Advances in Research on the Improvement of Low-Salt Meat Product Through Ultrasound Technology: Quality, Myofibrillar Proteins, and Gelation Properties.

The high sodium content in meat products poses health risks to consumers and does not align with modern green and healthy living standards. Current strategies for directly reducing the sodium content in meat products are limited by their negative impact on the sensory or quality attributes of the products. In recent years, there has been great interest in applying ultrasound technology to reduce sodium content. This paper discusses the advantages and disadvantages of current mainstream strategies for reducing the sodium content in meat products, as well as the potential mechanisms by which ultrasound-assisted marination improves the quality of low-salt meat products. The main findings indicate that ultrasound, through its cavitation and mechanical effects, facilitates the transition of proteins from stable insoluble aggregates to stable soluble complexes, exposing more hydrophilic groups and, thus, enhancing protein solubility. At the same time, ultrasound promotes a greater number of proteins to participate in the formation of interfacial layers, thereby increasing emulsifying activity. Furthermore, ultrasound treatment promotes the interaction between proteins and water, leading to partial unfolding of protein chains, which allows polar residues to more readily capture water in the gel, thereby improving the water-holding capacity of the gel. These effects will contribute to the formation of high-quality low-salt meat products. However, variations in the frequency, intensity, and duration of ultrasound treatment can lead to differing effects on the quality improvement of low-salt meat products.

Dynamic interaction between refractory and low‐carbon low‐silicon Al‐killed steel

AbstractTo investigate the dynamic interaction between refining refractory and low‐carbon low‐silicon Al‐killed steel, the “refractory‐molten steel‐inclusion” system was analyzed using dynamic erosion experiments and the FactSage database. This study discussed the formation of interfacial layers between various refining refractories and molten steel, as well as the transformation of nonmetallic inclusions in steel. The findings indicate that the interaction between refractories and molten steel produces a distinct interface layer. The influence of various refining refractories on inclusions varies significantly. MgO‐C refractory promotes the formation of MgO·Al2O3 inclusions in steel, while Al2O3‐MgO refractory leads to the formation of SiO2‐MnO‐Al2O3 inclusions. Both Al2O3‐SiC refractory and Al2O3‐MgO‐C refractory result in Al2O3 inclusions with trace levels of MgO. Steel refined with Al2O3‐MgO‐C refractory has increased MgO content within Al2O3 inclusions but still does not reach the stoichiometric ratio of MgO·Al2O3. As the initial Al content increases, the influence of MgO‐C refractory inclusions becomes increasingly noticeable. The average MgO content within the inclusions rises with the reaction duration, achieving as high as 62.9%. The transition path of Al2O3 inclusions in molten steel follows “Al2O3→MgO·Al2O3→MgO.”

The molecular picture of the local environment in a stable model coacervate.

Complex coacervates play essential roles in various biological processes and applications. Although substantial progress has been made in understanding the molecular interactions driving complex coacervation, the mechanisms stabilizing coacervates against coalescence remain experimentally challenging and not fully elucidated. We recently showed that polydiallyldimethylammonium chloride (PDDA) and adenosine triphosphate (ATP) coacervates stabilize upon their transferto deionized (DI) water. Here, we perform molecular dynamics simulations of PDDA-ATP coacervates in supernatant and DI water, to understand the ion dynamics and structure within stable coacervates. We found that transferring the coacervates to DI water results in an immediate ejection of a significant fraction of small ions (Na+ and Cl-) from the surface of the coacervates to DI water. We also observed a notable reduction in the mobility of thesecounterions incoacervates whenin DI water, both in the cluster-forming and slab simulations, together with a lowered displacement of PDDA and ATP. These results suggest that the initial ejection of the ions from the coacervates in DI water may induce an interfacial skin layer formation, inhibiting further mobility of ionsin the skin layer.

Interfacial layer suppression in ZrO2/TiN stack structured capacitors via atomic layer deposition

Controlling the formation of interfacial layers in dynamic random-access memory (DRAM) capacitors is crucial because it affects electrical performance, such as increasing the equivalent oxide thickness. This study investigates the formation of an interfacial layer during atomic layer deposition (ALD) of ZrO2 on TiN electrodes and examines its influence on electrical properties. Utilizing O3 and H2O as oxygen sources, we quantitatively identified notable differences in the formation of the interfacial TiOx layer. Using O3 results in a thicker TiOx layer with fewer impurities, which lowers the leakage current, whereas H2O creates a thinner interfacial layer with higher impurity levels, leading to an increased leakage current. To optimize these effects, we developed a two-step ALD process that combines both oxygen sources, reducing the interfacial layer thickness while maintaining low leakage currents. This approach significantly improved the electrical performance of capacitors. Furthermore, similar results were observed for HfO2/TiN systems, suggesting that our findings are broadly applicable to high-k dielectric materials.

Achieving 11.23 % efficiency in CZTSSe solar cells via defect control and interface contact optimization

The high open-circuit voltage deficit (VOC, def) caused by structural imperfections in the absorber layer and charge loss during carrier transport is a critical barrier affecting the performance of Cu2ZnSn(S,Se)4 (CZTSSe) devices. In this work, Ag was added to the DMF-based Cu+-Sn4+ system, which significantly improved the crystal morphology and electrical properties of the absorber layer. Additionally, optimizing the selenization process not only reduced surface roughness and eliminated voids at the bottom of the absorber layer but also resulted in the formation of a MoSe2 back interface layer with a more suitable thickness. These measures collectively enhanced the overall quality of the absorber layer, reducing the formation of deep-level defect clusters and effectively boosting carrier transport efficiency. Consequently, the concentration of bulk and interfacial defects decreased, and the impact of potential barriers on carrier movement was minimized. With these comprehensive improvements, the power conversion efficiency of CZTSSe solar cells increased from 8.48 % to 11.23 %. Our research demonstrates that optimizing the structure of the absorber layer can effectively enhance the performance of CZTSSe solar cells, providing valuable insights for the fabrication of high-efficiency devices in the future.

Growth mechanism of HfO2 film on H-terminated Si (100) surface from atomic layer deposition process using tetrakis(ethylmethylamino)hafnium

The deposition of HfO2 on H-terminated Si (100) surfaces presents both interest and challenges due to the complexity of the surface reaction mechanisms. Previous experimental studies reported conflicting results regarding the formation of interfacial layers and the presence of incubation periods during the initial cycles of the HfO2 atomic layer deposition (ALD) process. In this study, we provide a detailed analysis of the surface reaction mechanism of HfO2 ALD on H-terminated Si (100) surfaces using tetrakis(ethylmethylamino)hafnium (TEMAH) and water. Our findings demonstrate that TEMAH chemisorbs onto the H-terminated Si (100) surface through the formation of two N-Si interfacial bonds. Additionally, the remaining ligands of the adsorbed Hf precursor are efficiently removed through hydroxylation during the water pulse, with low energy barriers of +25.9 to +30.0 kJ/mol. Furthermore, the N-Si interfacial bonds can be broken, allowing for the formation of Hf-O-Si interfacial bonds during either the water pulse or post-deposition processes. This work provides valuable insights into the surface reactions of HfO2 ALD and explains the varied interfacial bonding and incubation periods observed in prior studies.

Multiple Functional Bonds Integrated Interphases for Long Cycle Sodium‐Ion Batteries

AbstractSodium‐ion batteries (SIBs) have garnered significant interest as one of the most promising energy suppliers for power grid energy storage. However, the poor electrode/electrolyte interfacial stability leads to continual electrolyte decomposition and transition metal dissolution, resulting in rapid performance degradation of SIBs. In this work, we propose a strategy integrating multiple functional bonds to regulate electrode/electrolyte interphase by triple‐coupling of succinonitrile (SN), sodium hexafluorophosphate (NaPF6) and fluorinated ethylene carbonate (FEC). Theoretical calculation and experiment results show that the solvation structure of Na+ and ClO4− is effectively reconfigured by the solvated FEC, SN and PF6− in PC‐based carbonate electrolyte. The newly developed electrolyte demonstrates increased Na+‐FEC coordination, weakened interaction of Na+‐PC and participation of SN and PF6− anions in solvation, resulting in the formation of a conformal interfacial layer comprising of sodium oxynitrides (NaNxOy), sodium fluoride (NaF) and phosphorus oxide compounds (NaPxOy). Consequently, a 3 Ah pouch full cell of hard carbon//NaNi1/3Fe1/3Mn1/3O2 exhibits an excellent capacity retention of 90.4 % after 1000 cycles. Detailed postmortem analysis of interface chemistry is further illustrated by multiple characterization methods. This study provides a new avenue for developing electrolyte formulations with multiple functional bonds integrated interphases to significantly improve the long‐term cycling stability of SIBs.

First-principle and experimental investigation into the interfacial characters of Ti-doped ZTA and high chromium cast iron

Ti doping can improve the interfacial wettability and bonding condition between ZTA ceramic and high chromium cast iron (HCCI), but the underlying mechanism is still unclear. Therefore, the effects of Ti doping on the interfacial characters between ZTA and HCCI were investigated by experiment and first-principles calculations. Results of XRD, SEM, and high-temperature drop test indicate the presence of Ti at the interface and its effect on the formation of interfacial diffusion layer to improve the interface wettability and bonding obviously. The heat of segregation and work of adhesion obtained by first-principle calculations shows that the improvement in interface wettability and bonding is due to the promotion of dopped Ti atoms on the diffusion of Fe, Al, and Zr elements, but not the diffusion of Ti itself. Further investigation from the electronic level reveals that the doped Ti changes the charge distribution and orbital hybridization, and thus makes the formation or enhancement of strong ionic bonds and covalent bonds at the interface, improving the bonding strength and wettability of interfaces in ZTA/HCCI. The findings of this research can offer new insights into the modification of ceramics and enlarge the application of advanced ceramic materials.

(Invited) Design Rules for (Li-mediated) Photoelectrochemical N2 Reduction to NH3

The electrochemically-driven N2 reduction reaction (N2RR) offers an alternative route to the traditional Haber-Bosch method for production of NH3. Electrifying NH3 synthesis promises a route to the decarbonization and decentralization of ammonia production, which currently accounts for >1% of annual CO2 emissions. While there have been many studies examining electrochemically-driven production of NH3 in aqueous electrolytes at low-T (≤ 50o C) and low-P (≤20 bar), lithium-mediated N2 reduction (Li-N2R) in nonaqueous electrolytes at low-T and low-P has emerged as a promising method for obtaining reliable electroreduction of N2 to NH3.With this in mind, our team at SUNCAT and NREL have begun evaluating the opportunity and key design rules necessary for coupling photoelectrochemical methods to the drive the Li-N2R reaction using solar illumination. Nonaqueous, photoelectrochemical Li-N2R promises a route to stable operation that has been a key challenge associated with photoelectrode operation in aqueous electrolytes. Recognizing the energetic constraints associated with the Li-mediated process, we have modeled and mapped the bandgap characteristics necessary for a semiconducting light absorber to drive the Li-N2R reaction and the maximum attainable solar-to-NH3 conversion yields. We have identified III-V based photoelectrodes that meet the modeled requirements and evaluated the surface chemistry at the electrode/electrolyte interface under Li-N2R conditions to understand the how reactive Li-species influence photoelectrochemical performance (e.g., rate, selectivity, stability), how solid-electrolyte interface (SEI) formation and electrolyte selection are mutually influenced by illumination, and how the current density and cycling conditions enforced by solar operation dictate photoelectrochemical N2-to-NH3 performance. We have further extended a neutron-reflectometry technique used for in situ observation of interfacial layer formation to be compatible with light-driven reactions, and with these insights in hand continue our drive toward demonstrating unassisted photoelectrochemical N2-to-NH3 production.

Organic montmorillonite modified polyethylene oxide based polymer electrolyte for dendrite-free flexible solid-state lithium metal batteries

Polyethylene oxide (PEO) based solid-state electrolytes are known for the low manufacturing cost and excellent processability, but their practical application is paved with thorns including the inferior ionic conductivity, low Li+ transfer number and insufficient Li dendrite blocking ability. Herein, we propose organic montmorillonite (OMMT) with expanded layer spacing (1.97 nm) as versatile fillers to construct PEO-OMMT electrolyte, in which OMMT not only increases Li+ transfer number (0.56) and ionic conductivity (7.15 × 10−4 S cm−1), providing fast ionic transport channels, but also endows PEO with high mechanical strength, resulting remarkable Li dendrite blocking ability (>2100 h). Additionally, the high dielectric constant and Lewis-rich polar sites of OMMT facilitate the dissociation of lithium salts and the rapid formation of LiF and Li3N-rich solid electrolyte interface layers. Impressively, the LiFePO4|PEO-OMMT|Li cell shows a high initial capacity (154.4 mAh g−1 at 0.5C) with ultralong cycling lifespan (>1200 cycles). Similarly, the LiNi0.83Mn0.05Co0.12O2|PEO-OMMT|Li cell retains a high discharge capacity of 151.5 mAh g−1 after 100 cycles at 0.2C. This work highlights the indelible contributions of OMMT functionalized fillers in improving the interfacial stability of PEO based solid-state electrolytes, paving a feasible avenue for the practical application of solid-state lithium metal batteries.

Strategy to Simultaneously Manipulate Direct Zn Nucleation and Hydrogen Evolution via Surface Modifier Hydrolysis for High-Performance Zn-Ion Batteries.

The demand for safer batteries is growing rapidly due to fire incidents in electronic devices that use Li-ion batteries. Zn-ion batteries are among the most promising candidates to replace Li-ion batteries because they use a water-based electrolyte and are not explosive. However, Zn-ion batteries suffer from persistent corrosion and dendritic crystal formation during the charge-discharge process, which decrease their reversibility and hinder their commercial usage. Extensive research has been conducted to address these issues, but there are significant limitations due to high process and time costs. In this study, the modulation of the Zn-electrolyte interface to overcome these challenges is attempted using acetamide-derived thioacetamide (TAA), a surface modifier used in electroplating. TAA undergoes hydrolysis in an aqueous solution and produces weakly acidic byproducts and sulfide ions. These species are adsorbed onto the Zn metal surface, which induces uniform Zn2+ deposition, facilitates the formation of a stable interfacial layer, and inhibits side reactions due to the reduced water activity. Consequently, the symmetric cell with TAA achieves a low polarization of 50 mV and stable cycling for 700 h at 1 mA cm-2. Additionally, a Zn|V6O13 full cell exhibits electrochemical reversibility, maintaining a capacity retention of 64% over 300 cycles. Therefore, this study offers useful insights into the development of a simple manufacturing process to ensure the competitiveness of Zn-ion batteries for practical applications using functional electrolyte additives.

The influence of sizing treatment on the mechanical and morphological properties of carbon fiber reinforced polyphenylene sulfide composites

AbstractCarbon fiber reinforced thermoplastics (CFRTPs) demonstrate promising applications in engineering sectors, and the interfacial interaction between CFs and the matrix plays a significant role in determining the properties of CFRPs. This work attempted to study the influence of sizing agent on the properties of polyphenylene sulfide/CF (PPS/CF) composites with an aim to fabricate PPS/CF composites with enhanced mechanical properties. The results showed that the use of 2 wt% boron phenolic resin as the sizing agent favored the formation of a uniform interfacial layer on the surface of CFs. Contact angle tests revealed that corresponding sized CFs exhibited the smallest contact angle and the highest surface energy among the studied systems. As a result, the sizing agents acted as a protective layer for CFs during melt processing process, which mitigated the damage to the CFs. The average length of CFs was longer after melt extrusion process which was vital for achieving high mechanical performance of PPS/CF composites.Highlights Coating sizing agent protected CFs from being fractured during melt processing. Applying 2 wt% BPR sizing agent yielded the best interfacial performance. The tensile strength and Yong's modulus of PPS/CFB2 reached as high as 155.9 and 7618.21 MPa. The tensile fracture mode between BPR‐treated CFs and PPS was cohesive damage.

Properties regulation and mechanism on ferritin/chitooligosaccharide dual-compartmental emulsions and its application for co-encapsulation of curcumin and quercetin bioactive compounds

Dual-compartmental emulsions, containing multiple chambers, possess great advantages in co-encapsulation of different cargoes. Herein, we reported a stable dual-compartmental emulsion by regulating the ratio of Marsupenaeus japonicus ferritin (MF) and chitooligosaccharide (COS), enabling efficient co-encapsulation of different compounds. The adsorption behavior of MF/COS complex over droplet interface varied at different ratios, thereby exerting an influence on the emulsion properties. Remarkably, emulsions stabilized by MF/COS complex at a ratio of 2:1 exhibited superior stability, as evidenced by no significant creaming or demulsification during storage or heat treatment. The mechanism is that MF/COS2:1 complex can enhance the formation of thicker interfacial layer and dense continuous phase network structure. Additionally, curcumin and quercetin can be co-encapsulated into the emulsions and their retention rates were significantly improved than those in oils, implying the potential of the resulting dual-compartmental emulsions in co-encapsulation and delivery of bioactive compounds.

A Large-Scale Fabrication of Flexible, Ultrathin, and Robust Solid Electrolyte for Solid-State Lithium-Sulfur Batteries.

All-solid-state lithium metal batteries (ASSLMBs) are considered as the most promising candidates for the next-generation high-safety batteries. To achieve high energy density in ASSLMBs, it is essential that the solid-state electrolytes (SSEs) are lightweight, thin, and possess superior electrochemical stability. In this study, a feasible and scalable fabrication approach to construct 3D supporting skeleton using an electro-blown spinning technique is proposed. This skeleton not only enhances the mechanical strength but also hinders the migration of Li-salt anions, improving the lithium-ion transference number of the SSE. This provides a homogeneous distribution of Li-ion flux and local current density, promoting uniform Li deposition. As a result, based on the mechanically robust and thin SSEs, the Li symmetric cells show outstanding Li plating/stripping reversibility. Besides, a stableinterfacecontact between SSE and Li anode has been established with the formation of an F-enriched solid electrolyte interface layer. The solid-state Li|sulfurized polyacrylonitrile (Li|SPAN) cell achieves a capacity retention ratio of 94.0% after 350 cycles at 0.5 C. Also, the high-voltage Li|LCO cell shows a capacity retention of 92.4% at 0.5 C after 500 cycles. This fabrication approach for SSEs is applicable for commercially large-scale production and application in high-energy-density and high-safety ASSLMBs.

Adsorption study on the formation of interfacial layers based on birch glucuronoxylans

Glucuronoxylans (GX), particularly crude fractions obtained by pressurized hot water extraction of birch wood, act as potent emulsifiers and stabilizers against physical separation and lipid oxidation. Herein, we studied the adsorption of GX on hydrophobic interfaces to correlate their multicomponent character towards the formation of interfacial layers in emulsions. Dynamic interfacial tension (DIFT) and quartz crystal microgravimetry with dissipation monitoring (QCM-D) were applied to various GX fractions and the results compared with those from cellulose-based emulsifiers. The roles of residual lignin and polysaccharides are discussed considering the formation of interfacial layers during emulsification. The DIFT of the different GXs reached quasi-equilibrium faster as the lignin concentration increased, implying a correlation between the rate of adsorption and the residual lignin content. The effect of NaCl addition was more pronounced in polysaccharide-rich fractions, indicating that the polysaccharide fraction modulated the effect of ionic strength. QCM-D showed that despite the fast adsorption exhibited by the lignin-rich GX extract in the DIFT curves, the adsorbed materials were lightweight, suggesting that the polysaccharide fraction built the bulk of the interfacial layer. These results provide a foundation towards understanding the role of GX in interfacial stabilization beyond traditional plant-based counterparts.

Effect of hot forging temperature and diamond volume fraction on TiC interface evolution and thermal conductivity of hot-forged Ti-coated diamond/Cu composites

Diamond/Cu composites are developed as a solution to the challenge of dissipating heat in electronic devices, due to the potential to have a high thermal conductivity (TC) and a coefficient of thermal expansion (CTE) close to that of the electronic devices. In this study, Ti-coated diamond/Cu composites were fabricated by hot forging. Fabrication parameters were manipulated by altering the volume fraction of diamond and adjusting the hot forging temperature to determine the optimal combination of parameters to produce Ti-coated diamond/Cu composites with high TC. The microstructure of the hot-forged composites and the interface characteristics were characterized by SEM, and the interfacial bond strength between the copper and the diamond was assessed based on tensile test results. Compared to other fabrication temperatures of 700 °C and 850 °C, 800 °C is the optimal hot forging temperature to facilitate the dynamic formation of TiC interface layer and ensure a high interface coverage rate on the diamond particles. Additionally, the volume fraction of diamond affects the interface microstructure and TC of the hot-forged composites by affecting the heating behaviour of the composites during induction heating. As a result, 800 °C hot-forged composites with a composition of 45vol%Ti-coated diamond achieved the highest TC (455 W/mK) among the fabricated composites and exhibited good ductility at a high tensile strength of 124 MPa. The findings indicate that the high TC of the Ti-coated diamond/Cu composites are ensured by the synergy of uniform distribution of diamond in the matrix, a rough interface, and strong interfacial bonding between the copper and the diamond. This paper provides insights into the TiC interface formation mechanisms occurring during the induction heating and hot forging fabrication process.

Binary blends of polyamide 6 with aliphatic polyketone: the compatibility analysis of polymer components

The compatibility and interactions of polyamide 6 (PA6) and aliphatic polyketone (APK) were studied when they were mixed in a melt by extrusion. Using the relaxation spectrometry (RS) method, it was shown that the studied PA6/ APK blends had one glass transition temperature (Тg) located on the temperature scale between Тg of initial PA6 and APK. It was also found that in these mixtures, the PA6 b-relaxation peak, responsible for the local movement of small-scale structural units of the main chain and side branches, was socialized with the b-peak of APK. On this basis, conclusions were drawn about the compatibility of PA6 and APK at the segmental and small-scale level. The mutual influence of polymer components of PA6/APK blends on the dynamic shear modulus and the zG3 criterion is shown. The DSC analysis has revealed a slowdown in the crystallization of PA6 and APK in their blends, which is probably due to the formation of extensive interfacial (transitional) layers in the PA6/APK blend, in which crystallization of polymer components is hindered due to intermolecular interactions. The analysis of the IR-spectra in the range of 3000–3800 cm–1 has made it possible to establish the formation of hydrogen bonds between the polyamide –NH-groups and carbonyls –C=O, being part of APK, which contributes to an increase in the compatibility of the polymer components of the blend under study.

Growth of Atomic layer-deposited Monoclinic Molybdenum Dioxide Films Stabilized by Tin Oxide Doping for DRAM Capacitor Electrode Applications.

Dynamic random-access memory (DRAM) capacitor electrodes, exemplified by TiN, face performance limitations owing to their relatively low work functions in addition to the formation of a low-k interfacial layer caused by their insufficient chemical stability. With recent advances in device scaling, these issues have become increasingly problematic, prompting the exploration of alternative electrode materials to replace TiN. Molybdenum dioxide (MoO2) has emerged as a promising candidate for this application, outperforming TiN due to its low resistivity, high work function (>5 eV), and excellent chemical stability. Moreover, monoclinic MoO2 exhibits a distorted rutile structure, enabling the in situ growth of high-k rutile TiO2 on MoO2 at low deposition temperatures. However, MoO2 deposition poses challenges because of its metastable nature compared to the more stable molybdenum oxide (MoOx) phases, such as MoO3 and Mo4O11. In this work, we successfully fabricated Sn-doped MoOx (TMO) films by atomic layer deposition (ALD) at 300 °C. A stabilized monoclinic MoO2 phase was achieved using ALD by incorporating SnOx into MoOx on both SiO2 and TiN substrates. The ALD TMO process comprised MoOx and SnOx subcycles, and the MoOx:SnOx subcycle ratio was varied from 100:1 to 20:1. High growth rates ranging from 0.19 to 0.34 nm/cycle were achieved for ALD TMO with varying the MoOx:SnOx subcycle ratio from 20:1 to 100:0. After post-deposition annealing at 500 °C, polycrystalline TMO films were obtained with smooth surface morphology. ALD TMO exhibited excellent interface quality with ALD TiO2, possessing a negligible low-k interfacial layer. Moreover, a rutile TiO2 film with a high dielectric constant of 136 was successfully grown on a 20% Sn-TMO electrode. Overall, this study provides a strategy to stabilize metastable MoO2 films using ALD, and it demonstrates the superiority of ALD TMO as a promising DRAM capacitor electrode material.
