Accumulation of mineral nutrients in fruit peel and pulp of loquat (Eriobotrya japonica) cultivars during fruit developmental stages

The experiment was conducted during 2023 at Punjab Agricultural University, Ludhiana, Punjab to assess the changes of mineral nutrients in peel and pulp of loquat cultivars at four developmental stages to explore its nutraceutical potential. During the development of loquat fruits, K and Zn content both in peel and pulp showed increasing trend from 60–92 DAFS. Similarly, Ca content in loquat peel, Fe and Mn content in pulp also exhibited increasing trend. While P, Cu and Mg content showed a decreasing trend in both peel and pulp. Likewise, Ca content in loquat pulp, Fe and Mn content in peel decreased from 60–92 DAFS. This study provides an insight regarding the accumulation of mineral nutrients in fruit peel and pulp in loquat cultivars during four fruit developmental stages which could be helpful for exploring its nutraceutical potential.

Optimization of Ultrasonication Probe-Assisted Extraction Parameters for Bioactive Compounds from Opuntia macrorhiza Using Taguchi Design and Assessment of Antioxidant Properties

Opuntia macrorhiza, commonly referred to as red prickly pear, is a type of cactus fruit. The Opuntia macrorhiza (OM) fruit is rich in polyphenols and contains a high amount of ascorbic acid and betalains. The fruit peels have demonstrated many biological abilities, including antioxidant, antifungal, and antibacterial activities. Ultrasound probe-assisted extraction (UPAE) is a highly promising method for efficiently extracting valuable molecules from natural sources. The objective of this study is to optimize the parameters of UPAE, including the appropriate solvent, liquid-to-solid ratio, extraction duration, and pulsation level. The aim is to maximize the yield of bioactive compounds (polyphenols, betalains, and ascorbic acid) from OM fruits (pulps and peels) and assess their antioxidant activities using Taguchi design. The optimal extraction conditions through the partial least squares method for OM pulp were determined to be aqueous extraction for 12 min with a liquid-to-solid ratio of 60 mL/g and 48 pulses/min, while for OM peels they were determined to be aqueous extraction for 20 min with a liquid-to-solid ratio of 60 mL/g and a pulsation of 48 pulses/min. The optimum UPAE conditions were compared with the values obtained from the optimum extraction under stirring extraction (STE). Overall, UPAE exhibited higher yields than STE. The obtained total polyphenol content ranged from 10.27 to 13.07 mg gallic acid equivalents/g dry weight, while the betalain content ranged from 974 to 1099 μg/g dry weight. Overall, these fruits demonstrated potential as new components for food and medicinal uses due to their good health effects and lack of toxicity.

Phenotypic Diversity of Morphological Traits of Pitahaya (Hylocereus spp.) and Its Agronomic Potential in the Amazonas Region, Peru

Pitahaya (Hylocereus spp.) is an economically significant cactus fruit in Peru, renowned for its rich nutritional profile and antioxidant properties while exhibiting wide biological diversity. This study aimed to morphologically characterize seven pitahaya accessions using qualitative and quantitative descriptors related to the cladodes, flowers, and fruits. Univariate and multivariate (FAMD, PCA, MCA, and clustering) analyses were employed to identify and classify the accessions based on their morphological traits. The analyses revealed three distinct groups: one consisting solely of AC.07; another with AC.02, AC.04, and AC.06; and a third including AC.01, AC.03, and AC.05. The first group exhibited superior characteristics, particularly in fruit traits such as the stigma lobe count (23.3), number of bracts (26.5 mm), and length of apical bracts (15.75 mm). The second group recorded the highest spine count (3.21), bract length (16.95 mm), and awn thickness (5.12 mm). The third group had the highest bract count (37) and an average locule number (23.65). These findings highlight the significant morphological diversity among the accessions, indicating the potential for classification and selection in pitahaya cultivation. The potential of AC.07 stands out in terms of its agronomic qualities, such as its fruit weight (451.93 g) and pulp weight (292.5 g), surpassing the other accessions.

Enhancing the functionality of yogurt: Impact of exotic fruit pulps addition on probiotic viability and metabolites during processing and storage

The effect of exotic fruit pulp (araçá, cagaita, cambuci, grumixama, blueberry, and uvaia) on probiotic viability during storage and after gastrointestinal tract (GIT) simulation, in vitro biological activity, total phenolics (TPC) and flavonoids content, and the production of metabolic products of microbial in probiotic yogurt were investigated. During the storage period (28 days), probiotic strain populations remained high (above 6 log CFU/g), while after the GTI simulation, L. acidophilus and B. animalis survival rates were higher when adding grumixama, blueberry, and uvaia pulp. Fermentation increased the antioxidant activity of yogurt containing araçá (12.87 ± 0.32 to 17.46 ± 1.79 μg Trolox/mg) and blueberry pulp (12.05 ± 1.43 to 17.49 ± 1.68 μg Trolox/mg) for ORACH for example. However, the total phenolic content increased in all samples after fermentation (ranging from 1.80 ± 0.26 μg gallic acid/mg (Uvaia) to 2.42 ± 0.08(Grumixama)), and there was no significant difference among treatments for total flavonoids. Thirty-eight metabolic compounds, mainly free amino acids, were detected, indicating a high degree of proteolysis in samples. Exotic fruit pulps positively impacted the probiotic yogurt parameters and are a potential alternative in functional food processing.

Re-harvest application of 2-(3-chlorophenoxy) propionic acid on pineapple plants

The application of plant regulators such as exogenous auxin may provide effects on the translocation of carbohydrates to plant sinks, which may result in larger parthenocarpic fruits. The objective of the study was to evaluate the effects of the application of 2-(3-chlorophenoxy) propionic acid on the growth and quality of pineapple fruits. The experiment was carried out in a randomized block design. After floral induction, 2-(3-chlorophenoxy) propionic acid (CPA) was applied directly on the inflorescences at the following doses: 0 mg L-1; 40.0 mg L-1; 80.0 mg L-1; 120.0 mg L-1 and 160.0 mg L-1. Growth evaluations continued until 84 days after application, measuring fruit length (cm) with and without crown, crown length (cm), leaf D dry matter, fruit weight with and without crown (g), calculating if also, the absolute and relative growth rates. The post-harvest and quality characteristics of the fruits were also evaluated, as well as the harvest index. The application of CPA significantly reduces the length and weight of the crown of the fruits, however, the exogenous application of auxin provided an increase in the weight of the fruit. Regarding the post-harvest analysis, the application of CPA reduced the content of soluble solids in the fruit pulp.

Quality of minimally processed ‘Monalisa’ apples with antioxidants and edible toppings

Minimally processed fruits are an alternative to add value to products that are difficult to sell, in addition to facilitateconsumer consumption. The objective is to research pulp browning inhibition in a simulated commercialization of minimally processed ‘Monalisa’ apples, stored in a refrigerated environment. After being sanitized with sodium hypochlorite, the apples were cut and immersed in the following treatments: the control being sodium erythorbate (ES) + A (distilled water); ES + FM (cassava starch 3%); ES + AS (3% sodium alginate); ES + AM (6% waxy maize starch) and ES + AP (3% pine nut starch), all together with 1% calcium chloride. Afterwards, 10 slices were placed in a polyethylene tray, wrapped in stretchable PVC film and stored in a refrigerated chamber at 4 ºC ± 1 ºC and relative humidity of 90 - 95%. Phytochemical evaluations were performed at 0, 3, 6 and 9 days of storage. The applied treatments maintained fruit quality. The treatment with cassava starch and pine nut starch were efficient in preserving the darkening of the fruit pulp on day 9. As for the waxy corn starch treatment, the enzyme activity was lower in the period of 0 and 6 days, maintaining quality and delaying darkening. The control sample (ES + A + CC) stood out during the 9-day period, as there was a decrease in the activity of polyphenoloxidase and peroxidase enzymes.

In-vitro evaluation of antioxidant properties of aqueous extracts of Murraya koenigii, Aegle marmelos and Laurus nobilis

This study investigates the antioxidant properties of aqueous extracts of Murraya koenigii (curry leaf), Aegle marmelos (bael) and Laurus nobilis (bay leaf) using in vitro assays. The plants have been traditionally used in Indian medicinal systems for the treatment of various metabolic disorders. Aqueous extracts from the leaves of Murraya koenigii, fruit pulp of Aegle marmelos and leaves of Laurus nobilis were prepared. The total phenolic content and total flavanoid content was also determined in these aqueous extracts. They were tested for their ability to scavange free radicals by DPPH assay, ABTS assay and FRAP assay which are elevated during various metabolic disorders. The results suggest that all the three plants exhibited significant antioxidant activities. But strongest antioxidant properties were exhibited by Murraya koenigii leaf extract followed by the pulp of Aegle marmelos and lowest antioxidant activity was exhibited by Laurus nobilis extract, supporting their use in traditional medicine and potential development into therapeutic agents. So, this research suggested that these medicinal plants possess a significant antioxidant potential and are important source of natural antioxidants and can be effectively used in treating oxidative stress disorders. As a result, the study's significant findings demonstrate that it is a step towards evidence-based phytomedicine.

Effect of fruit pulp and sugar concentration on the physicochemical, phytochemical and sensory characteristics of star fruit (Averrhoa carambola) leather

Starfruit is an underutilized fruit and is rich in vitamin C. Fruit leather from starfruit was prepared in this study and analyses of its physicochemical, phytochemical, and sensory characteristics were performed. Five samples named A, B, C, D and E were prepared with different proportions of fruit pulp:sugar of 70:30, 75:25, 80:20, 85:15 and 90:10, respectively. All the prepared samples were subjected to analyses. Phytochemical contents were found to increase with increasing fruit pulp proportion, thus sample E (90:10) was found to be the best in terms of phytochemical content. Similarly, product sample C (80:20) was scored the highest by the panelist in terms of sensory aspect. The best product sample C had total soluble solids (TSS) of 31 ± 2 °Bx, total ash content of 2.482 ± 0.001 %, acid insoluble ash of 1.0013 ± 0.002 %, crude protein of 0.5902 ± 0.004 %, crude fat of 0.3514 ± 0.003 %, crude fiber of 0.8991 ± 0.003 %, carbohydrate of 95.67 ± 0.04 %, vitamin C of 24.24 ± 0.1 mg/100g, total energy of 338.11 ± 0.04 Kcal/100 g, total phenolic content (TPC) of 6.105 ± 0.001 mg GAE/g of dry extract, total flavonoid content (TFC) of 1.125 ± 0.002 mg QE/g of dry extract and DPPH scavenging activity of 27.268 ± 0.001 %. Panelists responded favorably to the prepared product samples.

Oven-Dried Cupuaçu and Bacuri Fruit Pulps as Amazonian Food Resources

The Amazon is one of the largest and most diverse biomes on the planet. Cupuaçu (Theobroma grandiflorum (Willd. ex Spreng.) Schum) and bacuri (Platonia insignis Mart.) are Amazonian fruit species appreciated for their sensory characteristics and promising availability of bioactive compounds. However, high moisture levels (>80%) make these pulps susceptible to deterioration during storage. In this study, the oven-drying process was monitored to produce dry and more stable pulps. The process was monitored at 40 °C, 55 °C and 70 °C, and the bioactive compounds and antioxidant capacity were determined as quality indicators. In general, drying at 70 °C for 340 min produced dried cupuaçu and bacuri pulps with high levels of total phenolic compounds: 288 and 652 mg gallic acid equivalents/100 g, respectively. The hygroscopic evaluation suggested that both of the dried pulps should be stored at a relative humidity of <40% to avoid rapid water adsorption and it is advised to carry out the oven-drying process until up to 12% moisture is reached for cupuaçu and 9% for bacuri to avoid unnecessary energy consumption. Thus, this study expands the potential of bacuri and cupuaçu pulps for application in food industries, contributing to the economic and social development of the Amazon region.

Coloprotective effects of chebulic myrobalan extract by regulation of AMPK-SIRT1 signaling: A pharmacological and histopathological evaluation

Ulcerative colitis is a chronic, refractory disease caused by dysregulation of mucosal immune responses to the indigenous bacterial flora as well as genetic and environmental variables. Recently, there has been increasing interest towards the use of herbal medicines for the treatment of ulcerative colitis and the potential benefits could lie in their high patient acceptability, effectiveness, safety, and relatively low cost. It has been reported that Chebulic myrobalan (Terminalia chebula) exhibits anti-oxidant, anti-inflammatory and immunomodulatory properties. The present study was designed to evaluate the protective potential of extract of dried fruit pulp of T. chebula against Dextran sulphate sodium (DSS)-induced ulcerative colitis in male BALB/c mice. Three cycles of DSS (3 % w/v in drinking water), each followed by a seven-day remission phase were used to induce ulcerative colitis in mice. Animals were treated with T. chebula (300 mg/kg and 600 mg/kg) starting from Ist remission period to the end of the study. Different biochemical assays, histological evaluation and molecular analysis were performed to evaluate the protective effects of T. chebula extract in DSS induced colitis. T. chebula modulates the expression of nuclear factor kappa B, adenosine monophosphate kinase, tumour necrosis factor-alpha, sirtuin 1 and interleukin-1β. Furthermore, it also accorded coloprotective effects against DNA damage, apoptosis, inflammation and nitrosative stress. Finally, it was found that the high dose of the T. chebula extract (600 mg/kg) was found to be more effective than a low dose (300 mg/kg) in restoring the ulcerative colitis induced colonic damage.

Thermothelomyces thermophilus cultivated with residues from the fruit pulp industry: enzyme immobilization on ionic supports of a crude cocktail with enhanced production of lichenase.

β-Glucans comprise a group of β-D-glucose polysaccharides (glucans) that occur naturally in the cell walls of bacteria, fungi, and cereals. Its degradation is catalyzed by β-glucanases, enzymes that catalyze the breakdown of β-glucan into cello-oligosaccharides and glucose. These enzymes are classified as endo-glucanases, exo-glucanases, and glucosidases according to their mechanism of action, being the lichenases (β-1,3;1,4-glucanases, EC 3.2.1.73) one of them. Hence, we aimed to enhance lichenase production by Thermothelomyces thermophilus through the application of response surface methodology, using tamarind (Tamarindus indica) and jatoba (Hymenaea courbaril) seeds as carbon sources. The crude extract was immobilized, with a focus on improving lichenase activity, using various ionic supports, including MANAE (monoamine-N-aminoethyl), DEAE (diethylaminoethyl)-cellulose, CM (carboxymethyl)-cellulose, and PEI (polyethyleneimine)-agarose. Regarding lichenase, the optimal conditions yielding the highest activity were determined as 1.5% tamarind seeds, cultivation at 50°C under static conditions for 72h. Moreover, transitioning from Erlenmeyer flasks to a bioreactor proved pivotal, resulting in a 2.21-fold increase in activity. Biochemical characterization revealed an optimum temperature of 50°C and pH of 6.5. However, sustained stability at varying pH and temperature levels was challenging, underscoring the necessity of immobilizing lichenase on ionic supports. Notably, CM-cellulose emerged as the most effective immobilization medium, exhibiting an activity of 1.01 U/g of the derivative (enzyme plus support), marking a substantial enhancement. This study marks the first lichenase immobilization on these chemical supports in existing literature.

Impact of pre-exposure stress on the growth and viability of Lactobacillus acidophilus in regular, buriti pulp and orange byproduct fermented milk products

The loss of probiotics viability in yogurts and fermented milk is a significant challenge in producing yogurt and fermented milk. Thus, pre-exposure of probiotics to stress conditions can be a viable alternative to increase the probiotic viability. Moreover, the use of fruit pulp and agro-industrial residues in these products has demonstrated promising results in promoting growth and improving the viability of probiotics. Thus, this study aimed to evaluate the effects of pre-exposure to acid, oxidative and osmotic stress on the growth and viability of Lactobacillus acidophilus in yogurts and naturally fermented milk containing buriti (Mauritia flexuosa Mart.) pulp or orange byproduct. L. acidophilus was individually pre-exposed to acid, oxidative, and osmotic stress and used in the production of yogurts and fermented milk to determine both the acidification profile and growth of the cultures. Furthermore, during cold storage, the post-acidification profiles and viability of microbial cultures added to the yogurts and fermented milk were monitored. Results showed that pre-exposure to stress conditions influenced the growth parameters as the growth rate (μ) and lag phase (λ) of L. acidophilus and the starter cultures of S. thermophilus and L. delbrueckii subsp. bulgaricus. Moreover, an increase in the viability of L. acidophilus - pre-exposed to acid stress - was observed on the 21st day of storage of natural yogurts containing orange byproduct compared with non-stressful conditions. This study reports new data on the growth of probiotic cultures pre-exposed to stress conditions in products added of pulps and agro-industrial residues, which have not yet been shown in the literature.

Synthesis and characterization of Selenicereus undatus extract mediated nano-Bi2O3 and its application in the adsorption of Rhodamine B dye

Betacyanins (BC) are reddish-purple pigments widely found in the peels of white-fleshed dragon fruit (Selenicereus undatus) and peels and pulps of red-fleshed dragon fruit (Selenicereus costaricensis). BC pigments are good anti-oxidants that inhibit the formation of reactive oxygen species (ROS) in plants and thereby promote the reduction of metal ions to zero-valent metals. It also acts as a good stabilizing and capping agent in the synthesis of nanoparticles. Hence, this research aims to extract, and quantize the content of BC from the peels of Selenicereus undatus, to fabricate betacyanin-rich- Selenicereus undatus (SU) modified bismuth oxide nanoparticles (Bi2O3 NPs) and characterize using UV-Vis, FTIR, XRD, SEM, EDAX, and BET. The quantity and stability of the betacyanin are optimized using various parameters like time, temperature, solvent ratio, pH, etc., through a UV-Vis spectrophotometer at 538 nm. Synthesized SU-Bi2O3 NPs aim to alleviate synthetic dye contaminants through adsorption- an efficient route for water remediation. The nano-adsorbent Bi2O3 NPs showed an increase in dye adsorption with an increase in reaction time, temperature, and Bi2O3 NPs dosage, enabling efficient removal of dyes such as Rhodamine B (RhB) dyes.

Study on Biochemical Composition of Sea Buckthorn Fruit Cultivated from Leh, India and its Flavor Profile by Gas Chromatography Mass Spectrometry (GC-MS)

Sea buckthorn berries are among the most nutritious and vitamin rich fruit found in the plant kingdom. Biochemical composition of sea buckthorn berries cultivated from Leh, India was analyzed to study its suitability for making food products. Berry pulp was analyzed for sugars, acidity, TSS and pH. The results show that the sea buckthorn pulp exhibited higher acidity, lesser pH, total sugars and reducing sugars, when compared to fruits like pineapple and grapes. Calcium and potassium content of berry was found to be high when compared to other mineral content viz. sodium, iron and phosphorus. Antioxidant contents and antioxidant activity of pulp was determined and compared with other fruit pulps. Sea buckthorn fruit pulp exhibited significant antioxidant activity i.e. 88.72%, when compared to locally available fruits like grapes and pineapple. Totally 45 volatile flavour components were identified from sea buckthorn berry, which contains mainly esters, that contributes to significant berry aroma.

Correlation between Pulp Weight and Physio-Biochemical Traits of Mango (Mangifera indica L.) Germplasms

Aim: The present study was conducted to evaluate the relationship between pulp weight and various physio-biochemical attributes among 30 diverse mango (Mangifera indica L.) germplasms under the Tarai region of Uttarakhand. Place and Duration of Study: This investigation was carried out at Horticulture Research Centre, GB Pant University of Agriculture and Technology, Pantnagar, Uttarakhand, during the years 2021 and 2022. Methodology: The selected 30 germplasms included two commercially grown cultivars and 28 primary germplasms sourced from different eco-geographical locations of Uttar Pradesh and Uttarakhand states of India. Pulp weight, physical characteristics (fruit shape index, pulp/stone ratio) and biochemical parameters (Brix/Acid ratio and pH) were measured for each germplasm and statistically laid out in completely randomized design (CRD), and their relationships were analyzed using simple linear regression and Pearson’s correlation coefficients. Results: The maximum values recorded among the studied germplasms were 300.73 g for pulp weight (PMGC-19), 2.41 for fruit shape index (PMSS-31), 0.309 for pulp/stone ratio (PMGC-71), 140.87 for Brix/Acid ratio (PMGC-96) and 5.87 for pH (PMGC-96). Among the physical attributes, pulp weight exhibited a moderate positive correlation with fruit shape index (r = 0.419), indicating that fruits with a higher shape index tend to have increased pulp weight. Whereas, a moderate negative correlation was observed between pulp weight and pulp/stone ratio (r = -0.457), suggesting that as the pulp/stone ratio increases, pulp weight decreases. However, biochemical attributes such as Brix/Acid ratio and pH showed no significant correlation with pulp weight (r = 0.005 and r = 0.018, respectively), indicating an independent influence of these parameters on pulp characteristics. Conclusion: These findings provide important insights into the complex relationships between pulp weight and other physio-biochemical traits in mango, some traits for breeding programs aimed to improving fruit quality and pulp content and identified superior and promising germplasms for cultivation as well as potential parental genotypes in mango improvement programs.

Annoglabrin A-C, three new ent-kaurane diterpenoids from the Annona glabra fruit pulp

Three new ent-kaurane diterpenoids, namely annoglabrin A-C (1-3), were isolated from the Annona glabra fruit pulp. Their structures were clarified by widespread spectroscopic analyses (1D and 2D NMR, HRESIMS). The relative configuration of these new compounds was established through the NOESY spectrum. Compounds 1-3 were evaluated for their inhibitory activity against α-glucosidase and were found with weak (1 and 3) or no effects (2), compared to those of positive control (acarbose, IC50 82.0 µM).

Olive mill wastewater as a source of defense-promoting by-products against microbial pathogens

Olive oil is a core component of the Mediterranean diet known for its nutritional properties and health benefits. Olive industry is moving to novel extraction systems for higher oil yield and quality and for waste reduction, which is a relevant problem in the process due to its toxicity and high disposal costs. Multi-Phase Decanter (DMF) is a modern two-phase system performed without adding water during the process. Using DMF, a wet by-product indicated as pâté and consisting of the fruit pulp and vegetation water (VW) is recovered. The pâté has a high content of potentially bioactive molecules that may be exploited to promote plant resistance against microbial pathogens. In this work, to identify by/products of biological interest, the VW recovered from the pâté by centrifugation was subjected to fractionation by tangential-flow membrane filtration (TFMF), combining microfiltration (MF) and ultrafiltration (UF). High-resolution NMR spectroscopy indicated the presence of bioactive molecules such as flavonoids, hydroxytyrosol and oleuropein with known antimicrobial activity. High-Performance Anion Exchange Chromatography with Pulsed Amperometric Detection (HPAEC-PAD) was performed to detect the presence of pectic oligosaccharides in the fractions, showing the enrichment, in the UF-concentrate fraction, of oligogalacturonides (OGs), well known for the ability to elicit defense responses and protect plants against pathogen infections. Arabidopsis thaliana plants treated with TFMF fractions displayed induction of defense responses and exhibited tolerance against microbial pathogens without adverse effects on growth and fitness. This study shows that pâté by-products can potentially be exploited in agriculture as sustainable plant phyto-protectant.

Change of bioactive properties, spectral reflectance, and color characteristics of European cranberry (Viburnum opulus L.) juice as affected by foam mat drying technique

The European cranberry bush, known for its health benefits, can only be consumed through fermentation. This study aimed to develop a fruit leather made from European cranberry bush using quince seed gel and the foam drying method. For this purpose, quince seed gel was added to European cranberry juice to increase consistency. Then, European cranberry fruit leather was obtained by drying at 70, 80, and 90 °C air temperatures using foam mat drying technology. Spectral reflectance, color, drying kinetics, anthocyanin, ascorbic acid, and total phenolic content, antiradical activity, and macro-micronutrient concentrations of the resulting fruit pulp were investigated. The foam mat drying process at 90 °C had the greatest values of ascorbic acid (0.996 mg g− 1), anthocyanin (275.9 mg kg− 1), DPPH (47.77%), and ABTS.+ (68.76 µg TE g− 1). In addition, the highest value of total phenolic content (37.75 mg g− 1) was obtained in the foam mat drying process at 80 °C. The highest concentration of P, Na, Mg, K, Ca, and Mn in fruit leather was obtained at 70 °C, and the highest concentration of S, Cu, and Zn was obtained at 90 °C. The lowest spectral reflectance values were measured at 90 °C. In conclusion, the present study explored the fact that adding quince seed gel, extremely rich in biochemical content, significantly enhanced the bioactivity properties of European cranberry bush fruit leather.
