This study aims to determine the effect of giving a mixture of fermented tofu pulp and rice bran in rations on the performance of hybrid ducks. This research was carried out in Lambanapu Village, Kambera District, East Sumba Regency which took place from November to December 2023, where there was a 2-week adaptation period and 8 weeks of data collection period. This study used an experimental method with a Complete Random Design (RAL) with 4 treatments and 4 replicates, namely P0:BR2 (basal feed), P1: BR2 80% + tofu pulp fermentation 10% + rice bran fermentation 10%, P2: BR2 60% + tofu pulp fermentation 20% + rice bran fermentation 20%, and P3: BR2 40% + tofu pulp fermentation 30% + rice bran fermentation 30%. The results of this study showed that the administration of tofu pulp and fermented rice bran had a real effect (P<0.05) on ration consumption and ration conversion, but had no effect on body weight gain. In conclusion, the application of 40% BR2 and a mixture of fermented tofu pulp 30% and rice bran 30% in the ration can increase ration consumption, but produce a high conversion value and the same body weight gain in Hybrid ducks.

15 Effects of post-MSC DDGS inclusion in gestation diets compared with other fiber sources on in vitro gas and volatile fatty acid production

Abstract In vitro fermentation has been used to characterize hindgut fermentation of fibrous ingredients fed to grower pigs. However, there is little to no work investigating hindgut fermentation of fibrous feedtuffs in gestating sows, who have greater fermentative capacity compared with grower pigs. The objective of this study was to characterize hindgut gas production and volatile fatty acids (VFA) following in vitro fermentation using fecal inoculum collected from the sows when fed either post-protein separation dried-distiller’s grains with solubles (post-MSC DDGS), soyhulls, or sugar beet pulp. Pregnant sows (n = 22; parity 0 to 1; body weigh = 190 ± 10 kg) were allocated to 1 of 6 dietary treatments in a crossover design with two collection periods (period 1 from d 40-59 of gestation and period 2 from d 60-79 of gestation) to attain at least 7 observations per treatment. Two of the six diets were practical corn-soybean meal-based gestation diets with either soyhulls (17.5% inclusion) or post-MSC DDGS (15% inclusion). The remaining four diets included a corn-basal diet and the basal diet plus 30% inclusion of post-MSC DDGS, soyhulls, or sugar beet pulp. Sows were fed experimental diets (2.2 kg/d in a single feeding) in two 20 d collection periods. For in vitro fermentation, fresh fecal samples were collected on d 16 of each collection period, prepared as inoculum, and subjected to the gas production measurement technique through in vitro fermentation. Supernatant residue from the in vitro fermentation was subjected to VFA analysis by gas chromatography. Data were analyzed with ANOVA and fixed to a mixed linear model using treatment as the main effect and collection period as a random variable. Total gas production of the practical diet containing post-MSC DDGS diet was 132 ml/g less (P = 0.03) than the practical soyhull diet. While the total concentration of total VFA did not differ between practical diets, the concentration of isovalerate tended to be greater for the post-MSC DDGS diet compared with the soyhull diet (P = 0.09). Total gas production was 140 and 375 mg/L less for the post-MSC DDGS than soyhulls and sugar beet pulp, respectively (P < 0.01). The concentrations of butyrate and isovalerate (relative to total VFA) were approximately 7 and 2%, respectively, greater for the post-MSC DDGS than in the soyhulls or sugar beet pulp fermentation residues (P < 0.05). Concentrations of other VFA relative to total VFA did not differ between fiber sources. In conclusion, post-MSC DDGS can contribute to sustainable swine production when fed to gestating by lowering total gas production and being a source of volatile fatty acids.

Effect of cassava pulp treated with Lactobacillus casei TH14, urea, and molasses on gas kinetics, rumen fermentation, and degradability using the in vitro gas technique

This study focused on examining the gas dynamics, rumen fermentation, and digestibility of ensiled cassava pulp (CSVP) using Lactobacillus casei TH14, urea, and molasses in the context of a laboratory experiment. All data in this study were analyzed using treatments arranged in 2 × 2 × 2 factorial arrangements using a completely randomized design. The L.casei TH14 additive (L) was factor A. Factor B was the molasses additive (M), while factor C was urea (U). There was no interaction effect of L, U, and M on gas production, volatile fatty acid (VFA) content, pH value, or ammonia-nitrogen level (P<0.05). The interaction of L, U, and M influenced in vitro dry matter digestibility (IVDMD) at 12 h (P < 0.05), and the CSVP fermented with the additions of L, U, and M together (LUM) was higher than the additions of CON, M, U, UM, and L on IVDMD (P < 0.05). However, the IVDMD values of adding LUM were higher in the control group (CON), M, U, UM, and L additive groups (P < 0.05). There was an interaction effect of L, U, and M on the protozoal count at 8 h (P<0.05), which had a lower protozoal count in the control group. In addition, acetic acid and butyric acid concentrations at 4 h and 8 h (P<0.05) were increased during the fermentation of CSVP using L and M combinations. Furthermore, the combination of U and M enhanced (P<0.05) average acetic acid, propionic acid, and pH at 4 h and 8 h while reducing (P<0.05) the gas generation from the insoluble portion (b). It was suggested that utilizing L. casei TH14 together with urea and molasses can enhance nutrient contents and improve the in vitro dry matter digestibility of CSVP, although it has no effect on ruminal fermentation or gas production.

Fermentation of olive pulp by Limosilactobacillus fermentumNCU001464: physicochemical properties, biological activity and bioactive phenols

SummaryOlives, which are rich in bioactive compounds, are processed into beverages in China. We investigated the effect of fermentation by Limosilactobacillus fermentum NCU001464 on the physicochemical characteristics, biological activities and phenolic compounds of olive pulp. After fermentation for 48 h, pH and individual sugar content of olive pulp decreased. Lm. fermentum NCU001464 fermentation enhanced the hydroxyl radical scavenging activity and the inhibitory effect against xanthine oxidase (XO) of olive pulp. Total phenol content was not significantly different between olive pulp fermented for 0 and 48 h. However, the fermented olive phenol extract had a lower IC50 value than the unfermented phenol extract. Fluorescence spectroscopy results revealed that the olive phenol extract had a stronger XO inhibitory effect after fermentation. The dominant binding forces between olive phenols and XO were hydrogen bonds and van der Waals forces. There were 31 different phenolic compounds between the unfermented and fermented extracts.

Metabolomics and in-vitro bioactivities studies of fermented Musa paradisiaca pulp: A potential alpha-amylase inhibitor

The in-vitro synthesis of bio-compounds via fermentation is a promising route for bioactive molecules intended for disease control and management. Therefore, this study evaluated the effect of fermentation on the antioxidants, antihyperglycemic and anti-inflammatory properties and the resultant chemometric phytochemical profiles of unripe plantain fruits. The results revealed that Escherichia coli and Propionibacterium spp. are suspected as the key fermenters. The E coli showed negative results to the pathogenicity test; Propionibacterium appeared to be opportunistic. A significant increase in the total polyphenols and protein and decreased flavonoids was recorded in the phytochemical profile of the methanolic extract of the fermented unripe plantain pulp; however, the ascorbic acid content was not significantly altered. The 1H NMR fingerprint showed that there is a closely related chemical shift among the shorter fermentation time (days 2–6) and the unfermented, while the more extended fermentation periods (days 7–12) with enhanced bioactivities were closely related based on the chemometrics analyses. Furthermore, the UPLC-QTOF-MS analysis annotated the presence of bioactive compounds in the day-9 fermented sample: polyhydroxy glucose conjugates (3-Methoxy-4-hydroxyphenyl 6-O-(3,4,5-trihydroxybenzoyl)-beta-D-glucopyranoside), short chain peptide (leucyl-glycyl-glycine), amino acid derivatives (4-Aminophenylalanine, and N-Acetylhistidine), linear and cyclic fatty acid derivatives (palmitoyl putrescine, ricinoleic acid, phytosphingosine, gabalid, rubrenoic acid, 2-aminocyclopentanecarboxylic and cystodienioc acid). The synergistic effect of these newly formed compounds and the increase in the phenolic content of the day-9 fermented unripe plantain may account for its more potent antioxidant, anti-inflammatory and antihyperglycemic activity. Therefore, the products obtained from the day 9 fermentation of unripe plantain pulp may serve as potential nutraceutical agents against gastro-enteric sugar digestion and absorption and sugar-induced oxidative stress, inflammation and metabolic disease.

Lacticaseibacillus casei- and Bifidobacterium breve-fermented red pitaya promotes beneficial microbial proliferation in the colon.

Red pitaya has been demonstrated to strongly inhibit α-glucosidase activity; however, the impact of red pitaya fermentation by probiotic bacteria on α-glucosidase inhibition remains unclear. In this study, six strains of lactic acid bacteria (Lactiplantibacillus plantarum, Lacticaseibacillus rhamnosus, Lactobacillus bulgaricus, Lacticaseibacillus casei, Lactobacillus acidophilus and Streptococcus thermophilus) and one strain of Bifidobacterium breve were utilized for the fermentation of red pitaya pulp. The α-glucosidase and α-amylase inhibition rates of red pitaya pulp were significantly greater after fermentation by Bifidobacterium breve and Lacticaseibacillus casei than by the other abovementioned strains. The LC group exhibited an α-glucosidase inhibition rate of 99%, with an α-amylase inhibition rate of 89.91%. In contrast, the BB group exhibited an α-glucosidase inhibition rate of 95.28%, accompanied by an α-amylase inhibition rate of 95.28%. Moreover, red pitaya pulp fermented with Bifidobacterium breve and Lacticaseibacillus casei produced a notable quantity of oligosaccharides, which was more than three times greater than that in the other groups. Furthermore, 16S rRNA high-throughput sequencing analysis was conducted to assess alterations in the composition of the gut microbiota. This revealed an increase in the abundance of Lactobacillus and Faecalibacterium in the pulp fermented by Bifidobacterium breve and Lacticaseibacillus casei, whereas the abundance of Sutterella decreased. Further analysis at the species level revealed that Bifidobacterium longum, Faecalibacterium prausnitzii, and Lactobacillus zeae were the dominant strains present during colonic fermentation. These results indicate a beneficial health trend associated with probiotic bacterial fermentation of red pitaya pulp, which is highly important for the development of functional products.

β-glycosidase activity associated with the formation of aroma compounds in native non-Saccharomyces yeasts isolated from cocoa bean fermentation

Description of the subject. The use of non-Saccharomyces yeast for improving fine cocoa flavor perception has been poorly explored. Objectives. In this study, we investigated the contribution of the non-Saccharomyces yeasts producing β-glycosidase isolated from the spontaneous fermentation of cocoa to the quality and production of aromas during the alcoholic fermentation of a medium based on cocoa pulp. Method. The screening for β-glycosidase activity and molecular identification of non-Saccharomyces yeast isolates from Amazonian cocoa bean fermentations were performed on agar plates with esculin as a substrate and by 5.8S ITS rDNA sequence analysis, respectively. The yeasts producing β-glycosidases were used as a starter culture for alcoholic micro-fermentations of a medium based on cocoa pulp, incubated at 30 °C for 48 h. The quantification of organic acids, ethanol, and sugars was obtained by HPLC, and aroma compounds after cocoa pulp fermentation were identified by GC-FID and GC-MS. Results. Twenty-six non-Saccharomyces yeast isolates were selected by β-glycosidase activity, comprising species such as Pichia kudriavzevii (n = 15), Pichia sp. (n = 2), Pichia sporocuriosa (n = 1), Candida orthopsilosis (n = 3), Issatchenkia sp. (n = 1), I. orientalis (n = 1), and P. kudriavzevii/I. orientalis (n = 3). All yeast strains exhibited rapid growth in cocoa pulp medium, low ethanol production, high organic acid production, and higher glucose consume than fructose. These yeasts produced thirty different volatile compounds. The main groups included alcohols (3), esters (19), terpenes (4), phenols (2), organic acids (2), and aldehydes (3), with 67% of these having fruity and floral aromas. Pichia sp., P. kudriavzevii/I. orientalis and Issatchenckia sp. were the largest producers of volatile compounds. Notably, this study identified volatile compounds with fruity aromas previously unassociated with cocoa fermentations for the first time. Conclusions. These data demonstrate the potential of β-glycosidase-producing non-Saccharomyces yeasts to improve floral and fruity aromas, suggesting their promising use as a starter culture for cocoa fermentation.

One of the most important tasks in the production of high-quality red wines is the preservation of intense color, which exposed to atmospheric oxygen, can change and acquire garnet or brown shades. The intensity of color, its shades and stability are determined by the presence of phenolic compounds in wine, among which polymeric forms of polyphenols and anthocyanins have a rich color. In addition, the phenolic substances of red wines are represented by monomeric forms, catechins and procyanidins, etc. The impact of oxygen at various stages of the technological process of making wine can have both positive and negative effects on its chemical composition and organoleptic characteristics. The purpose of this research was to study the effect of oxygen introduced at various technological stages of the preparation of wine materials. As a result of studies of the indicators of the mass concentration of oxygen and phenolic substances that cause wine oxidation, as well as the organoleptic indicators of dry red wines (production samples) made from the Cabernet Sauvignon grape variety in various geographical zones of southern Russia, significant differences have been revealed due to agro-climatic conditions of growing grapes in a particular area, as well as the grape processing technology used at enterprises. Under the conditions of the laboratory and production unit «Micro wine-making», the possibility of using the microoxidation method both at the stage of must and pulp fermentation, and after the fermentation process (stabilization and clarification) for the purpose of deliberate oxidation of polyphenols, was shown. Based on the conducted studies, the optimal dosage of exogenous oxygen, which has a positive effect on the organoleptic characteristics of wine materials, is a concentration of 4-6 mg/dm3 both during microoxidation at the stage of must and pulp fermentation, and at the end of the fermentation of wine.

The effect of the innards silage of fish and coconut pulp fermentation on the biomass and population of silkworm (Tubifex tubifex)

Silkworm is a type of worm that can be found in waterways that contain organic matter. Silkworms are difficult to find especially during the rainy season and silkworms can carry parasites because their habitat is in dirty places. The purpose of this study was to determine the effect and effective dose of a combination of the innards silage of fish and coconut pulp fermentation on the biomass and population of silkworms. The research method used was the experimental method, data analysis in this study used Analysis of Variance (ANOVA) and continued with Duncan’s Multiple Distance test. The result showed application combination of the innards silage of fish and coconut pulp fermentation had a significant effect (p<0.05) on the biomass and population of silkworms. The highest biomass with a value of 16,296 g was found in treatment P3 (rice field mud+25% innards silage of fish +75% fermentation coconut pulp), while the highest population was obtained in treatment P3 with a total population of 1463 individuals.

Screening of probiotic Lactobacillus to reduce peanut allergy and with potential anti-allergic activity.

Peanut is a significant source of nutrition and a valuable oilseed crop. It is also a serious allergy source, which poses a threat to 1.1% of the population. This study aimed to screen lactic acid bacteria (LAB) with the capacity to alleviate peanut allergenicity and exhibit anti-allergic properties. The results show that LAB can make use of substances in peanuts to reduce the pH of peanut milk from 6.603 to 3.593-4.500 by acid production and that it can utilize the protein in peanuts to reduce the allergenic content (especially Ara h 1) and improve biological activity in peanut pulp. The content of Ara h 1 peanut-sensitizing protein was reduced by 74.65% after fermentation. The protein extracted from fermented peanut pulp is more readily digestible by gastrointestinal juices. The inhibitory activity assay of hyaluronidase (an enzyme with strong correlation to allergy) increased from 46.65% to a maximum of 90.57% to reveal that LAB fermentation of peanut pulp exhibited a robust anti-allergic response. The strains identified in this study exhibited the ability to mitigate peanut allergenicity partially and to possess potential anti-allergic properties. Lactobacillus plantarum P1 and Lactobacillus salivarius C24 were identified as the most promising strains and were selected for further research. © 2023 Society of Chemical Industry.

Effect of Lactobacillus acidophilus fermentation on bioaccessibility: The relationship between biotransformation and antioxidant activity of apple polyphenols based on metabolomics

Apple (Malus domestica) polyphenols are strong antioxidants. However, the functional properties of apple polyphenols are limited due to their considerable low digestibility. Therefore, in this study, the effects of fermentation of apple pulp by Lactobacillus acidophilus on its total polyphenol content and antioxidant activity were assessed using metabolomics. The results showed that the total polyphenol content and antioxidant activity of apple pulp fermented with L. acidophilus zrx02 were significantly higher than those in the unfermented apple pulp. Six different significantly changed metabolites, including caffeic acid, hypericin, p-coumaric acid, p-hydroxybenzoic acid, ferulic acid, and eugenic acid, were selected using ultra-performance liquid chromatography-tandem mass spectrometry and a metabolomics analysis. A cluster analysis revealed that one group contained caffeic acid, while the other one contained ferulic acid, p-hydroxybenzoic acid, p-coumaric acid, hypericin, and syringic acid. Ten metabolic pathways with significant differences were screened using the hypergeometric method. Overall, the results suggest that after fermentation by L. acidophilus zrx02, apple polyphenols can be biotransformed into small molecules that are easily digested and absorbed, and they have improved antioxidant activity. It is a raw material source of antioxidant-rich active substances that merits full utilization.

Flour made from cacao-soybean tempeh fermented using soybean tempeh inoculum

Raw cacao beans are non-premium cacao without cacao pulp fermentation. This raw bean still contains enough protein and polyphenol contents for functional food. In this study, cacao bean was used to substitute soybeans in tempeh fermentation. The soybean-cacao tempeh, called tekao tempeh, was then processed to make tekao flour. The aim of this research was to evaluate the characteristics of the flour made from soybean:cacao tempeh. The tekao flour was made from tempeh with a soybean:cacao proportion of 70:30. The tekao flour had an antioxidant activity of 48.1% and a soluble protein content of 444.7 mg.L-1. The water- and oil-holding capacities of tekao flour were 240.4% and 107.2%, respectively. The bulk density, angle of repose, and particle size were 0.427 mg.L-1, 44.9º, and 546 mm, respectively. The water content and water activity were 7.3% and 0.55% w/w, respectively. Based on the flour characteristics, tekao flour made from 70:30 of soybean:cacao bean tempeh has the potential to be functional food considering its antioxidant properties and other characteristics.

Probiotic fermentation enhances bioaccessibility of lycopene, polyphenols and antioxidant capacity of guava fruit (Psidium guajava L)

This study investigated bio-accessibility of lycopene and total polyphenols using simulated gastrointestinal digestion, in guava pulp (Psidium guajava L) pulp fermented with two probiotic LAB strains Lactococcus lactis subsp lactis and Lactobacillus casei. Physicochemical parameters, and antioxidant contents were also evaluated. Results indicated that LAB fermentation reduced the pH of pulp from 3.8 to 2.6, with increase of TA and reduced the TSS content of the pulp to 13.06 and 12.67◦Bx, respectively after 8 h of fermentation. Compositional analysis of fermented guava pulps indicated decrease in carbohydrates (29.6%), lipids (4.6%), moisture (19.7%) and slight increase in proteins (0.7%). The total poly phenolics (701mg/GAE/g) and DPPH radical scavenging activity (81%) was significantly (p < 0.05) higher in comparison to unfermented counterparts while Vitamin C content was not affected. Guava pulp fermented by both strains improved overall sensorial acceptability with no notable differences in sensory scores after storage under refrigerated conditions for up to 7 days. Simulated gastrointestinal digestion studies revealed that pulp fermentation substantially improved the bioaccessibility of total phenols by 70% and 63% and lycopene content by 13.33 and 12.24% in L. lactis and L. casei fermented pulp in comparison to control (unfermented pulp). DPPH free radical scavenging activities of the dialyzable fractions of fermented guava pulp were 71.3 and 69.3% respectively. Overall, the results of this study were encouraging and indicate that fermentation of guava pulp with LAB can potentially enhance bioactives and their subsequent bioaccessibility implying beneficial impacts upon consumption.

Valorisation of Wasted Immature Tomato to Innovative Fermented Functional Foods

In this study, the lactic fermentation of immature tomatoes as a tool for food ingredient production was evaluated as a circular economy-oriented alternative for valorising industrial tomatoes that are unsuitable for processing and which have wasted away in large quantities in the field. Two lactic acid bacteria (LAB) were assessed as starter cultures in an immature tomato pulp fermentation to produce functional food ingredients with probiotic potential. The first trial evaluated the probiotic character of Lactiplantibacillus plantarum (LAB97, isolated from immature tomato microbiota) and Weissella paramesenteroides (C1090, from the INIAV collection) through in vitro gastrointestinal digestion simulation. The results showed that LAB97 and C1090 met the probiotic potential viability criterion by maintaining 6 log10 CFU/mL counts after in vitro simulation. The second trial assessed the LAB starters' fermentative ability. Partially decontaminated (110 °C/2 min) immature tomato pulp was used to prepare the individually inoculated samples (Id: LAB97 and C1090). Non-inoculated samples, both with and without thermal treatment (Id: CTR-TT and CTR-NTT, respectively), were prepared as the controls. Fermentation was undertaken (25 °C, 100 rpm) for 14 days. Throughout storage (0, 24, 48, 72 h, 7, and 14 days), all the samples were tested for LAB and Y&M counts, titratable acidity (TA), solid soluble content (SSC), total phenolic content (TPC), antioxidant capacity (AOx), as well as for organic acids and phenolic profiles, and CIELab colour and sensory evaluation (14th day). The LAB growth reached ca. 9 log10 CFU/mL for all samples after 72 h. The LAB97 samples had an earlier and higher acidification rate than the remaining ones, and they were highly correlated to lactic acid increments. The inoculated samples showed a faster and higher decrease rate in their SSC levels when compared to the controls. A nearly two-fold increase (p < 0.05) during the fermentation, over time, was observed in all samples' AOx and TPC (p < 0.05, r = 0.93; similar pattern). The LAB97 samples obtained the best sensory acceptance for flavour and overall appreciation scores when compared to the others. In conclusion, the L. plantarum LAB97 starter culture was selected as a novel probiotic candidate to obtain a potential probiotic ingredient from immature tomato fruits.

Evaluation of ammonia pretreatment of four fibrous biowastes and its effect on black soldier fly larvae rearing performance.

Biowaste treatment with black soldier fly larvae (BSFL, Hermetia illucens L.) can promote a more sustainable food system by reusing nutrients that would otherwise be wasted. However, many agri-food wastes and byproducts are typically high in lignocellulosic fibers (i.e., cellulose, hemicellulose, and lignin), making it resistant to efficient larval and/or microbial degradation. Ammonia pretreatment could be used to partially degrade lignocellulose, making the biowaste more easily degradable by the larvae and/or microorganisms. This study evaluated ammonia pretreatment for lignocellulose degradation and its effect on BSFL performance on four fibrous biowastes: brewers spent grain, cow manure, oat pulp, and grass clippings. First, the optimal ammonia dose (1% or 5% dry mass) and pretreatment time (three or seven days) were assessed by measuring fibers after treatment and further examined using Fourier transform infrared spectroscopy (FTIR) spectra and scanning electron microscopy (SEM) images. Second, BSFL rearing performance on ammonia-pretreated substrates was assessed with a 9-day feeding experiment. Three-day pretreatment with 5% ammonia was chosen as it decreased the total fiber content by 8-23% for all substrates except cow manure. Contrary to expectations, ammonia pretreatment with all substates decreased BSFL rearing performance metrics by more than half compared to the untreated control. Follow-up experiments suggested that ammonia pretreatment had a dose-dependent toxicity to BSFL. Interestingly, three-day fermentation of cow manure and oat pulp increased bioconversion rate by 25-31%. This study shows that ammonia pretreatment is not suitable before BSFL rearing. Ammonia toxicity to BSFL and other pretreatments, such as fermentation, should be further studied.

Bioconversion of fermented tofu waste into high protein alternative feed using black soldier fly (Hermetia illucens)

This study determines the life cycle and nutritional content of Black Soldier Fly (Hermetia illucens) larvae cultured on fermented tofu waste. The materials used in the study were tofu pulp, fermented tofu pulp, tempeh yeast, and the eggs of H. illucens fly. This study used a Completely Randomized Design with four treatments with five replications. The treatments were T0: tofu pulp (0% yeast tempeh); T1: fermented tofu pulp (0.25 % yeast tempeh); T2: fermented tofu pulp (0.5% tempeh yeast), and T3: fermented tofu pulp (0.75 % tempeh yeast). The variables measured included: the life cycle, dry matter conversion, dry matter extraction, and proximate composition of H. illucens larvae. The collected data were processed using variance analysis. The results showed that the H. illucens fly's life cycle follows: from laying eggs to hatching is four days, and growing into adult larvae takes 26-28 days. The dry matter conversion was 11.9 to 22.1%, and dry matter extraction was 55.8 to 67.5%. There was no effect (p&gt;0.05) of adding tempeh yeast on crude protein, ether extract, crude fibre, and ash content. The result showed that the conversion and extraction of dry matter media were higher in the more media. The fermentation of tofu pulp did not increase the nutritional value of H. illucens larvae.

Exploring the antioxidant potential of fermented turmeric pulp: effect of extraction methods and microencapsulation

Curcumin is one of the major constituents of turmeric which possess multifarious therapeutic properties. However, owing of its limited solubility in water its bioavailability is poor. Thus, attempts have been made to increase the solubility of curcumin by fermenting turmeric followed by extraction and encapsulation. Lactobacillus fermentum was used for the fermentation of raw turmeric pulp. The influence of Lactobacillus fermentation and different extraction methods (conventional solvent extraction (CSE), ultrasound (UAE) and microwave-assisted extraction (MAE)) on total phenolic content (TPC), flavonoid content, antioxidant activity and curcumin content were analyzed. Further, to increase the stability of extract, different concentrations of maltodextrin were used to microencapsulate the curcumin extract. The results showed that, Lactobacillus fermentation increased the TPC and antioxidant activity from 5.59 ± 0.20 to 6.27 ± 0.28 mg GAE/g and 67.49 ± 1.51 to 79.00 ± 2.20%, respectively. MAE showed highest TPC (7.88 ± 0.08 mg GAE/g), antioxidant activity (94 ± 1.57%) and curcumin content (0.866 ± 0.05 mg/g) followed by UAE and CSE. Maximum yield of curcumin extract was observed in MAE, UAE and CSE as 59.93, 47.09 and 29.44% respectively, higher than non-fermented turmeric pulp. Maltodextrin percentage showed a significant influence on bio-functional properties of encapsulated powder. However, 20% maltodextrin exhibited better bio-functional properties as compared to other concentrations.

A Tamarind Local Variety from Garoua, Cameroon: Physicochemical Characterization, Fruit Pulp Fermentation and Extraction of Tartaric Acid from the Fruit Pulp Winery Waste

Objective: Tamarind is known for the tart taste that is characteristic of Tartaric acid. The fruit pulp is in high demand in both the domestic and industrial settings due to its high food value. It contains fatty acids, vitamins, roughage, phytosterols and many other phytochemicals necessary for good health. To the best of our knowledge, very little has been reported on the processing of this nutritional fruit and the results reported so far show variability as a function of the botanical origin of the plant. No literature exists on the Tamarind variety from Cameroon and no study combining wine production and extraction of Tartaric acid from the waste residue has so far been reported. We are taking this advantage to explore wine fermentation from Tamarind fruit pulp by focusing on the effects of different parameters such as time of treatment for juice extraction, yeast inoculate for wine fermentation and secondary fermentation on wine quality, and to extract Tartaric acid from the winery solid waste residue. Methods: The main fermentation was done at 2°C in 13d and 1w secondary fermentation was done in 1 week. The wine was characterized for alcoholic content, pH, titratable acidity, soluble dry matter and consumer acceptability. The winery solid waste residue (potassium bitartrate precipitate) was used to extract crystalline L-Tartaric acid which was characterized by Fourier transform infrared spectroscopy, melting point and crystallinity by powder X-ray diffraction. Results: The Tamarind pulp wine produced was of acceptable quality. It was clear, sweet, sparkling, smooth and well-flavored. The drink had a pH of 3.04 and an alcohol content of 16%. The Tartaric acid was crystalline, and it reflected all characteristic functional groups of Tartaric acid, with a melting point of 189.8-196.4°C (laboratory grade). Conclusion: It is very possible to couple Tamarind fruit pulp wine production with chemical synthesis of pure crystalline Tartaric acid using solid winery waste from Tamarind fruit pulp. The method used in this study is simple, straightforward, ecofriendly and cost effective.

Pengaruh Penggunaan EM4 terhadap fermentasi Ampas Serai Wangi Terhadap Kandungan Bahan Kering, Kadar Abu Dan Bahan Organik

This study aimed to determine the effect of fermented citronella pulp using effective microorganisms (em4) using rice bran as a carbohydrate source on dry matter content, ash content, and organic matter. In this study, 400 grams of EM4 were used, 3680 grams of citronella pulp, and 320 grams of rice bran as a carbohydrate source. Completely randomized design 4 levels adding the rice bran with 4 replication used in this research. There were: A (5%), B (7%), C (9%), and D (11%). The variables observed in this study were dry matter content, ash content, and organic matter. The results of this study showed that the fermentation of citronella pulp with EM4 using rice bran as carbohydrates on dry matter content, ash content and organic matter gave no significant effect (P&gt; 0.05). Giving rice bran as a carbohydrate source as much as 5% (Treatment A) in the process of making citronella dregs fermentation tends to be the best level (more cost-effective) compared to 7% (treatment B), 9% (treatment C) and 11% (treatment D) .

Evaluating of The Addition Coconut Pulp (Cocos Nucifera L) Fermentation in Feed and The Effect on Percentage of Carcass Broiler Chicken

Broilers are chickens with high meat production. The productivity of broiler is seen from the percentage of carcass and abdominal fat. This study aims to determine the effect of giving fermented coconut pulp (Cocos nucifera L) on the percentage of carcass and abdominal fat of broilers. This study used a completely randomized design experimental method (CRD) consisting of 6 treatments and 6 replications so that the total observations were 36 units of observation. Each treatment had P1: 100% commercial feed without fermented coconut dregs, P2: 90% commercial feed + 10% fermented coconut dregs, P3: 80% commercial feed + 20% fermented coconut dregs, P4: 70% commercial feed + 30 % fermented coconut dregs, P5: 60% commercial feed + 40% fermented coconut dregs, P6 : 50% commercial feed + 50% fermented coconut dregs. The data were analyzed using the analysis of variance which was preceded by the battle test, followed by the Tukey test using the SPSS program. The analysis of variance showed significantly different results (P0.05) on the percentage of carcass and abdominal fat of the broiler. Tukey's follow-up test on the carcass showed a significant difference (P0.05) and there was no significant difference in fat (P0.05). It can be concluded that the supplementary feed of fermented coconut pulp can be used 40% as additional feed to increase the carcass percentage but not reduce the broiler abdominal fat percentage.
