ANALISIS MUTU HEDONIK ABON IKAN PATIN (Pangasius sp.) DENGAN PENAMBAHAN JANTUNG PISANG KEPOK (Musa paradisiaca L)

The objective of processing catfish into shredded products is to increase consumption patterns and expand the marketing reach. To improve product quality, diversification, competitiveness, quality and efficiency, innovation is required. The addition of fibre to shredded catfish can enhance product quality while maintaining cost-effectiveness. The alternative fibre source used was kepok banana blossom, which has the potential to enhance the organoleptic characteristics of the product. The study implemented a completely randomised design with four treatment levels of banana heart addition (22.5%, 25%, 27.5%) with 20 replicates. The hedonic test include appearance, aroma, flavour, and texture. The optimal treatment was the addition of 25% banana heart, which achieved an appearance value of 6.9, aroma 6.9, flavour 7, and texture 6.7.

Development and potential of robotisation and automation in Kazakhstan's automobile industry: a bibliographical and analytical review

The engineering sector, which includes automobile production, plays an important role in the national economy and industrial progress. It affects the development of production, scientific and technical progress, labor productivity, national security, quality of life. In order to increase productivity, reduce labor costs and improve product quality, industrial automation and robotization processes have been significantly developed in industrialized countries of the world. The global market for industrial robots is expected to grow 14.3% annually and reach $30.8 billion by 2027. However, Kazakhstan faces special difficulties in adopting these technologies due to the lack of development of automation infrastructure. This study aims to develop priorities and directions of advanced scientific and technological solutions for intelligent joint systems of robotics and automation, especially in the automotive industry of Kazakhstan. In this regard, the purpose of the study is to assess the current state of automation in the automotive industry of Kazakhstan, to identify challenges and opportunities associated with the introduction of robotics, and to provide a strategic basis for the advancement of these technologies. The research corresponds to the state programs of Kazakhstan on science, technology and digitization. The scientific and practical importance of this work is that it is aimed at providing solutions for increasing efficiency by adapting advanced robotic technologies to local production systems. Through the development of domestic innovations and the transfer of global technologies, research contributes to the field of industrial automation and helps Kazakhstan's industries to achieve global competitiveness. It is expected that the practical results of the research will contribute to the improvement of production quality, efficiency and productivity in the automotive sector of Kazakhstan, contributing to sustainable development in accordance with world trends. Pengaruh Store Atmosphere dan Kualitas Produk Terhadap Kepuasan Pelanggan pada Eiger Adventure Flagship Store Merr Surabaya: Studi pada Eiger Adventure Flagship Store Merr Surabaya

This research aims to determine and analyze the influence of store atmosphere on customer satisfaction at the Eiger Adventure Flagship Store Merr Surabaya. The method used is a quantitative research method which has a positivist philosophy, used in research on certain populations or samples, sampling techniques are generally carried out randomly, data collection uses research instruments, quantitative or statistical data analysis aims to test predetermined hypotheses. With the results of this research, there is high customer satisfaction with Eiger Adventure Flagship products at the Merr Surabaya Store for Eiger product users because of the Store Atmosphere and Product Quality which makes consumers feel satisfied with Eiger products. So it is hoped that in the future Eiger will be able to maintain and continue to improve product quality so that consumers do not feel disappointed with Eiger products and also the Eiger store will still be able to maintain and also renew the store atmosphere that has been implemented now because from the results of this research almost all respondents like the atmosphere of the Eiger store. Because with quality products and a pleasant store atmosphere, it will create customer satisfaction with a feeling of satisfaction felt by customers, so customers will become loyal to the Eiger brand.

Evaluation of Commercially Available Plant-based Food Serving Disposable Crockery for Quality Standards

Biomass-based disposable crockery products are in high demand as an alternative to the plastic-based products considering negative effects of plastic-based products on environment. Biomass-based cutleries are being made from locally available different sources such as leaves, sheaths, straws and other plant fibres. A study was conducted to assess the quality of the biomass-based utensil product and provide the standard technical requirements of selected biomass-based disposable products. The plant-based utensils made from corn starch, sugarcane bagasse, areca, paper and Sal (Shorea robusta) leaves were selected for this study. The available standard methods such as International Organization for Standardization (ISO), Technical Association of the Pulp and Paper Industry (TAPPI), National Standard of the People’s Republic of China, and Bureau of Indian Standards (BIS) were adapted, with suitable modifications wherever required, for conducting the experiment. The test included measurement of dimensional specifications, grammage, moisture content, temperature resistance test, load bearing test, high heat performance test, drop test, tensile test and three point bending rig test. The plant-based utensils were classified as very strong, strong and weak based on the strength characteristics test. The utensils made from sugarcane bagasse fall in all three categories (very strong, strong and weak), whereas areca-based lies between very strong and strong while corn starch- based fall between strong and weak category. Overall, the results showed a lot of variation in strength characteristics of biomass-based disposable crockery products. The data of this study can serve as a valuable information for manufacturers and suppliers of plant-based utensils to ensure and improve product quality while maintaining the technical standards.

USEFULNESS OF VIBRATION ANALYSIS TECHNIQUES AND SENSORS TO IMPROVE THE MONITORING OF INDUSTRIAL EQUIPMENT

The food industry is constantly seeking advanced technologies to improve the efficiency and reliability of machinery, which is critical to improving product quality and manufacturing efficiency. This paper explores the applications of integrating vibration analysis techniques and sensors to improve machine monitoring in the food industry. Vibration analysis is a well-established technique for mechanical fault detection, providing valuable insight into the condition of rotating equipment. By incorporating advanced sensors that can capture a wide range of vibration signals the aim of this research is to improve the accuracy and sensitivity of device health monitoring. The review reviews existing literature on vibration analysis, sensor technology, and applications in the food industry. It explores how traditional vibration analysis methods can be incorporated into advanced sensor technologies such as accelerometers and other sensors. The integration of these technologies will provide a comprehensive understanding of machine behavior, leading to faster abnormal detection and predictive maintenance.

Horseradish (Armoracia rusticana L.) leaf juice encapsulated within polysaccharides-blend-based carriers: Characterization and application as potential antioxidants in mayonnaise production

This study aimed to encapsulate cold-pressed horseradish leaf juice within maltodextrin/alginate (MD/AL), maltodextrin/guar gum (MD/GG), and maltodextrin/gum Arabic (MD/GA) by spray-drying, to characterize the encapsulates, and to test their potential as mayonnaise oxidation-preventing ingredients. The encapsulates exhibited desirable physicochemical, morphological, structural, and thermal properties, highlighting MD/GA-containing encapsulates, especially regarding high encapsulation yield (78.50 %). Also, encapsulates contained a significant amount of phenolics, which were stable during freezer storage. The encapsulates successfully delayed the mayonnaise oxidation: 31.91–38.94 % more than the synthetic antioxidant ethylenediaminetetraacetic acid, especially highlighting MD/AL-containing encapsulates. Also, the encapsulates improved product quality with a higher pH and lower acidity after storage compared to the controls. Overall acceptability of encapsulates-containing mayonnaises and commercial mayonnaise did not differ significantly. This study contributes to sustainable development by providing new insights into the valorization of horseradish leaves, as a promising alternative to synthetic additives to prolong the oxidative stability and shelf-life of high-oil-containing foods.

Numerical simulations of polymer devolatilization in a steam contactor: Correlating particle distribution with volatile content removal

Abstract The focus of the current study is on a polymer devolatilization process in a device called a contactor, that involves the use of superheated steam to eliminate volatile cyclohexane, through evaporation, from the polymer mixture, also known as cement. The primary objective is to analyze the cement particle distribution and how it relates to the cyclohexane content at the exit or the devolatilization efficiency. The study develops a computational fluid dynamics (CFD) model that solves for the turbulent steam flow as a continuous phase and the the flow of cement droplets as a discrete phase. Following validation of the CFD model by comparing cement particle size distribution at the exit of the contactor to experimental data, a detailed examination of the same is conducted through a series of 69 CFD different calculations to understand its influence on the evaporation of the volatile in the polymer mixture. Two metrics are developed here: a cluster distribution index (CDI) based on the actual particle pairwise distances and a new mass-CDI based on the the radial distribution of masses. It is demonstrated that by relating the CDI and mass-CDI to the reduction in the cyclohexane content in the contactor, these metrics can be utilized to achieve the desirable input conditions in this polymer processing operation. Through a detailed examination of the particle dynamics in a steam contactor under various conditions, this study assists the polymer manufacturing industry in optimizing the devolatilization process for better steam savings and improved product quality.

Development of Community Economic Potential through Soybean Commodities in Sidorukun hamlet, West Stabat Lama Village, Langkat Regency

Most of the people in Sidorukun Hamlet depend on their livelihoods through the soybean commodity business which is then produced into tempeh, tofu, soy milk and tempeh crackers. This research aims to find soybean commodity products that have the most potential in developing the community's economy, as well as ways to increase the selling power and quality of soybean commodity products. This research is descriptive research using a qualitative approach. Data collection techniques in this research were carried out through observation and interviews. There were 6 informants in this study. The soybean commodity with the most potential is tempeh crackers, due to its longer shelf life and flexibility in distribution. To increase selling power, this can be done through e-commerce, diversifying products and brand image. In improving product quality, producers must have high quality human resources and routine quality control.

Brazil as a promising market for Russian technologies in the field of digitalization of agriculture

Subject. The article addresses Brazil as an attractive market for Russian technology development in the area of agriculture digitalization, as this country is interested in using modern technologies to optimize processes in agriculture. Objectives. The study aims to examine the current level of digitalization of Brazilian agriculture and determine prospects for cooperation between Russia and Brazil in the application of information technology in this sector. Methods. The study draws on methods of statistical, comparative, and economic analyses. Results. Digitalization enables Brazil to increase agricultural productivity through precision farming, lower production costs, improve product quality by monitoring and control of growing conditions, and reduce harmful environmental impact. An integrated approach to the use of digital technologies also plays an important role. We formulated recommendations for agriculture development in Brazil based on the Russian experience of using digitalization tools. Conclusions. Brazilian agriculture is of great importance in ensuring food security not only in Brazil, but also in many other countries. Therefore, it is crucial to introduce modern technologies into this sector.

Digital Twins in Manufacturing: A Survey of Current Practices and Future Trends

Digital Twin (DT) is the advanced tool of smart manufacturing which provides a proper way to model, analyse, and control the physical systems. A DT is the lifelike rendition of a physical object or phenomenon that uses real-time actual phenomena data to depict its actions, efficiency, and responses within the surrounding context. This technology allows electronic manufacturers to obtain a real-time stream of their systems, in which predictive maintenance, increased operation effectiveness, and improved product quality can be attained. By developing an ever-evolving replica of the physical structures, systems or even operation lines, Digital Twins enable the functionality of exploring various demanding circumstances and schemata, all in order to make effective decisions. When the manufacturing environments are rapidly changing, and there are more interconnections between them, the use of Digital Twins is especially useful. They continue improvement by highlighting problems, forecasting failure, and making choices based on data. The purpose of this article is to examine smart manufacturing via the lens of IoT DT technology. It gives general information about its uses, such as in the processes, time-saving and safety measures. As well, the paper considers the difficulties related to the practical application of DT, including costs, data management, and requirements for the formation of standards. Thus, based on analysing future developments and the role of Digital Twins as an innovation enabler in different industries, this study can benefit scholars, practitioners, and politicians who look forward to unlocking the potential of this innovative solution.

Non-Destructive Detection of Tea Polyphenols in Fu Brick Tea Based on Hyperspectral Imaging and Improved PKO-SVR Method

Tea polyphenols (TPs) are a critical indicator for evaluating the quality of tea leaves and are esteemed for their beneficial effects. The non-destructive detection of this component is essential for enhancing precise control in tea production and improving product quality. This study developed an enhanced PKO-SVR (support vector regression based on the Pied Kingfisher Optimization Algorithm) model for rapidly and accurately detecting tea polyphenol content in Fu brick tea using hyperspectral reflectance data. During this experiment, chemical analysis determined the tea polyphenol content, while hyperspectral imaging captured the spectral data. Data preprocessing techniques were applied to reduce noise interference and improve the prediction model. Additionally, several other models, including K-nearest neighbor (KNN) regression, neural network regression (BP), support vector regression based on the sparrow algorithm (SSA-SVR), and support vector regression based on particle swarm optimization (PSO-SVR), were established for comparison. The experiment results demonstrated that the improved PKO-SVR model excelled in predicting the polyphenol content of Fu brick tea (R2 = 0.9152, RMSE = 0.5876, RPD = 3.4345 for the test set) and also exhibited a faster convergence rate. Therefore, the hyperspectral data combined with the PKO-SVR algorithm presented in this study proved effective for evaluating Fu brick tea’s polyphenol content.

THE IMPACT OF DIGITAL TECHNOLOGIES ON THE EFFICIENCY OF MILK AND MEAT PRODUCTION IN SMALL BUSINESSES

The article raises the problem of the impact of digital technologies on the efficiency of milk and meat production in small businesses. The authors argue that the future of milk and meat production at small businesses in Kazakhstan will be determined by the introduction of innovative technologies, sustainable farming methods and the development of new markets. Small farms have the opportunity to use new technologies to increase efficiency, improve product quality and expand their market presence. Government support and investment also play a key role in the development of the sector. Innovations in meat production in Kazakhstan play a key role in increasing the competitiveness of local farms in the domestic and international markets. The introduction of modern technologies such as automation, digitalization and the use of biotechnologies makes it possible to improve product quality, reduce costs and minimize the negative impact on the environment. Government support and private investment in these technologies will also contribute to the development of the country's meat industry.

Gel strength prediction in ultrasonicated chicken mince: Fusing near-infrared and Raman spectroscopy coupled with deep learning LSTM algorithm

The meat processing industry faces challenges in maintaining the gel quality in minced chicken products, which affects consumer appeal and overall product quality. This study investigates the use of ultrasonic treatment to improve the gel quality of minced chicken and employs Near-Infrared (NIR) and Raman spectroscopy for rapid, non-destructive gel strength assessment. Initially, ultrasonic treatment was applied at various durations, with optimal results observed at approximately 30 min, significantly improving gel strength, texture profile, and reducing centrifugal loss rate. To comprehensively assess gel strength, Convolutional Neural Network (CNN) and Long Short-Term Memory (LSTM) models were established using individual NIR and Raman spectral data, as well as their fusion. The LSTM model with fused NIR-Raman data demonstrated superior performance (Rp2 = 0.9882, RPD = 9.2091), outperforming individual techniques and CNN-based models. This study demonstrates that ultrasonic treatment can effectively improve minced chicken gel quality, while the fusion of NIR and Raman spectroscopy coupled with LSTM deep learning offers a reliable, non-destructive, and rapid method for predicting gel strength. This approach addresses the industry's need for innovative quality assessment methods, potentially improving product quality and consumer satisfaction in the processed chicken market.

Comparison of different solar dryers with and without heat storage for crop drying: A review

AbstractSolar drying systems have proven to be cost‐effective and environmentally friendly for drying various products. An extensive investigation of solar dryers with different designs, applications, and operating principles is conducted. Compared to direct drying, solar drying improves product quality by lowering moisture content without compromising the original product's qualities. Solar dryers are of two types: passive solar dryers and active solar dryers. Passive‐mode solar dryers circulate air through natural convection, whereas active ones circulate air through forced convection. Crop‐affected design characteristics include crop sensitivity, cost and time available to dry the crop, crop moisture content, the level of drying required, and so on. A wide range of research has been carried out on the thermal modeling of the dryer, using different designs. This article also discussed and compared the drying performance of three basic solar dryers: direct solar dryer, dryer with PVT air collection, and phase change materials (PCM). Even though PCM dryers are more expensive and uncommon, their ability to speed up drying at night makes them impactful.

Analisis Biaya Operasional, Harga dan Kualitas Produk Terhadap Peningkatan Pendapatan Pada UMKM Kuliner di Sidoarjo

Background – Currently, many Micro, Small and Medium Enterprises (MSMEs) in the culinary sector are seeking to capitalize on the widespread appreciation for regional products that are embedded in the cultural fabric of Indonesian society. Likewise, in the Sidoarjo area, a multitude of culinary MSME owners are trying to attract consumers by offering products that offer typical flavors native to their respective regions. Aim – The aim of this research is to determine operational cost tests, price tests and product quality tests to increase the income of MSMEs Design / methodology / approach – This research method is quantitative research with SEM-PLS as a data analysis method with the Smart PLS 3.0 program. Data was collected through a questionnaire distributed to 100 research sample respondents, namely culinary MSMEs in Sidoarjo, with each variable measured using certain statement items. Findings – The findings of this research indicate that culinary MSMEs in Sidoarjo need to focus more on pricing strategies and improving product quality to increase their income. Operational cost efficiency does not necessarily contribute significantly to increasing revenue, possibly because human resources are an obstacle. This research provides important insights for MSME players and stakeholders in formulating effective business strategies, by emphasizing the importance of price and product quality in influencing income. Conclusion - The three variables studied were Operational Costs (X1), Price (X2), and Product Quality (X3), only the Price and Product Quality variables showed a positive and significant impact on Income Increase (Y) among culinary MSME actors in Sidoarjo. Research Implication – This research was carried out to determine whether operational costs incurred could be more effective and have a positive impact on productivity and income. Analisis Strategi Pemasaran Dalam Meningkatkan Volume Penjualan Pada UD. Tahu Murni Kota Gunungsitoli

Marketing has a crucial role in increasing product sales and introducing products to consumers. UD. Tahu Murni, located in Gunungsitoli City, is a business that focuses on tofu production with additional tempeh products. Although the business is still in operation, tofu production shows stagnation, with an increase only occurring on weekends. This is due to the lack of effective marketing strategies to attract a wider consumer base. This study aims to evaluate the marketing strategies implemented by UD. Tahu Murni in an effort to increase its sales volume. The main focus of this research is to identify the constraints faced in the marketing strategy as well as to propose improvement measures. Based on the results of the study, it was found that the marketing strategy of UD. Tahu Murni has not been optimized. The business still relies on traditional marketing methods such as word of mouth, direct sales, and direct distribution, which have proven to be slow and inefficient in expanding the market. Improving product quality and product planning based on consumer complaints is not enough to significantly increase sales volume.

Advancements in Metal Processing Additive Technologies: Selective Laser Melting (SLM)

Nowadays, the use of metal processing additive technologies is a rapidly growing field in the manufacturing industry. These technologies, such as metal 3D printing (also known as additive manufacturing) and laser cladding, allow for the production of complex geometries and intricate designs that would be impossible with traditional manufacturing methods. They also offer the ability to create parts with customized properties, such as improved strength, wear resistance, and corrosion resistance. In other words, these technologies have the potential to revolutionize the way we design and produce products, reducing costs and increasing efficiency to improve product quality and functionality. One of the significant advantages of these metal processing additive technologies is a reduction in waste and environmental impact. However, there are also some challenges associated with these technologies. One of the main challenges is the cost of equipment and materials, which can be prohibitively expensive for small businesses and individuals. Additionally, the quality of parts produced with these technologies can be affected by factors such as printing speed, temperature, and post-processing methods. This review article aims to contribute to a deep understanding of the processing, properties, and applications of ferrous and non-ferrous alloys in the context of SLM to assist readers in obtaining high-quality AM components. Simultaneously, it emphasizes the importance of further research, optimization, and cost-effective approaches to promote the broader adoption of SLM technology in the industry.
