Digitization of the Production Process: An Example of The Use of RFID Technologies For Modern Enterprises

The purpose of the study is to improve the efficiency of the production process of engineering enterprises. The object of study is enterprise engineering. The scientific task is to determine the most optimal RFID technologies to improve the accuracy and efficiency of the production process of engineering enterprises. The technique involves the use of the Saaty method of hierarchies and pairwise comparison. As a result, the most optimal and effective RFID technologies were selected to improve the production process of engineering enterprises through hierarchical ordering of the most significant RFID technologies that affect the production process of engineering enterprises. One limitation of this study is its exclusive focus on RFID technologies, which may not take into account the potential of other technology solutions to improve manufacturing processes. In addition, the use of Saaty's method of hierarchies and even comparison may introduce subjectivity into the selection of optimal technologies, since the results depend on expert assessments. Prospects for further research may include comparison of RFID with other modern technologies that are being implemented in engineering enterprises to ensure greater objectivity and completeness of the analysis. Also, an important aspect of future research could be a detailed analysis of the impact of RFID implementation on the economic efficiency of production and employee workload.

Quality of hatching eggs and young quails of different breeds depending on the age of the birds

The most important link in the production technology of poultry products is the production of high-quality hatching eggs. Assessing egg quality is the fi rst necessary step for successful brooding. In order to realize the maximum genetic productivity potential of any breed, it is necessary to obtain high-quality young stock for rearing. In order to do this, it is also necessary to have information about the quality of hatching eggs, the characteristics of the embryonic development of quails and the requirements for the quality of day-old quails, both in general and separately for each breed. These issues have been little studied in quail breeds of meat and meat-egg productivity. The purpose of the research was to study the brooding traits of eggs and the quality of day-old young quails of meat and meat-egg breeds at the beginning, middle and end of the productive period. Research was carried out at the Siberian Poultry Research Institute on eggs and young quails of Omsk and Radonezh breeds of meat-egg and meat productivity. It has been established that the age of the quails aff ected the quality of hatching quail eggs, and accordingly the results of brooding the quality of day-old young quails, and further productivity. In order to improve the quality of the herd and the economic effi ciency of production, eggs obtained from laying quails aged 126–238 days should be used for brooding. The hatchability of eggs at this age was higher in Omsk breed by 2,56–8,14 abs.%, in the Radonezh breed by 2,39–8,73 abs.%. The hatching was also higher for breeds Omsk by 3,55–8,43 abs.%, Radonezh by 2,74–8,89 abs.%. Quails from small eggs obtained from a young laying quails grow more intensively. The livability of young quails was higher among breeds Omsk by 2–4 abs.%, Radonezh by 4 abs.%

ОПТИМИЗАЦИЯ СИСТЕМЫ ПРОТИВОЭРОЗИОННЫХ МЕРОПРИЯ-ТИЙ В ООО «АГРОФИРМА «ЧЕРНОВСКОЕ» НИЖЕГОРОДСКОЙ ОБ-ЛАСТИ

In modern conditions, it becomes necessary to improve a complex system of anti-erosion measures in connection with the development of erosion processes that have arisen as a result of the intensification and commercialization of agricultural production. According to various estimates, in the Nizhniy Novgorod region, the area of eroded lands ranges from 141.02 thousand hectares to 667.6 thousand hectares or from 5.2% to 24.7% of the area of agricultural land [1, 2, 3]. The main negative as-pect of the manifestation of water erosion on arable soils is a decrease in soil fertility and crop yields. It should be noted that erosion processes in the region are developing unevenly. The development of water erosion of the Right Bank is facilitated by the geological structure of the area, the hilly–rocky type of relief and the high ploughing of the territory. The article presents the results of solving the economic and mathematical problem of planning anti-erosion measures in an agricultural enterprise located in the Right-bank part of the Nizhniy Novgorod region. It is shown that due to the implementation of the project of anti-erosion organization of the territory, soil fertility will significantly increase, and the net income from increasing the economic efficiency of production in the agricultural firm will amount to 212.6 million rubles, which is 41% higher than income without carrying out a complex of anti-erosion measures.

Design of elements of specialized technological equipment for finishing processing of parts

This article is devoted to solving the current problem of use of the polyester materials application for the synthesis of specialized technological finishing equipment elements that usually used by enterprises for the repair and maintenance of mining equipment. The article discusses the possibility of the polyester materials application when creating equipment elements. The equipment’s parts are created by using additive technologies, in which the creation of the part occurs by sequential application of material layers. The use of polyester materials makes it possible to reduce labor intensity, increase the economic efficiency of production and ensure compliance with environmental standards both during the production process and during subsequent processing. Based on the modeling results, an analysis of the strength characteristics of the specialized technological equipment reservoirs made of steel 3 (ISO – E 235-C, Fe 360-C) and polyethylene terephthalate (PET plastic) was carried out. The possibility of application of the PET plastic as an analogue material for the reservoir manufacture with the ensuring of the necessary strength characteristics has been established.

Evaluation of the yield of highbush blueberry (Vaccinium corymbosum L.) cultivars and their economic efficiency on commodity plantations in Poland in the years 2020–2022

The selection of suitable highbush blueberry cultivars is a prerequisite for obtaining an optimal yield that determines the profitability of production and competitiveness on the market. The study assessed the production efficiency of highbush blueberry cultivars concerning the fruiting period, taking into account the size of the plantation, and evaluated the economic efficiency of the fruiting period. Production efficiency was assessed based on yields obtained according to data from 15 production plantations from all over Poland in 2020–2022. Economic efficiency was determined by analysing the production value, the amount of costs, and the Gross Margin. It was shown that yields of highbush blueberry cultivars differed depending on the ripening time. Generally, the highest yields were obtained in cultivating varieties with middle ripening time. The analyses show that the most prolific varieties in the three-year study, starting from the early to late ones, were Spartan and Duke, Bluecrop, Chandler, Aurora and Nelson. The cultivation of highbush blueberries was profitable in all the analysed plantation groups in the analysed years, although the level of economic production efficiency differed depending on the fruiting period of the cultivated varieties.

ЦИФРОВЫЕ ТЕХНОЛОГИИ УПРАВЛЕНИЯ БИОТЕХНОЛОГИЧЕСКИМИ ПРОЦЕССАМИ НА ОСНОВЕ КОГНИТИВНОГО МОДЕЛИРОВАНИЯ (НА ПРИМЕРЕ ЗАЩИТЫ НАСАЖДЕНИЙ ЯБЛОНИ ОТ ЯБЛОННОЙ ПЛОДОЖОРКИ)

The necessity of developing digital technologies for managing biotechnological processes in long-term agrocenoses based on cognitive modeling is substantiated. Methodological approaches to the construction of effective management tools for biotechnological processes based on the logical concept of the triad (organization, management, efficiency) in a dynamic cycle have been developed. An algorithm for the formation of digital technologies for managing biotechnological processes is proposed, including: the formation of multifunctional databases and data banks and digital applications, cognitive modeling of system relationships and the formation of cognitive maps, the development of a system architecture of a prototype program, approbation and verification of the adequacy of a digital application. An algorithm has been developed for constructing cognitive models for the formation of management tools for biotechnological processes in long-term agrocenoses, including clarification of goal setting and local tasks; the distribution of functional relationships between the structural components of the agrocenosis using methods of correlation and regression analysis; economic and statistical characteristics of systemic relationships in reproductive processes by functional areas of influence using correlation matrices and discriminant analysis; verification of the results of optimization of parameters of functional stability and technological and economic efficiency of production and technological processes. A cognitive process management map is constructed using the example of protecting fruit plantations from pests. A flowchart of an algorithm for building a digital control program for biotechnological processes for protecting fruit plantations is proposed using the example of an apple moth, which provides for the development of a technology for importing data from a weather station to determine the sum of effective temperatures and determine the start of processing depending on the stage of development of the pest; neural network technologies for detecting a harmful object; a module for automated selection of a protection system. ИССЛЕДОВАНИЕ КАЧЕСТВА ТВОРОЖНОЙ МАССЫ, ОБОГАЩЕННОЙ РАСТИТЕЛЬНЫМ СЫРЬЕМ

The purpose of research is to study the quality indicators of a fermented milk product – curd mass, in the production of which local raw materials are used - dried rose hips of the Desertnyj variety. Objectives: to study the quality of manufactured samples of curd mass enriched with plant raw materials in comparison with the control; to determine the organoleptic and bacteriological characteristics of all samples; to study the physico-chemical indicators of the curd mass and calculate the economic efficiency of the research carried out. The experimental part of the work was carried out at the Krasnoyarsk State Agrarian University. 4 samples of curd mass were studied, the control was produced according to the generally accepted technology GOST 31680-2012, in experimental 1, 2 % of the main raw material was replaced with crushed rose hips, in experimental samples 2 and 3 – by 4 and 6 %, respectively. In the studied samples, the curd mass had a dense consistency, the color in the control and experimental sample 1 did not change, in experimental 2 and 3 it acquired a pinkish tint. With an increase in the amount of crushed rose hips in the product recipe, all test samples acquired a sweet and sour taste, most pronounced in test sample 3. The results of physical and chemical studies showed a decrease of 0.7 % in the mass fraction of protein in sample 3 and moisture in samples 2 and 3 by 1 %, the mass fraction of fat in sample 3 decreased by 2 % compared to the control sample. The mass fraction of sucrose increased in all test samples, in samples 2 and 3 – by 2.8 %, in test sample 1 – by 2 %. The total acidity and temperature of the product upon release from the plant remained unchanged in all samples. Enrichment of the curd mass with crushed rose hips did not affect the microbiological parameters of the studied samples, and analysis of data on the economic efficiency of production indicates a higher profitability of curd mass production with the replacement of 4 % of the main raw material with rose hips.

The issues of identification of environmental hazards when implementing the concept of the involvement of poor metal-containing raw materials and tailings from ore processing through the application of a new leaching technology with a detailed version of heap leaching on the earth have been considered. The methodology of identification of the environmental consequences of the implementation of the technology of deep processing of non-conventional mineral raw materials considering the impact of mineral waste on the environment of the field development region has been formulated. An environmental component of the complex ecological and economic effect comprised of the consistently implemented stages of the existence of the enterprise has been considered. The main factors of negative environmental impact received a quantitative assessment; the territories adjacent to the enterprise have been ranked by the degree of the anthropogenic impact. The options to determine the extent of damage caused by the contamination of ecosystems with heavy metals have been proposed. Models to determine the environmental damage caused by industrial effluents as the main transporting medium and the efficiency of utilization of substandard raw materials based on the profit criterion have been formulated. The mechanism of removal of reagents and solutions to the environment by airflows has been specified. An approximate calculation of parameters of the environmental contamination for ore leaching of ore raw materials in the Sadonskoye deposit has been provided. It has been demonstrated that the chemical contamination of soils is prioritized when determining the environmental hazard and the hazard for the enterprise employees. It has been proved that the combined ecological and economic model of assessment of the efficiency of utilization of substandard raw materials joins ecological and economic aspects within a single natural and anthropogenic system, whereas the ecological and economic efficiency of production is a function of integrating methods of field development, including the application of a safety criterion for ecosystems of the environment. The study results can be used for the adjustment to the legislation on mining in the Russian Federation.

More than 30 types of raw materials are used in the production of portland cement, which are divided into four main categories: calcium, silica, alumina, iron. Cement dust is toxic and can cause allergies, impaired lung function, pneumoconiosis, lung, stomach and colon cancer. In addition, in winter period, antifreeze additives consisting of various chemicals are added to the concrete mixture. Human exposure to these chemicals occurs through the direct contact of employees with a hazardous substance or indirect contact through the air. As a result, the skin, eyes and respiratory tract may be irritated or damaged. Long-term exposure may cause dermatitis or asthma. In this regard, a concrete plant automation system is considered, built on the basis of modern technical solutions, hardware technologies and software, which allows improving the working conditions of the concrete plant employees. Automation of the technological processes at a concrete plant helps to increase production efficiency and minimize the risks of negative impacts on human health by reducing the number of employees who have direct contact with the cement dust and other chemicals. Considering the parameters: cost savings, return on investment, labor productivity, costs, etc., the economic efficiency of production and measures to improve working conditions and safety was assessed. Efficiency calculation showed that labor productivity increases by 50 %. Automation of the processes allowed, without changingthe production volume, to reduce the number of employees at the site in question by 4 people, ease the work of operators by eliminating the manual control panel, and improve air quality through the installation of carbon filters. With a total one-time cost of 11 200 000 rubles for upgrading equipment, purchasing software and installing carbon filters, the payback period will be 3 years, which proves the high efficiency of capital investments in automating the production processes of a concrete plant.

INCREASING THE ECONOMIC EFFICIENCY OF TEXTILE INDUSTRY ENTERPRISES THROUGH DIGITAL TECHNOLOGIES

The article describes ways to increase the economic efficiency of textile industry enterprises through digital technologies. The main goal of this research is to increase the organizational and economic efficiency of production in textile industry enterprises with digital technologies. Indicators of economic efficiency of industrial enterprises and the indicators representing the factors influencing it, as well as methods of their evaluation, are widely covered. The scientific significance of the results of the research, conclusions and recommendations are drawn up, digital technologies and conclusions are given in the industrial enterprises, in particular, in the enterprises of the textile industry. In the study, it is explained that the prospects for the development of production organization based on the use of cluster system and digital technologies, the improvement of the economic activities of industrial enterprises based on the obtained results, and the possibility of using them in scientific research work are explained. The practical significance of the research results, ways to increase production efficiency in textile enterprises of Andijan region through digital technologies were considered.

ПРЕВЕНТИВНАЯ СЕБЕСТОИМОСТЬ МОЛОКА – ТЕОРЕТИЧЕСКИЙ И ПРАКТИЧЕСКИЙ ОРИЕНТИР ПОВЫШЕНИЯ ФИНАНСОВОЙ УСТОЙЧИВОСТИ СЕЛЬСКОХОЗЯЙСТВЕННЫХ ОРГАНИЗАЦИЙ РЕСПУБЛИКИ ТАТАРСТАН

In the current state programs “Development of agriculture and regulation of agricultural products, raw materials and food markets”, both in the Russian Federation and in the Republic of Tatarstan, increasing the financial stability of agricultural producers is identified as one of the priority goals. The achievement of this goal is ensured by the economic efficiency of production, in particular, the proper level of profitability of products sold. In turn, this indicator functionally depends on the design and implementation of its preventive cost. The concept of “preventive cost” is exclusively the invention of the author of this work, arising from the internationally recognized theory of production cost management “Target costing”, according to which a commodity producer designs the quantitative value of the cost of production based on the prevailing market prices for it in order to obtain the expected profit. As a result of the conducted research, it was found that there is a linear correlation between the productivity of cows and the cost of milk, as well as between the latter and the current liquidity ratio of agricultural organizations. For agricultural organizations of the Republic of Tatarstan, which in 2022 produced 1372 thousand tons of milk and spent about 34 billion rubles on it, with an average cost of 1 kg of milk sold of 2566 rubles, the issue of working with the preventive cost of these products is very relevant. Since the average selling price was 3372 rubles, and the profitability was 31.4%. At the same time, in the surveyed twenty districts selected for various agricultural zones of the Republic of Tatarstan, 30% of agricultural organizations have an average milk profitability of 45.8%. In order to achieve the specified profitability at least at the first stage, the preventive cost of milk should be within 2313.2 rubles.

Green strategies in marketing product policy of manufactures: environmental and ethical aspects

The aim of the article. The problem of maintaining ecology at an appropriate level is one of the main ones in the world. For a long time, production used the resources of the planet without taking into account their limitations and the impossibility of rapid recovery. In addition, the desire to reduce the cost has influenced the spread of the use of polyethylene for packaging, plastic in production, pesticides in agriculture, and harmful emissions into the atmosphere. The industrial complex has the greatest impact on the environment. Thus, on the one hand is the economic efficiency of production with the aim of reducing the cost of goods and obtaining high profits, on the other - the future of man and the planet. The relevance of the problem of implementing green strategies in the economy of countries and production has influenced the growth of research by scientists in this direction in recent years. However, it is necessary to determine the influence of the "green" course on the formation of the marketing product policy of enterprises, and, in particular, to take into account the social and ethical direction. The aim of the article is the study of ecological, fair and ethical aspects in the implementation of green strategies in the marketing product policy of manufacturers. The results of the analyses. Ukraine announced its accession to the European Green Course in August 2020 and set the goal of achieving climate neutrality by 2060. This means, in part, the reduction of greenhouse gas emissions, the gradual abandonment of fossil fuels, the transition to renewable energy sources, the development of energy-efficient technologies, increasing organic agriculture. First, it requires changes in the field of electricity, as the most carbon-intensive sector of the economy. And also in industry, transport, agriculture. Modernization, use of modern technologies is needed. The "European Green Deal" is aimed not only at improving ecology, but also at taking into account the needs of business and economic sectors, their competitiveness and profitability, and the needs of society in ensuring fair welfare and development, prosperity. After all, these areas are interconnected, and achieving success in one of them is impossible without the development of others. Solving environmental problems should not affect the bankruptcy of business systems, industry, or increase unemployment. On the contrary, the problems should be solved comprehensively. Adoption of the "green course" of economic development requires appropriate transformations from business. It is impossible to completely avoid the impact on the environment, but it must be reduced at all stages of the "quality chain" (supplier organizations, transport organizations, product manufacturers, intermediaries, and even, in this case, the responsibility of consumers for ecological consumption and the necessary disposal of products). The environmental requirements of organizations in each link, as well as the needs of end consumers, must be determined. The use of the green strategy goes hand in hand with ensuring the competitiveness of goods and services. The business will have to look for the most effective solutions for the maximum satisfaction of consumer needs with ecologically oriented production. So that it does not become a compromise when the goals of each party are not fully achieved, marketing should be aimed at informing target audiences about the benefits that a product produced in an enterprise with a green development strategy brings to them. This can be created by one of the competitive advantages of the product. Conclusions and direction for further research. Choosing green production development strategies is already a necessity. First, it is a necessary contribution to the restoration of the ecosystem and the future of society. Secondly, it is a significant element of the competitiveness of products and enterprises. Business can play an important role in the development of society and the solution of today's problems, including environmental ones. As research in the global market shows, this is exactly what consumers expect from businesses. Implementation of the green course carries not only responsibilities, but also opportunities. This is the entry into new markets with ecological products, the development of organic agriculture, the introduction of the latest technologies, the improvement of the image of a socially responsible enterprise, the growth of its competitiveness and the competitiveness of products, brands that are produced according to the principle of green strategies.

Reasoning of the Business Idea for the Development and Implementation of the Project “Street Food”

Topicality. Street food is one of popular segments of modern restaurant industry establishments, which has become widespread in big cities and towns, especially in the places where the business environment is highly developed. Street food is the most affordable source of nutrients for people to eat outside. It is an optimal decision, especially popular among young people, especially students and pupils. It is network street food that offers them guaranteed quality nutrition. The development of methodology and implementation of the “Technology as Business” model on the example of the introduction of grilled sandwich (panini) technology for food trucks will allow the business idea of the project “Street Food” to be realized. The aim of the article is to ground the business idea of developing and selling street food products for mobile food outlets using the example of grilled sandwiches (panini). Research methods of the technological component are analytical and standard. To substantiate the feasibility of commercializing innovative technology in the early stages, the methods of critical analysis and generalization of information from scientific publications on the assessment of the commercialization of intellectual property, the effectiveness of business projects were used. Results. The expediency of developing and implementing sandwich products on the example of grilled sandwich (panini) technology for the street food format was proved. The development of the recipe composition and technological process of production allowed to develop an assortment of grilled sandwiches (panini), identify competitive advantages and evaluate the development by aggregate indicators in accordance with the model “Technology as Business”. The rationality of commercializing the innovative technology at the early stages of its implementation is substantiated, taking into account the indicators of economic efficiency of production, use of investments, and adaptation of technology in conditions of a particular production. Conclusions and discussion. The article presented the business idea grounding of the project “Street Food” development and implementation on the example of the introduction of grilled sandwich (panini) technology for mobile food outlets (food trucks). The expediency of commercializing innovative technology in the early stages of its implementation in terms of economic efficiency was established.

Improvement of pricing on the market of organic products

Modern organic agriculture is increasingly gaining momentum against the background of worsening economic, social and environmental problems. In recent years, interest in environmentally friendly production has been growing in many areas. In particular, agriculture in this direction satisfies the needs of mankind for quality products and has a positive effect on restoring the natural fertility of the soil, which contributes to the maintenance of the natural balance. The purpose of this study is to analyze the pricing process on the market of organic products and the justification of recommendations for improving the pricing methodology and determining the equivalent price for organic agricultural products. The work uses: dialectical method, methods of systematic and comparative analysis, economic-statistical and graphic methods, methods of computer information processing. It has been established that the leaders of organic agriculture are countries that have formed systemically influential supranational institutions and societies. When comparing the economic efficiency of production, it was determined that an agricultural enterprise with the production of organic products receives less gross production, net income and profit per 1 ha of farmland than conventional ones. The price analysis of the organic market in Ukraine revealed the need to modify generally accepted approach to pricing. The proposed equivalent price can be a guideline for improving the price policy in organic production.

How technical change has boosted fish aggregation device productivity in the Indian Ocean tuna fishery

Excess harvesting power can threaten the long-term sustainability of fisheries. Indicators of excess harvesting capacity must include input–output-based estimates of economic production efficiency. The increasing use of drifting Fish-Aggregating-Devices (DFADs) has boosted fishing productivity in high-seas tuna fisheries, perhaps beyond the biological capacity of the stocks, and is an object of global debate. We carried out a Data Envelopment Analysis (DEA) of relative changes in production efficiencies of the French purse-seine fleet targeting tropical tuna in the western Indian Ocean using two fishing strategies: (1) on floating objects (FOB) and (2) free swimming schools (FSC) using tuna catch and effort data spanning 1992–2019. We show that FOB fishing evolved dramatically through time with an estimated change of 3.6%yr−1 (8.0%yr−1 2007–2019), in contrast to 2.1%yr−1 for FSC. While the efficiency level in combining and using inputs has barely changed for FOB fishing, it means that all the growth in productivity comes from technical change for this strategy. The dynamics is different for the FSC with a mixture of innovation and higher efficiency. Immediate plans to improve input-based management in this region are needed to prevent further risks of overfishing to yellowfin (Thunnus albacares) and skipjack (Katsuwonus pelamis) tunas.

Evaluating the efficiency of green economic production and environmental pollution control in China

Resource constraints and environmental pollution are common problems that have long plagued sustainable development, and enhancing the efficiency of green development is the key to cracking the problems. Previous studies have not jointly examined the green economic production efficiency and environmental pollution control efficiency of industrial and service sectors, to fill this research gap, this paper use the constructed meta-frontier, dynamic network Super-SBM (slacks-based measure) model to evaluate the environmental efficiency in China's 30 provinces and 107 cities. The results reveal that, (1) the green production efficiency of industrial and service sectors showed a fluctuating downward trend, and the pollution control efficiency improved first and then decreased. The overall environmental efficiency of both sectors is low, indicating a strong potential for improvement of the green development in China. (2) The overall environmental efficiency of industrial and service sectors has obvious regional heterogeneity, and which decreases as the weight of treatment stage increases. Additionly, the overall environmental efficiency of industry is greater than that of service industry. (3) The input inefficiency of the production stage and output inefficiency of the treatment stage are the main sources of inefficiency for the industry and service industry.

The article discusses the problems of increasing the economic efficiency of knowledge-intensive and innovative production in the processing industries. The purpose of the study is to determine directions for increasing the economic efficiency of knowledge-intensive and innovative production in the areas of processing. During the research process, comparative analysis, scientific abstraction, and generalization methods were used. The applied significance of the research - substantiated proposals can be used for the preparation and implementation of measures in the direction of increasing the economic efficiency of the knowledge-intensive and innovative processing industry. As a result of the study, opportunities for increasing the economic efficiency of production in scientific and innovative processing areas of industry were identified and ways of their implementation were shown. Functional properties of the dietary fibers and their using in the manufacturing technology of fish products

This review presents the up-to-date scientific ideas about the role of dietary fibers of plant origin (fiber and hydrocolloids) and animal origin (chitosan and collagen) in the food systems. The main attention is focused on their significance and methods of their using in the manufacturing technology of fish products. Dietary fibers are considered as important components of a diet; the dietary fibers prevent certain disorders and regulate the physical and mental health of the population. Consuming of fish products contributes both to the enrichment of raw materials with functional ingredients, as well as to the increasing in the efficiency of processing of raw materials, including underestimated and underutilized aquatic biological resources. The review shows the influence of dietary fibers on the restructuring of fish muscles systems, their ability to hold water and fats, to stabilize emulsions, to change their sensory characteristics, to increase the yield of the finished food products, and also their ability to influence the shelf life of the finished food product. The mechanisms of involving the certain groups of dietary fibers into the physicochemical and biochemical processes of interaction with the components of fish raw materials are considered; the influence of various conditions of processing on gelation and emulsification is studied. The factors that provide antimicrobial and antioxidant effects of various dietary fibers are given. The properties and examples of using the commercial fiber preparations obtained from various sources are analyzed separately, and the significance of the molecular structure of chitosan and collagen for ensuring the specified technological parameters is considered. It is concluded that using the dietary fiber in the manufacturing process of fish products increases the economic efficiency of production and contributes to the development of the healthy food industry.
