference on the size characteristics of apricot compared to the harvest period. Regarding the storage time, decreases were observed in the change of compression force results obtained from the X-, Y- and Z- axes according to the increase in the storage time. Effect on the puncture force on three axes showed a lower tendency to decrease in MAP application than in the harvest period compared to the application without MAP. The coefficient of friction on laminate and galvanized sheet surfaces was lower than PVC, plywood and rubber surfaces.

Assessment of quality characteristics and bacterial community of modified atmosphere packaged chilled pork loins using 16S rRNA amplicon sequencing analysis

Modified atmosphere packaging (MAP) is widely applied in packaging meat and meat products. While most studies had employed culture-dependent microbiological analyses or polymerase chain reaction-denaturing gradient gel electrophoresis (PCR-DGGE), the recent application of high-throughput sequencing (HTS) has been effective and reliable in detecting the microbial consortium associated with food spoilage. Since MAP application is limited in China, applying HTS in assessing the microbial consortium of meat and meat products in the country becomes imperative. In this study, quality indexes and bacterial enumeration often used as spoilage indicators were employed to assess MAP fresh pork under chilled (4 °C) storage for 21 d. The results indicated that 70%O2/30%CO2 (Group A) retained more redness (a*) content, while 70%N2/30%CO2 (Group B) markedly reduced spoilage indicators compared to the control group. Notably, high-throughput sequencing indicated that Group B and 20%O2/60%N2/20%CO2 (Group C) inhibited the growth of abundant spoilers, Pseudomonas spp. and Brochothrix spp. Thus, MAP (Group B and C) has promising potential in inhibiting predominant meat spoilers during chilled storage. This study provides valuable information to food industries on the potential application of MAP to control meat spoilage in Chinese markets.

Modified Atmosphere Packaging and Heat Treatment for Maintaining the Quality of Fresh-cut Pineapple (Ananas comosus)

The research aimed to determine the effect of modified atmosphere packaging (MAP) and heat treatment to maintain the quality and prolong the shelf life of fresh-cut pineapples (Ananas comosus). The fresh-cut pineapples of cultivar “Queen” and “Cayenne” were treated with four treatments, namely (P1) MAP with 70% argon gas (Ar) and heat treatment at 40oC for 5 min, (P2) heat treatment at 40° for 5 min, (P3) MAP with 70% Ar, (P4) Control. All treatments were stored in a cooler at 10oC and measurements of physical (firmness) and chemical (total phenol, total sugar and titratable acidity) were performed on 0, 2, 4, 6, 8 and 10 days of storage. Each treatment was replicated three times and the results were analyzed using Completely Randomized Design (CRD). The results showed that the application of MAP and heat treatment either combined or individually was able to maintain the quality and prolong the shelf life of fresh-cut pineapple in both cultivars.

Investigation of phenolic compounds and antioxidant activity in red and yellow onions and a synergistic utilization of skin extract in modified atmosphere packaging of salmon (Salmo salar)

AbstractThis study investigated potentially synergetic effects of red onion skin extract and modified atmosphere packaging (MAP) on lipid oxidation of salmon. The skin and flesh of red and yellow onions were extracted with water at 25°C, 45°C, 65°C and 90°C, ethanol and acetone in water solutions. Total anthocyanin and polyphenol levels and antioxidant capacity were determined after extraction. Minced salmon samples were mixed with red onion skin extract (ROSE) and packaged under MAP at different O2 concentrations (0%, 5%, 10% and 15% of total package gas composition) with 40% CO2 and balance N2. Polyphenol recovery and antioxidant capacity increased for each sample as the extraction temperature increased with hot water use. Water extraction at 90°C provided higher extraction yields than ethanol and acetone in water solutions. The ROSE treatment of fish with MAP reduced lipid oxidation rates as evidenced by a decrease in peroxide value (43%) and thiobarbituric acid reactive substance (TBARS) (30%). The ROSE might effectively suppress the free radicals in a MAP system. A skin extract and MAP application might increase the shelf life of salmon.

Application of Polypropylene-Based Nanocomposite Films for Sliced Turkish Pastrami under Vacuum/Modified Atmosphere Packaging: A Pilot Study

The purpose of this study was to investigate the effects of polypropylene (PP)-based nanomaterials with improved barrier properties by nanoclay and antimicrobial properties by poly-beta-pinene (PβP) on the quality and shelf life of sliced pastrami as an alternative to the commercial multilayered materials. Sliced pastrami was packaged using nanocomposite films with and w/o PβP, and multilayered material under air, modified atmosphere packaging (MAP) and vacuum. Packaged products were screened for microbiological, physicochemical and sensory quality at 4 °C for 6 months. Salmonella spp., Clostridium perfringens and coagulase positive Staphylococus aureus were not detected in the products during entire storage. No yeast and mold growth occurred for entire storage using antimicrobial nanocomposite and multilayer material under vacuum. The antimicrobial effect of PβP on the pastrami was higher under vacuum compared to MAP applications suggesting that direct contact of the material is required with the food surface. Thiobarbituric acid reactive substances (TBARS) of pastrami under vacuum were lower than those of MAP applications. The initial carbonyl content of the product was determined as 3.38 nmol/mg and a slight increase was observed during storage period for all applications. The shelf life of pastrami is suggested as 150 days using PβP containing nanomaterials under vacuum, which is longer than the shelf life of a commercial product on the market using multilayer materials.

Industrially produced PET nanocomposites with enhaced properties for food packaging applications

Gas permeation of polymers is one of the important factors to be considered in the selection of materials for many packaging applications, such as modified atmosphere packaging (MAP) for foods. Poly (ethylene therephthalate) (PET) is known to exhibit very low gas permeation compared with most polymers such as polystyrene, polyethylene and polypropylene. However, MAP applications require better barrier performance than that of PET. In the present work PET trays reinforced with organically modified sepiolite, fibrillar nanoclay, have been produced at industrial processes. Permeability to water vapour, oxygen and carbon dioxide has been studied in PET nanocomposites as well as their microstructure through transmission electron and scanning electronic microscopy (TEM and SEM), and their mechanical properties. Results show a better performance in barrier properties as well as an increase in tensile strength, and impact resistance when the sepiolite content is lower than 2.5%.

Effects of preharvest GA3, CaCl2 and modified atmosphere packaging treatments on specific phenolic compounds of sweet cherry

The fruit of sweet cherry are more sensitive against external factors than many fruit species so post harvest quality loss on sweet cherry is quite higher. For this reason, it is very significant to reduce the post harvest losses and to extend the storage period in sweet cherry, and this is one of the main objectives for producers and consumers. The aim of the study was to determine the effects of GA 3 , CaCl 2 and modified atmosphere packaging (MAP) applications on individual phenolics compounds in postharvest storage on sweet cherry. In the study, GA3 was applied at 30 mg L -1 concentration when fruit skin was yellow-straw, and CaCl2 was applied at 0.5% concentration 20 and 10 days before the estimated harvest date. The study consisted of 4 different spray (Control (water only), GA 3 , CaCl 2 , GA 3 + CaCl2) and 2 packaging aplications (without and with MAP). MAP was applied to the fruits after the harvest. In our study, individual phenolics such as catechin, 4-hydroxybenzoic acid, epicatechin, caffeic acid, p-coumaric acid, 4-aminobenzoic acid and protocatechuic acid were determined. It has been determined that pre-harvested GA 3 , and CaCl 2 applications have increased the content of individual phenolics in fruit. The concentration of individual phenolics generally decreased with increasing cold storage time, whereas epicatechin and 4-hydroxybenzoic acid concentrations increased. 4-hydroxybenzoic acid and caffeic acid concentrations were higher CaCl 2 , and GA 3 treatments than in control in all measured period. The MAP application had a positive effect on the losses of other phenolic compounds except catechin during cold storage.
