Prior roasting of wheat impacts on the functionality of flour prepared from it: Part 2. Wheat protein functionality

AbstractBackground and ObjectivesIn the accompanying paper (Part 1), it was reported that forced convection roasting of wheat before milling can be directed to tailor the viscosifying properties of flour. The objective of the present work was to examine the effect of prior wheat roasting on flour proteins.FindingsEffective control of wheat roasting conditions proved to be essential to avoid the irreversible loss of flour functionality as deduced from the flour ethanol and lactic acid solvent retention capacity and mixography data. Response surface models predicted roasting at 108°C and 80 Hz (135 s) to maintain protein integrity. The microstructure of flour and isolated starch as well as X‐ray diffraction patterns revealed starch to be relatively unaffected by this heat treatment.ConclusionsFlour produced from roasted wheat can still be used for products that require the formation of a gluten network.Significance and NoveltyProtein is more sensitive to roasting conditions than starch.

The Effect of High Molecular Weight Glutenin Subunit Encoded by Glu-B1k Allele on Bread-Making Quality of Near-Isogenic Lines of Bread Wheat

: In this study, the effect of the 22 glutenin subunit encoded by the Glu-B1k allele on the chromosome B on the quality of wheat was investigated. Nevzatbey and a genotype of Triticum aestivum L. subsp. sphaerococcum were used as parents and produced the near-isogenic lines (NILs) in the generation of BC4F3. Plant morphological traits and protein content, sedimentation volume, lactic acid solvent retention capacity (SRC), and glutenin swelling index (GSI) of the NILs were determined. The mean protein content of the NILs carrying 22 glutenin subunit was higher than that of the NILs carrying the 7+9 glutenin subunit (20.4% and 16.2%, respectively). In contrast, the NILs with 22 glutenin subunit had a lower sedimentation volume than those of the NILs with 7+9 glutenin subunits. The 22 glutenin subunit decreased the sedimentation volume from 19.47 to 13.49 mL. The average GSI value of the NILs carrying 7+9 glutenin subunits was higher than that of the NILs carrying 22 glutenin subunit (3.05 and 2.92). In conclusion, in this study we were able to detect a quality difference between NILs with 22 and 7+9 glutenin subunits in a small amount of samples. These findings suggest that glutenin subunit 22 may be associated with low gluten strength.

Soft‐textured wheat with high protein content and strength is suitable for making hot‐press tortillas

AbstractBackground and ObjectivesSoft‐textured wheat with low damaged starch content, low product discoloration, and varying protein strength has the potential to be suitable for making tortillas if the required flour characteristics are known and selected for. Eastern US soft winter (ESW) wheat varieties were evaluated to identify the characteristics required for making tortillas in comparison to five commercial tortilla flours (CTFs).FindingsESW wheat flours had lower protein, damaged starch and ash contents, and polyphenol oxidase activity than CTFs and produced larger and brighter‐colored tortillas. Lactic acid solvent retention capacity (LA‐SRC) showed a strong association with tortilla quality attributes. Seven ESW wheat flours with LA‐SRC greater than 115.6% produced tortillas comparable with CTF tortillas in rollability scores.ConclusionsESW wheat, with high protein content and strength, appears to be suitable for making tortillas. The lower damaged starch content and polyphenol oxidase activity in ESW wheat when compared with hard wheat flour would be advantageous because ESW wheat would require less water for dough preparation and would produce larger and brighter‐colored tortillas.Significance and NoveltyThese results prove that the selected ESW wheat flours are desirable for making tortillas and provide guidance for selecting ESW wheat for making tortillas.

Enrichment of a local sourdough bread with zinc and selenium through the use of biofortified whole wheat flour

SummaryIn this study, obtaining sourdough bread enriched in zinc (Zn) and selenium (Se) with biofortified whole wheat flour (BWWF) was investigated. Sourdough bread flour was blended with BWWF in the ratios of 25:75, 50:50 and 75:25. The Zn and Se contents varied from 12.06 to 43.06 mg/kg and from 80.73 to 267.58 μg/kg in the substituted flours (SFs), respectively. Gluten‐quality‐related technological and rheological properties of SFs were also determined. The BWWF negatively affected those parameters, and GlutoPeak torque before maximum and peak maximum time, alveograph energy and extensibility, sedimentation volume, gluten index and lactic acid solvent retention capacity values decreased substantially to 21.0 GPU, 27.5 s, 85.67 10−4 × J, 18.0 mm, 33.33 mL, 81.98% and 78.72%, respectively. The Zn contents of the SFs bread varied between 10.48 and 43.88 mg/kg, and the Se contents were found between 55.7 and 224.3 μg/kg. At 75% replacement, the recommended daily allowance (RDA) was obtained at 33.3% and 36.0% for selenium in adults, respectively, while it was 27.1% for zinc and 25.6% for selenium at the 50% substitution level. With the increase in substitution rates, the volumes of the SFs breads decreased from 337.5 to 516.3 mL, their organoleptic properties deteriorated, and the hardness of the breads increased from 507.5 to 3633.1 g. In the study, the whiteness index (WI) value was higher in the A yeast combination breads. The sensory properties of pore structure, taste and chewiness of the 25% substitution SFs bread were close to those of the control. Compared with control bread, all SFs bread had statistically higher (P < 0.01) ash, protein, total phenolic contents and antioxidant activity (ranging from 1.893% to 2.495%, 8.22% to 11.60%, 75.85 to 117.74 mg GAE/100 g and 8.84 to 13.34 inhibition%, respectively).

Grain and flour characteristics of eastern U.S. soft winter wheat desirable for making soft‐bite white salted noodles

AbstractBackground And ObjectivesThe genetic backgrounds and growing conditions of eastern U.S. soft winter (ESW) wheat vary widely and thus produce grains of diverse quality characteristics, which encompass those required for making soft‐bite white salted noodles (WSN). However, these characteristics have yet to be identified and cataloged. The grain and flour characteristics and WSN making quality of 25 ESW wheat varieties and four commercial noodle flours (CNFs) were analyzed to identify grain and flour characteristics desirable for making WSN.FindingsKernel hardness, protein content, and gluten strength‐related parameters of ESW wheat were significantly associated with WSN cooking and textural properties, while damaged starch content was the major determinant of WSN adhesiveness. A total of 9 out of 25 ESW wheat flours exhibited protein characteristics, WSN color and textural properties that closely matched to those of CNFs.ConclusionsESW wheat varieties with kernel hardness of 16.0–45.4, damaged starch content of 1.9%–4.4%, flour protein content of 8.6%–10.2%, sodium dodecyl sulfate sedimentation volume of 30.4–41.6 ml and lactic acid solvent retention capacity of 115.6%–142.7% were identified to produce WSN of comparable quality to those of CNFs.

Purpose: The present study compared the dry noodle-making performance of US soft wheat flours with different gluten strength. Methods: Three flours (weak, medium, and strong gluten strength - W, M, and S, respectively) milled from US Soft Red Winter (SRW) wheat cultivars and a commercial all-purpose flour (control) were analyzed for their physicochemical properties including pasting property, SDS sedimentation volume, solvent retention capacity (SRC), and dry noodle-making performance. Results: The three soft wheat flours were significantly different in SDS sedimentation volume, lactic acid SRC, and gluten performance index, whereas the all-purpose flour had similar SDS sedimentation value and lactic acid SRC to S flour, and gluten performance index similar to the M flour. The peak viscosity of pasting, final viscosity, and peak time of the all-purpose flour were within the range of soft flours. The resistance (R) and extensibility (E) of the fresh noodles were in the order of W<M<S flour. The R and E of the all-purpose flour were greater than all three soft wheat flours, but the R/E of the flour was similar to the S flour. The firmness and chewiness measured after boiling the dry noodles made with the S soft wheat flour were higher or similar, compared to those made with the all-purpose flour. Conclusions: Soft wheat flour with high gluten strength was suitable for making dry white-salted noodles. The SDS sedimentation volume, lactic acid SRC, and gluten performance index of the soft wheat flours could be useful indicators for selecting a soft wheat flour suitable for dry white-salted noodle production.

Premature Termination Codon of 1Dy12 Gene Improves Cookie Quality in Ningmai9 Wheat.

The area between middle and lower reaches of the Yangtze River is the largest region for soft wheat production in China. In soft wheat breeding, the lack of germplasm with desirable quality for end-use products is a barrier. Ningmai9 is the main variety of soft wheat planted in this area. To create germplasm with better quality and yield potential than Ningmai9, mutants of HMW-GSs in Ningmai9 induced by ethylmethanesulfonate (EMS) were obtained. SDS-PAGE showed that two mutants, md10 and md11, were HMW-GS 1Dy deletions. DNA sequencing confirmed that one mutation was caused by a C/T substitution, resulting in the change of CAA encoding glutamine into the termination codon TAA, and another mutation was due to a G/A substitution in the central repetitive domain of the coding region, causing TGG encoding tryptophan to become the termination codon TGA. The premature termination codon of the 1Dy12 gene affected the expression of 1Dy12 and kept the mRNA at a lower transcription level during the kernel development stage in comparison with the wild type. HMW-GS 1Dy12 deletion mutants decreased the content of HMW-GSs and glutenin macropolymers, mixograph envelope peak time and TIMEX width, water solvent retention capacity (WSRC), and lactic acid solvent retention capacity (LASRC). In the HMW-GS 1Dy12 deletion lines, the sugar-snap cookie diameter was 8.70–8.74 cm, which was significantly larger than that in the wild type of 8.0 cm. There were no significant differences in spike number, kernel number, thousand kernel weight, and yield between the deletion lines and wild type. Overall, the study indicated that the knockout of the HMW-GS gene induced by EMS is an effective way to improve wheat quality, and deletion mutants of HMW-GS 1Dy12 decrease gluten strength and increase sugar snap cookie diameter without yield penalty in Ningmai9 wheat.

Relationship of Starch Pasting Properties and Dough Rheology, and the Role of Starch in Determining Quality of Short Biscuit.

Starch plays an important role in food industry. In this study, three wheat cultivars with different protein contents were used to investigate the different ratios of starch addition on starch pasting properties, starch thermal performance, dough rheology, biscuit quality, and their relationships. Results showed that with the increase in starch content, gluten, protein and glutenin macropolymer (GMP), lactic acid solvent retention capacity (SRC), sucrose SRC, and onset temperature (To) decreased, while most pasting parameters and gelatinization enthalpy (ΔH) increased. Viscosity parameters were significantly negatively correlated with dough stability time, farinograph quality number (FQN), and sucrose SRC. Biscuit quality was improved by starch addition, indicated by lower thickness and hardness, higher diameter, spread ratio, and sensory score. Viscosity parameters were positively correlated to diameter, spread ratio, and sensory score of biscuit, while negatively correlated to hardness and thickness of biscuit. Image analysis showed that the crumbs of biscuit were improved as shown by bigger pores in the bottom side. The results provide useful information for the clarification of the role of starch in determining biscuit quality and the inter-relationships of flour, dough, and biscuit.

Effect of Biofertilizer in Organic and Conventional Systems on Growth, Yield and Baking Quality of Hard Red Winter Wheat

A two-year study (harvest years 2019 and 2020) was conducted to investigate the effect of a commercially available biofertilizer, in combination with variable nitrogen (N) rate, on bread baking quality and agronomic traits in hard winter wheat grown in conventional (CONV) and organic (ORG) farming systems in Kentucky, USA. The hard red winter wheat cultivar ‘Vision 45’ was used with three N rates (44, 89.6 and 134.5 kg/ha as Low, Med and High, respectively) and three biofertilizer spray regimes (no spray, one spray and two sprays). All traits measured were significantly affected by the agricultural production system (CONV or ORG) and N rate, although trends in their interactions were inconsistent between years. In Y2, yield was greatest in treatments with high N rates and in the ORG system. Biofertilizer treatments had a negative to neutral effect on grain yield. Baking quality traits such as protein content, lactic acid solvent retention capacity and sedimentation value (SV) were consistently greater in the CONV system and increased with the higher N application rates. Similarly, biofertilizer application had no effect on predictive baking quality traits, except for SV in year 1 of the study, where it increased with two sprays. Loaf volume was consistently greater from wheat grown in CONV treatments. From these results, we conclude that further research is warranted to evaluate the potential for biofertilizers to enhance N uptake and affect bread baking quality or other end-use traits. Additional research may be especially useful in organic production systems where biologically based N fertilizers are utilized, and treatments were not negatively affected by biofertilizer applications. Such strategies may be needed to increase protein quantity and gluten quality to optimize winter wheat production for bread baking qualities in the southeastern USA.

The Characteristics of Steamed Bread from Reconstituted Whole Wheat Flour (WWF) of Different Hard Wheat Classes with Different Bran Particle Size Distributions.

The purpose of this study was to investigate the effects of reconstituted whole wheat flour (WWF) particle size on flour characteristics and northern-type steamed bread (NTSB) quality. In this study, hard white (HW), hard red winter (HRW), and hard red spring (HRS) wheat classes, and four different bran particle size distributions [D(50) values of 53 μm, 74 μm, 105 μm, and 125 μm] were blended at a ratio of 85% refined flour + 15% bran to create reconstituted WWF and make reconstituted WWF NTSB. Farinograph water absorption and water solvent retention capacity (SRC) increased as bran particle size decreased. Flour and dough strength tests such as lactic acid SRC and Farinograph and Mixolab development time and stability did not show any clear trends with bran particle size. HRW WWF tended to be the exception as Farinograph development time and stability generally increased as particle size increased. Resistance to extension increased as bran particle size decreased for HRW WWF and increased as particle size increased for HW and HRS. These differences in WWF dough rheology trends were likely due to differences in gluten characteristics between the classes. The results showed that larger particle sizes (105 μm and 125 μm) were more conducive to achieving desirable whole wheat NTSB specific volume, color, and texture.

Comparative Quality Evaluation of Physicochemical, Technological, and Protein Profiling of Wheat, Rye, and Barley Cereals.

Agronomically important cereal crops wheat, barley, and rye of the Triticeace tribe under the genus Triticum were studied with special focus on their physical, proximal, and technological characteristics which are linked to their end product utilization. The physiochemical parameters showed variability among the three cereal grains. Lactic acid-solvent retention capacity (SRC) was found to be higher in wheat (95.86–111.92%) as compared to rye (53.78–67.97%) and barley (50.24–67.12%) cultivars, indicating higher gluten strength. Sucrose-SRC and sodium carbonate-SRC were higher in rye as compared to wheat and barley flours. The essential amino acid proportion in barley and rye cultivars was higher as compared to wheat cultivars. Barley and rye flours exhibited higher biological value (BV) owing to their higher lysine content. SDS-PAGE of wheat cultivars showed a high degree of polymorphism in the low molecular range of 27.03–45.24 kDa as compared to barley and rye cultivars. High molecular weight (HMW) proteins varied from 68.38 to 119.66 kDa (4–5 subunits) in wheat, 82.33 to 117.78 kDa (4 subunits) in rye, and 73.08 to 108.57 kDa (2–4 subunits) in barley. The comparative evaluation of barley and rye with wheat cultivars would help in the development of healthy food products.

Impact of Nitrogen Rate in Conventional and Organic Production Systems on Yield and Bread Baking Quality of Soft Red Winter Wheat

Soft red winter wheat (SRW) is characterized by high yield and relatively low protein content. In Kentucky, there is growing demand from local artisan bread bakers for regionally produced flour, requiring production of grain with increased protein content and/or strength. The objective of this two-year field experiment was to evaluate the effect of nitrogen (N) management on five cultivars of winter wheat on yield and bread baking quality traits of modern and landrace SRW cultivars (Triticum aestivum L.). All five cultivars were evaluated using two N application rates in conventional and organic production systems. All traits measured were significantly affected by the agricultural production system and N rate, although plant height and other quality traits varied by study year. Significantly higher yields were achieved in the conventional system at a relatively low N rate (67.2 kg ha−1) in both study years (2017–2019) (p &lt; 0.01). Results were variable by cultivar and a locally bred, high-yielding cultivar (Pembroke 2014) had the highest lactic acid solvent retention capacity score and thousand kernel weight of the cultivars evaluated. In addition, a landrace cultivar (Purple Straw) had the highest grain N and plant height. A French soft wheat, Soissons, had the highest sedimentation value and Pembroke 2016 achieved the highest yield. The findings from this study suggest the possibility of attaining a desirable grain with quality traits of SRW wheat that meets the needs of local bread wheat production in Kentucky through improving the optimization of cultivar selection, N management and specific considerations for conventional and organic systems.

Effects of Glu‐D1 gene introgressions on soft white spring durum wheat (Triticum turgidum ssp. durum) quality

AbstractBackground and objectivesUtilization of durum wheat (Triticum turgidum ssp. durum) is limited by its weak gluten and poor bread‐making quality. One strategy to improve gluten strength and bread‐making quality is by introducing the Glu‐D1 alleles from bread wheat.FindingsIntroduction of Glu‐D1 alleles Glu‐D1a and Glu‐D1d, corresponding to the High Molecular Weight Glutenin subunits Dx2 + Dy12 and Dx5 + Dy10, respectively, increased dough strength as evidenced by SDS sedimentation volume, Lactic acid Solvent Retention Capacity, and Mixograph dough mixing parameters. The Glu‐D1d Dx5 + Dy10 allele was “stronger” than the Glu‐D1a Dx2 + Dy12 allele. However, whereas Dx2 + Dy12 improved straight‐dough pan bread volume, Dx5 + Dy10 did not. This latter result was ascribed to the overly strong, inextensible gluten contributed by the Glu‐D1d Dx5 + Dy10 allele.ConclusionsWhereas both Glu‐D1 alleles increased dough strength, Dx2 + Dy12 improved bread loaf volume but lines with Dx5 + Dy10 produced doughs that were too strong to realize an increase in loaf volume. The results confirm the notion that large bread loaf volume is achieved with a balance of dough extensibility and elasticity.Significance and noveltyDurum wheat production and consumption will increase as bread quality improves. The Glu‐D1 high molecular weight glutenin proteins will likely play a role in improving bread‐making ability. The two major Glu‐D1 alleles are accessible via durum wheat translocation lines.

Solvent Retention Capacity and Gluten Protein Composition of Durum Wheat Flour as Influenced by Drought and Heat Stress.

Drought and temperature stress can cause considerable gluten protein accumulation changes during grain-filling, resulting in variations in wheat quality. The contribution of functional polymeric components of flour to its overall functionality and quality can be measured using solvent retention capacity (SRC). The aim of this study was to determine the effect of moderate and severe drought and heat stress on SRC and swelling index of glutenin (SIG) in six durum wheat cultivars with the same glutenin subunit composition and its relation with gluten protein fractions from size exclusion high performance liquid chromatography. Distilled water, sodium carbonate and sucrose SRC reacted similarly to stress conditions, with moderate heat causing the lowest values. Lactic acid SRC and SIG reacted similarly, where severe heat stress highly significantly increased the values. SIG was significantly correlated with sodium dodecyl sulphate sedimentation (SDSS) and flour protein content (FPC) under all conditions. Lactic acid SRC was highly correlated with FPC under optimal and moderate heat stress and with SDSS under moderate drought and severe heat. SIG was negatively correlated with low molecular weight glutenins under optimal and drought conditions, and combined for all treatments. The relationship between SRC and gluten proteins was inconsistent under different stress conditions.

Effects of superheated steam treatment of wheat on physicochemical properties of wheat flour and cracker quality

In order to study the effects of superheated steam (SS) treatment of wheat on the physicochemical properties of wheat flour and cracker quality, soft wheat was treated with SS and the pasting properties and solvent retention capacity (SRC) of wheat flour and cracker quality were determined. The results showed that both the physicochemical properties of wheat flour and cracker quality were significantly affected by SS treatment of wheat. Pasting properties of wheat flour were affected by SS treatment of wheat significantly, which indicated the increase of gelatinized starch and damaged starch. At the steam temperatures from 140 to 215 °C, 50% sucrose SRC (SuSRC), 5% sodium carbonate SRC (SCSRC), and water SRC (WSRC) increased with the extending of treatment time. Meanwhile, 5% lactic acid SRC (LASRC) and gluten performance index (GPI) initially increased and then decreased. Besides, the spread ratio, hardness and fracturability of crackers were improved. According to the results above, we concluded that SS treatment of wheat had significant effects on the physicochemical properties of wheat flour and could improve cracker quality in a relatively short time (shorter than 3 min). The most suitable condition for improving cracker quality was SS treatment of wheat at 165 °C for 3 min.

Identifying functional characteristics of soft white wheat for saltine crackers

AbstractBackground and objectivesSoft red winter (SRW) wheat has been traditionally used in the manufacture of cookie and cracker products in Latin America; however, in some years SRW has experienced a supply shortage due to poor planting and/or crop conditions. Therefore, the demand for soft white wheat (SWH) for such products is increasing in Latin American markets, but buyers have been uncertain as to appropriate SWH contract specifications as SWH functions differently from SRW in cracker products. The objective of this study was to identify the optimal grain protein level and flour specifications of SWH for saltine crackers. SWH blends of varying grain protein contents from 8.7% to 12.5% were used to make saltine crackers. Flour solvent retention capacity (SRC), gluten and dough characteristics, and cracker‐baking performance were evaluated.FindingsThe sodium carbonate SRC increased from 71.9% to 75.0%, sucrose SRC from 83.4% to 94.2%, and lactic acid SRC from 98.0% to 113.3% as SWH protein content increased from 8.7% to 12.5%. Dough concurrently became more extensible (L: 109.0–143.0 mm) and deformation energy (W: 91.5–133.5 (10−4 J)) increased with higher protein content, especially in the range of 10.5%–12.5%. Cracker stack height (6.65–7.10 cm), stack height‐to‐weight ratio (0.196–0.210), and texture (breaking force: 1,934.9–3,158.2 g) gradually increased with increasing protein levels. The flour lactic acid SRC and dough rheological parameters (measured by Farinograph, Alveograph, and GlutoPeak) were significantly correlated with the cracker stack height‐to‐weight ratio and texture.ConclusionsSWH of grain protein content of 10.5%–11.6% had intermediate lactic acid SRC and dough strength that produced saltine crackers with appropriate stack height (6.95–7.10 cm) and desirable texture (2,172.9–2,473.8 g).Significance and noveltyThis research identified the SWH functionalities for saltine crackers and provided an initial starting point for Latin America and other buyers, millers, and bakers to better utilize SWH for cracker manufacturing.

Registration of ‘Hilliard’ wheat

Abstract‘Hilliard’ (Reg. no. CV‐1163, PI 676271), a soft red winter (SRW) wheat (Triticum aestivum L.) developed and tested as VA11W‐108 by the Virginia Agricultural Experiment Station, was released in March 2015. Hilliard was derived from the cross ‘25R47’/‘Jamestown’. Hilliard is widely adapted, from Texas to Ontario, Canada, and provides producers with a mid‐season, medium height, awned, semi‐dwarf (Rht2) cultivar that has very high yield potential, good straw strength, and intermediate grain volume weight and quality. It expresses moderate to high levels of resistance to most diseases prevalent in the eastern United States and Ontario. In the 2016–2018 USDA‐ARS Uniform SRW Wheat nurseries, Hilliard ranked first in grain yield in the southern nursery across all 3 yr (5,147–5,758 kg ha−1). In the uniform eastern nursery, it ranked first for grain yield in 2016 (6,159 kg ha−1) and 2017 (5,633 kg ha−1) and second in 2018 (5,515 kg ha−1). Grain volume weights of Hilliard were similar to overall trial averages in the uniform southern (73.4–75.2 kg hl−1) and eastern (70–75.8 kg hl−1) nurseries. Hilliard has soft grain texture with flour softness equivalent values varying from 58.1 to 61.7 g 100 g−1. Straight grade flour yields on a Quadrumat Senior mill varied from 66.8 to 68.4 g kg−1. Flour protein concentration varied from 7.0 to 9.1 g 100 g−1 and gluten strength from 108 to 128 g 100 g−1, as measured by lactic acid solvent retention capacity. Cookie spread diameter varied from 18.3 to 18.6 cm.

Changes in yield determinants and quality traits in wheat after 12 cycles of recurrent selection

The objective of this study was to test the genetic response to 12 cycles of a recurrent selection program for grain yield and related traits. During two seasons the 39 S-derived families (three/C0–C12 populations) were evaluated under conventional (CT) and non-tillage (NT) systems. Grain and biomass yield were determined. The grain number per square meter and harvest index were also estimated. Flour protein content, sodium dodecyl sulphate sedimentation, and lactic acid solvent retention capacity were considered as end-use quality predictive tests. High molecular weight glutenin subunits (HMW-GS) variation was also analyzed. A significant increase in grain yield per selection cycle, estimated in 3.25 g m−2 (1.3%) per year, was found under NT, but there was a not significant genetic progress under CT. The decrease in the percentage of protein in the most advanced selection cycles (11.0% vs. 9.7%) did not negatively affect its quality. HMW-GS variation analysis showed the erosion of extreme subunits related to gluten strength. After 24 years of recurrent selection, the grain yield was improved without affecting its industrial quality.

Solvent retention capacity and swelling index of glutenin in hard red wheat flour as possible indicators of rheological and baking quality characteristics

To overcome the cost and expense of milling and baking hundreds of samples in wheat breeding programs, cereal chemists have developed various rapid predictive tests for end-use quality assessment. In this study, five small-scale rapid tests, including Solvent Retention Capacity (SRC) and Swelling Index of Glutenin (SIG), were compared for viability and accuracy to determine end-use quality using small quantities of flour. The tests were applied on commercial hard red spring and hard red winter wheat cultivars from two of the three main production regions in South Africa. Rheological and bread-baking characteristics were related to results of the rapid tests. Highly significant cultivar differences were seen for all rheological and baking-related characteristics, and SRC and SIG parameters, with a strong genotype effect. The environment effect was also highly significant across regions, especially for flour protein content (FPC), which affected the rheological and baking-related characteristics differently across the regions. Correlations among SRC, SIG, rheological, and baking quality-related parameters were highly significant, but inconsistent for the two production regions. Only lactic acid SRC and SIG correlated consistently with the rheological and baking quality-related characteristics in both production regions.

Comparison of different experimental breadmaking methods and their associations with flour quality parameters in hard red spring wheat

AbstractBackground and objectivesExperimental breadmaking is the ultimate test for wheat end‐use quality. This research objective was to investigate the consistency of different breadmaking methods in the evaluation of hard red spring (HRS) wheat. Sponge‐and‐dough method (SpDM) and straight‐dough method (StDM) were tested with varying loaf sizes and fermentation times.FindingsFor pound loaf breads, SpDM showed larger volume and higher stability among wheat samples than StDM. Correlation and biplot analyses revealed that 2‐hr fermentation was more consistent with pound SpDM than 3‐hr fermentation when flour samples were evaluated by micro‐ and pup loaf StDM. Mixograph, farinograph, extensograph, and solvent retention capacity tests were also evaluated for associations with breadmaking quality. Lactic acid solvent retention capacity had a higher correlation (r = .86, p &lt; .001) with mean breadmaking scores when compared with other parameters.ConclusionsThe findings of this study indicate that SpDM is more suited for commercial production of pound loaf, while StDM with 2‐hr fermentation is better for quality evaluation because of expediency and consistency in HRS wheat. Lactic acid solvent retention capacity is more adaptable than other flour parameters to predict breadmaking quality, especially when sample quantity is limited.Significance and noveltyThis research provides valuable insight that helps identify an experimental breadmaking procedure and a flour quality parameter useful for the evaluation of HRS wheat.
