자연환경에서 건염햄 제조 시 소금 처리 수준과 아질산염 처리 유무가 지방산 조성, 유리아미노산, 미생물수 및 관능적 특성에 어떠한 영향을 미치는 지를 조사하기 위해 HS(뒷다리 kg 당 92 g 소금 처리), HS+<TEX>$NaNO_2$</TEX>(뒷다리 kg 당 92 g 소금+100 ppm 아질산염 처리), LS(뒷다리 kg 당 62 g 소금 처리), LS+<TEX>$NaNO_2$</TEX>(뒷다리 kg 당 62 g 소금+100 ppm 아질산염 처리) 등 4개 처리구에 돼지 뒷다리 3개씩을 배치하여 조사하였다. 지방산 조성에서 SFA는 HS+<TEX>$NaNO_2$</TEX> 처리구에서 다른 처리구에 비해 유의적으로 높은 비율을 나타내었고, USFA는 HS+<TEX>$NaNO_2$</TEX> 처리구에서 다른 처리구에 비해 유의적으로 낮은 비율을 나타내었다(p<0.05). 유리아미노산 분석결과, 우리나라 환경에서 제조된 건염햄의 경우 glutamate(228.26-427.11 mg/100 g), alanine(356.03-579.47 mg/100 g), lysine (377.88-685.06 mg/100 g) 등이 높은 함량을 나타내었으며, proline을 제외한 모든 유리아미노산들은 소금 처리수준과 아질산염 처리 유무에 유의적인 영향을 받지 않는 것으로 조사되었다(p>0.05). 관능평가 결과, HS 처리구 보다 LS 처리구에서 유의적으로 발효취가 높은 것으로 조사되었으며(p<0.05), 총균수는 <TEX>$2.3{\times}10^2-1.11{\times}10^4$</TEX> 수준이었고, E. coli, Staphylococcus aureus, E. coli O157, Salmonella spp.는 검출되지 않았다. The study analyzed the effects of salt concentration [high salt (HS) and low salt (LS)] and sodium nitrite (<TEX>$NaNO_2$</TEX>), which are typically utilized in Korean processing facilities, on fatty acid composition, free amino acids, microbial counts and sensory characteristics of processed dry-cured ham. Four different treatments were considered: three hams (11.30 kg) salted with 92 g/kg salt (w/w) (HS), three hams (10.65 kg) treated with HS and 100 ppm <TEX>$NaNO_2$</TEX> (HS+<TEX>$NaNO_2$</TEX>), three hams (11.42 kg) salted with 62 g/kg salt (w/w) (LS), and three hams (10.62 kg) treated with LS and 100 ppm <TEX>$NaNO_2$</TEX> (LS+<TEX>$NaNO_2$</TEX>). Fatty acid composition analysis revealed significantly (p<0.05) higher saturated fatty acid and lower (p<0.05) unsaturated fatty acid in the HS+<TEX>$NaNO_2$</TEX> group compared with the other groups. Glutamate, alanine and lysine free amino acids were higher than the other free amino acids. The processing conditions did not significantly affect the free amino acids of biceps femoris muscles, except for the proline content (p>0.05). In sensory evaluation, the fermentation aroma of the LS group was higher than that of the HS group. The aerobic counts consistently ranged from from <TEX>$2.3{\times}10^2$</TEX> to <TEX>$1.11{\times}10^4$</TEX> CFU/g. Escherichia coli including strain O157:H7, Staphylococcus aureus, and Salmonella spp. were not detected.
