Analyzing the effects of aroma and texture interactions on oral processing behavior and dynamic sensory perception: A case study on cold-set emulsion-filled gels containing limonene and menthol

This study explored texture and aroma (limonene and menthol) interactions in cold-set emulsion-filled gel (EFG), focusing on mastication behavior, bolus properties, and dynamic sensory perceptions. First, the effects of various polysaccharides on the rheological, textural, and water-holding characteristics of EFGs based on whey protein isolate were examined. Seven EFGs were chosen from 23 samples based on data clustering. The type of EFG structure had a significant effect on chew duration, number of chews, saliva content, bolus particle size, and textural properties, dynamic sensory perception of texture attributes based on temporal-dominance of sensations (TDS), and aroma intensity perceptions based on time-intensity (TI) tests. The presence of aroma compounds did not clearly impact mastication parameters and bolus particle size, but slightly increased saliva content and decreased the hardness and adhesiveness of boluses. Hence, the effect of limonene was more evident than that of menthol. The oil released from the matrix of EFGs during mastication was low and unaffected by the type of EFG structure or aroma compounds. The TDS and TI results showed that texture attributes and aroma intensity perceptions were a function of EFG structure. Limonene and menthol decreased and increased the perception of firmness, respectively, and they also decreased the perception of stickiness and increased the perception of moistness, creaminess, and graininess attributes. Broadly speaking, the aromas impacted texture perception and physiological reactions, implying that studying the relationship between texture and aroma might provide new insights into sensory perception and the development of new food products.

Physico-chemical, microbiological, nutritional composition and sensory analysis of products enriched with mechanically separated meat of marine fish

Fish processing technologies are in full development with new techniques and product formulations. The objective of this work is the development and analyze the physical-chemical, microbiological, nutritional and sensory composition of three formulations of products included based on mechanically separated meat -MSM of marine fish: (1) anchovy meatball, (2) sardine kibbeh and (3) chocolate cake. Sensory analyzes were performed with an untrained public. Each taster received three samples, one of each product and a questionnaire based on the 7-point Hedonic Scale. For the chemical characterization, the analysis protocols of fish products processed according to the legislation were used. The microbiological analyses were carried out in accordance with the recommendations of the National Health Surveillance Agency (ANVISA) for fish-based foods. The nutritional analysis was performed by calculations based on the chemical composition of the developed products. The results of the analyses were favorable for the development of new food products based on mechanically separated marine fish meat for a wide variety of markets.

Melon peel flour: utilization as a functional ingredient in bakery products.

Food by-products are a major concern with a direct impact on the economy, society, and environment. The valorisation of these by-products could be an advantageous approach to face the increase in food waste since it can compromise environmental health and food sustainability. On the other hand, this valorisation would allow the development of new food products with health benefits for the population. Cucumis melo L. is a highly consumed fruit all over the world since it has excellent sensory and nutritional qualities, being also a good source of bioactive compounds. However, its peel and seeds are usually discarded. The aim of this study was to evaluate the potential of melon peel flour as a functional ingredient for innovative food products. For that, two different formulations containing melon peel flour were developed (a biscuit and a muffin) by replacing a conventional flour (wheat flour) in different percentages (50% and 100%, respectively). The nutritional composition, total phenolic content, and antioxidant potential of the developed products were studied, showing a high content of fibre, high levels of phenolic compounds and good sensory acceptability. These results show that it is possible to enrich different foods with melon peel flour in order to improve their nutritional properties, contributing to improving public health, simultaneously valorising a usually rejected by-product, reducing food waste and the environmental impact.

Effects of different temperatures on electric oven drying of myrtle (Eugenia gracillima Kiaersk.) seeds modified by High Hydrostatic Pressure (HHP)

The objective was to evaluate the effects of different temperatures (50, 60, and 70 °C) on electric oven drying of Eugenia gracillima Kiaersk. seeds modified by High Hydrostatic Pressure (HHP). All models tested (Lewis, Page, Handerson and Pabis, and Silva et alii) showed R2 above 0.97 and X2 below 0.05, with better fits using Page's model. HHP pre-treatment caused higher thermal resistance in a short time, and lower starch and amylose content, although these polysaccharides increased with increasing drying temperature. At the morphological level, the pre-treated seeds were described as having uneven, wrinkled, deformed, and more brittle surfaces. The seeds were identified for the first time with major contents of magnesium, calcium, and iron. The association of thermal and non-thermal technologies proved to be satisfactory and promising for application in this by-product, encouraging the development of new food products for human or animal consumption.

Creating Value for Sustainability by Transforming the Food Well-being Paradigm—Alternative New Food Product Development

Due to supply chain disruptions and sourcing uncertainties, multinational and large food manufacturers, retailers and suppliers are investing in New Food Product Development (NFPD) to add value and differentiate themselves from homogeneous food markets. However, for start-up food companies, especially in the NFPD field and within marketing research, this is difficult to do. This article’s aim is to analyse a microalgae milk pioneer and proteinalternative food technology company, its emerging NFPD, and its focused values, highlighting the differences with prior evolutions. A design science methodology and case study are applied. The findings show that technologydriven NFPD, with an integrative process, is promising. Moreover, a diversified and plant-based NFPD is encouraged as it creates sustainability values for consumer well-being by enhancing food technology and business performance. This study contributes to the NFPD literature and marketing research by improving current understandings of how to implement sustainability through technological breakthroughs and innovation in the NFPD process. In addition, it makes a methodological contribution by means of demonstrating how design science can help researchers think outside the box and create practical research to provide valuable solutions. Finally, this is the first study to use design science guidelines to create the NFPD value chain framework.

Physical Characteristics of Egg Yolk Granules and Effect on Their Functionality.

Eggs are among the most nutritious foods in the world, a versatile ingredient in many food applications due to their functional attributes such as foaming, emulsifying, and coloring agents. Many studies have been reported on egg yolk fractionation and characterization in the last decade because of its nutritional and health benefits, especially egg yolk granules. This has led to the development of new food products and packaging materials. However, the influence of their physical characteristics during processing significantly impacts the functionality of yolk granules. In this overview, the egg yolk, the granule fraction's separation, fractionation, components, and molecular protein structure are first presented. Secondly, recent studies on egg yolk granules published over the past decade are discussed. Furthermore, the application of the granules in different industries and current specific scientific challenges are discussed. Finally, it simplifies the changes in the physical characteristics of the granules during different treatment methods and the impact on the functionalities of the resulting products in the food (emulsifiers, edible films), pharmaceutical, and health (encapsulation systems and biosensors) sectors.

Transformation of the formula of fitness ginger based on green buckwheat enriched with rapse protein isolate: a systematic review

Currently, in the field of food production, the priority direction is the creation of products enriched with biologically active components, macro- and microelements. The use of such products in food significantly affects human health and life expectancy. Increasing the nutritional value of food through the use of unconventional natural raw materials contributes to an increase in the amount of nutrients balanced and distributed among themselves in the composition of the product, which directly affects the human body when consumed. A study was conducted to analyze publications on the nutritional, biological value, functional properties of green buckwheat, as well as rapeseed protein isolate. Green buckwheat has a huge supply of nutrients and can be used for the production of flour confectionery. Replacing wheat flour with green buckwheat flour does not affect the physico-chemical quality indicators of the finished product, but significantly improves organoleptic indicators. The results obtained prove that rapeseed protein isolate can be used to transform food formulations, enriching them with vegetable protein, as a substitute for animal proteins. The emulsifying properties of rapeseed protein are important in food systems such as dressings, mayonnaise or ice cream. Water absorption capacity plays a role in the formation of bakery products and flour confectionery products. Despite all the above-described useful, nutritious and functional properties of green buckwheat and rapeseed protein isolate, in fact, are rarely used as functional ingredients, especially in confectionery production. The results of this study may provide a new approach to the development of new food products.

Seaweeds in Food: Current Trends.

Edible seaweeds are an excellent source of macronutrients, micronutrients, and bioactive compounds, and they can be consumed raw or used as ingredients in food products. However, seaweeds may also bioaccumulate potentially hazardous compounds for human health and animals, namely, heavy metals. Hence, the purpose of this review is to analyze the recent trends of edible seaweeds research: (i) nutritional composition and bioactive compounds, (ii) the use and acceptability of seaweeds in foodstuffs, (iii) the bioaccumulation of heavy metals and microbial pathogens, and (iv) current trends in Chile for using seaweeds in food. In summary, while it is evident that seaweeds are consumed widely worldwide, more research is needed to characterize new types of edible seaweeds as well as their use as ingredients in the development of new food products. Additionally, more research is needed to maintain control of the presence of heavy metals to assure a safe product for consumers. Finally, the need to keep promoting the benefits of seaweed consumption is emphasized, adding value in the algae-based production chain, and promoting a social algal culture.

Ultrasonic extraction of soy protein isolate: Characterization and comparison with microwave and enzymatic extraction methods.

Soy meal as an agro-industrial by-product produced by the soybean oil processing industry is rich in protein. To valorize soy meal, the present study was aimed at the optimization of soy protein isolate (SPI) extraction by ultrasound treatment, its characterization, and comparison with microwave, enzymatic, and conventionally extracted SPI. Maximum yield (24.17%±0.79%) and protein purity (91.6%±1.08%) of SPI were obtained at the optimized ultrasound extraction conditions of 15.38:1 (liquid-solid ratio), 51.85% (amplitude), 21.70°C (temperature), 3.49s (pulse), and 11.01min (time). The SPI extracted with ultrasound treatment showed a smaller particle size (27.24±0.33µm) as compared to that extracted with microwave, enzymatically, or conventional treatment. Functional characteristics, namely, water and oil binding capacity, emulsion properties, and foaming properties of ultrasonically extracted SPI were increased by 40%-50% as compared to SPI extracted with microwave treatment, enzymatically, or conventionally. Structural and thermal properties studied by Fourier-transform infrared spectroscopy, X-ray diffraction, and differential scanning colorimeter showed amorphous, secondary structural change, and high thermal resistance of ultrasonically extracted SPI. Increased functionality of ultrasonically obtained SPI can enhance its application in the development of various new food products. PRACTICAL APPLICATION: Soybean meal is one of the richest sources of protein and has huge potential to lessen protein-based malnutrition. Most of the studies on soy protein extraction were found to be based on the conventional methods that yield less quantity of protein. Hence, ultrasound treatment which is one of the novel nonthermal techniques has been selected for the present work and optimized for soy protein extraction. The ultrasound treatment showed significant improvement in extraction yield, proximate composition, amino acids profile, and improvement of functional properties of SPI as compared to the conventional, microwave, and enzymatic methods which proved the novelty of the work. Hence, the ultrasound technique could be used to increase the applications of SPI for developing a wide range of food products.

Pterospartum tridentatum Liqueur Using Spirits Aged with Almond Shells: Chemical Characterization and Phenolic Profile.

With great cultural significance, spirits and distillate beverages constitute an important niche market in Europe. The development of new food products, particularly for the functionalization of these beverages, is increasing exponentially. The present work aimed to develop a new wine spirit beverage aged with almond shells and flowers of P. tridentatum for further characterization of bioactive and phenolic compounds, coupled with a sensorial study to evaluate the acceptance of this new product by the market. Twenty-one phenolic compounds were identified, mainly isoflavonoids and O- and C-glycosylated flavonoids, especially in P. tridentatum flowers, indicating that it is a highly aromatizing agent. The developed liqueur and wine spirits (almonds and flowers) showed distinct physicochemical properties, with the last two samples showing greater appreciation and purchase intention by consumers due to their sweetness and smoothness. The most promising results were found for the carqueja flower, which should be further investigated in an industrial context to contribute to its valorization in its regions of origin, such as Beira Interior and Trás-os-Montes (Portugal).

Development, Optimization and Evaluation of Enriched Custard Powder from Selected Local Food Ingredients

Custard powder is a breakfast cereals meal, primarily, made from corn starch; processed with added flavour and fortified with vitamins and minerals. The aim of this study is to formulate, characterize, and optimize enriched custard powder from bio-fortified cassava, pearl millet, soybeans, Africa locust beans fruit pulp, ginger, egg powder, and milk powder; using a seven-component constrained, D-optimal mixture experimental design, with thirty-eight randomized experimental runs. The formulation design constraints were: bio-fortified cassava (10% - 70%), pearl millet (10% - 70%), soybeans (10% - 60%), Africa locust beans fruit pulp (5% - 30%), ginger (1% - 2%), egg powder (0.5% - 1.5%), and milk powder (0.5% - 1%). The formulated samples were analyzed and evaluated for proximate properties, functional properties, vitamin contents, mineral contents, anti-nutritional contents, and sensory properties; using standard procedures. The result of the numerical optimization gave optimized enriched custard with an overall desirability index of 0.833, based on the set optimization goals and individual quality desirability indices. The optimal formulated enriched custard was obtained from 51.3% bio-fortified cassava, 30.469% pearl millet, 10.0 % soybeans, 5.0% Africa locust beans fruit pulp, 2.0% ginger, 0.5% egg powder, and 0.731 % milk powder. The quality properties of this optimal enriched custard are 6.202 % moisture content, 1.139 % crude fibre, 2.548 % ash content, 20.0 % protein content, 6.668 % lipid, 61.786 % carbohydrate, 0.157 (mL/g) water absorption capacity, 0.121 (mL/g) oil absorption capacity, 19.005 (% vol) foaming capacity, 8.886 (%) foaming stability, 52.474 (deg C) gelation temperature, 5.178 (%) least gelation concentration, 0.758 (g/cubic metre) bulk density, 88.383 (mg/100g) vitamin C, 1.832 (mg/100g) beta carotene, 0.6 (%) tannin, 3.072 (mg/100g) cyanide, 19.032 (%) phytate, 5.313 (mg/100g) oxalate, 16.737 (mg/100g) sodium, 469.150 (mg/100g) potassium, 201.332 (mg/100g) calcium, 167.254 (mg/100g) magnesium, 585.770 (mg/100g) phosphorus, 4.694 (mg/100g) iron, and 6.10 overall acceptability, The result of the study showed that the formulated enriched custard was found to be of higher quality than the traditional custard which are produced from mono-cereals. Improving the nutritional quality of food and tackling nutrient deficiencies, particularly protein energy malnutrition in populations, is possible through the application of numerical optimization technique in the development of new food products.

Consumer Sentiments and Emotions in New Seafood Product Concept Development: A Co-Creation Approach Using Online Discussion Rooms in Croatia, Italy and Spain.

Growing Mediterranean seafood consumption, increasing consumers' awareness of food safety and quality, and changing food lifestyles are leading to the development of new food products. However, the majority of new food products launched on the market are expected to fail within the first year. One of the most effective ways to enhance new product success is by involving consumers during the first phases of New Product Development (NPD), using the so-called co-creation approach. Based on data collected through online discussion rooms, two new seafood product concepts-sardine fillets and sea burgers-were evaluated by a set of potential consumers in three Mediterranean countries-Italy, Spain, and Croatia. Textual information was analyzed by first using the topic modeling technique. Then, for each main topic identified, sentiment scores were calculated, followed by the identification of the main related emotions that were evoked. Overall, consumers seem to positively evaluate both proposed seafood product concepts, and three recurrent positive emotions (trust, anticipation, joy) were identified in relation to the main topics aroused during the discussions. The results of this study will be useful to guide future researchers and actors in this industry in the next development steps of the targeted seafood products in Mediterranean countries.

Analysis of Scientific and Technological Perspectives on the Development of New Food Products from Family Farming

This study aimed to identify the development of new food products related to family farming from scientific and technological perspectives. Data were collected from the scientific literature and patent documents in the Scopus and National Institute of Industrial Property databases, using a combination of terms, such as “family farm* OR small-hold farm* OR agricultur* farm* labor OR farm* size OR peasant farm* OR agriculture* food* product* AND food* product*”. The asterisk (*) denotes a truncation character used in articles and patent databases to perform a search using multiple terms with the same root but different suffixes. A total of 716 articles and 532 patents were identified. The data from the scientific articles provide an overview of family farming participation in the development of food products and how products that are developed by family farmers resonate with society. The patent documents found showed the development of innovative production technologies, such as machines and production methods to improve the quality of the products sold by family farmers. Therefore, there is great potential for family farming foods to advance in this technological area, with the prospect of increasing publications and new patent applications related to this subject.

Nutritional priorities, practices and preferences of athletes and active individuals in the context of new product development in the sports nutrition sector.

Sports nutrition is a rapidly growing sector with increasing demand for evidence-based nutritional products to support competitive and healthy lifestyles. The product development process for novel foods should rely heavily on end-user engagement to facilitate future success, however there is a dearth of published information available. An understanding of the practices and self-reported nutritional priorities of athletes and active individuals is required for the development of new food products, facilitating evidence-based product formulation. Participants were at least 18 years of age, actively participating in competitive sport or structured physical activity on at least two occasions per week. Participants were asked to undertake a comprehensive online survey assessing their nutritional practice, perceived nutritional priorities and preferences for product characteristics. Questions were developed on the basis of critical evaluation of the current scientific literature and the hosting of two scoping focus group sessions with prospective end-users. 405 individuals (29 ± 9 years) completed this questionnaire. 295 participants reported active participation in competitive sport while the remaining 110 participants undertook structured physical activity exclusively. When asked to rank their top three most sought-after product claims in sports nutrition, "enhanced muscular recovery" was the most prioritised receiving 101 first choice preferences (25%) and 295 top 3 preferences. Fifty-eight percent of participants reported taking nutritional supplements. Caffeine containing functional foods (excluding caffeine supplements) were the most commonly used functional food group. A very low incidence of functional food usage was reported otherwise. When asked to rank the importance of various food product attributes, "nutritional profile" was ranked as the most important with rating of 3.37 ± 0.7 out of 4 followed by "taste" and "accessibility". Whole food nutritional products received the most first preference selections and most top 3 selections when presented with a number of popular performance and recovery products on the market. The transition towards a food first approach in sports nutrition is vital for athletes and active individuals to achieve their goals; with the development of evidence-based functional foods, particularly with a focus on muscle recovery, endurance, and strength enhancement at the forefront for new food product design and innovation.

Macauba (Acrocomia aculeata): promising source of nutrients and association with health benefits, a review

Macauba is widely distributed in Brazilian territory. In addition to being used in the biodiesel production and animal food, it is also rich in bioactive compounds. Therefore, the objective of this review is to present the nutritional composition, the main bioactive compounds, and the potential health benefits of macauba. Macauba has high content of carotenoids, tocopherols, proteins, phenolic compounds, oleic acid, and fiber. Due the presence of bioactive compounds, macauba have the potential to promote health and can be used to prevent or treatment chronic non-communicable disease. Furthermore, this fruit and their by-products can be used in the development of new food and pharmaceutical products, promoting benefit family farming and contribute to the health benefits.

Bioactive Natural Pigments' Extraction, Isolation, and Stability in Food Applications.

Color in food has multiple effects on consumers, since this parameter is related to the quality of a product, its freshness, and even its nutrient content. Each food has a characteristic color; however, this can be affected by the technological treatments that are applied during its manufacturing process, as well as its storage. Therefore, the development of new food products should take into account consumer preferences, the physical properties of a product, food safety standards, the economy, and applications of technology. With all of this, the use of food additives, such as dyes, is increasingly important due to the interest in the natural coloring of foods, strict regulatory pressure, problems with the toxicity of synthetic food colors, and the need for globally approved colors, in addition to current food market trends that focus on the consumption of healthy, organic, and natural products. It is for this reason that there is a growing demand for natural pigments that drives the food industry to seek or improve extraction techniques, as well as to study different stability processes, considering their interactions with the food matrix, in order to meet the needs and expectations of consumers.

Ultra-performance liquid chromatography-quadrupole time-of-flight mass spectrometry-based metabolomics to clarify the mechanism of color change of saffron floral bio-residues.

Saffron floral bio-residues (SFB) are a valuable natural source of antioxidants and dyes that can contribute to the development of new food products and cosmetic products. Color change was usually observed during SFB storage, which may result in quality degradation of SFB or even cause potential hazard to human health. In order to clarify the mechanism of color change of SFB sample, the chemical differences among SFB samples stored under different conditions were analyzed using ultra-performance liquid chromatography coupled with quadrupole time-of-flight mass spectrometry and chemometrics methods, from which differential flavonols and anthocyanins were screened and their kinetic variations during sample storage summarized. In addition, the color change of the SFB sample was digitalized using an electronic eye (E-eye), which was found to be related to the content of delphinidin-3,5-di-O-glucoside (DDG). Moreover, the degradation kinetic parameters of DDG under different storage conditions were studied. In conclusion, the variation of kaempferol-, isorhamnetin-, and quercetin-type flavonol, and delphinidin- and petunidin-type anthocyanin resulted in the color change of SFB sample, and anthocyanin was found more unstable than flavonol. PRACTICAL APPLICATION: Saffron floral bio-residues (SFB) are popular natural sources of antioxidants and colorants that can be used in food and cosmetic products. Color change usually occurs during SFB storage period. Clarifying the mechanism of the color change of SFB will help us to ensure the quality of SFB.

Innovative meat product technology: a new look at traditional nutrition

A promising direction in the development of new food products is the reduction of calories and partial replacement of ingredients of animal origin with vegetable ones to maximize the saturation of foods with nutrients that contribute to the maintenance of normal life. The aim of this work was to develop an optimized recipe for a meat product – pate, based on a traditional recipe, but including herbal ingredients of local origin. The proposed recipe for pate in traditional cuisine allows to reduce the calorie and fat content of the daily diet of a modern person while increasing the protein content, expands the range of finished meat products on the consumer market, and maximizes the provision of the organism with the necessary nutrients. The paper presents the results of a comparative analysis of the qualitative characteristics of the pate, made according to the traditional recipe, and experimental samples with different contents of the herbal ingredient, followed by the selection of a sample with an experimentally determined optimal composition. The plant components included in the new recipe – pumpkin-flaxseed complex and carrot dietary fiber – provide the maximum balance of nutrients.

Effect of ethanol on gelation and microstructure of whey protein gels in the presence of NaCl

The heat-induced gelation of whey proteins in the presence of sodium chloride (0–300 mM) and ethanol (0–70.0% w/w) has been investigated by confocal microscopy, texture analysis and rheology. In the presence of NaCl, the alcohol-induced gels had a low porosity and formed a “particulate” network, as evidenced by confocal microscopy. Even 1% of ethanol was able to form very elastic gels, to increase their rigidity 3 times, while the presence of 10% ethanol increased the storage modulus by up to 10 5 times higher than that to the native proteins without ethanol. The substantial effect of alcohol on gel stiffness was ascribed to non-covalent interactions (mainly hydrogen bonding) as well as to intra- and intermolecular disulfide linkages. The type of forces that prevailed were dependent on the ethanol content. Generally, the synergistic effect of ethanol, heating, and NaCl on the mechanical and microstructural properties of whey protein isolate gels might have useful implications for the development of new food products with various functionalities. • The effect of NaCl/ethanol on the gelation of heat-induced WPI gels was studied. • Heating played an important role in gelation and stability of WPI gels. • CLSM micrographs revealed the formation of aggregates which diminished upon heating. • The type of forces that prevailed were dependent on the ethanol content.

Development of New Food Products from Millet

Proper nutrition can give us health , longevity and beauty . It assumes that the body regularly needs the necessary amount and many nutrients such as proteins , carbohydrates , fats , water , minerals , vitamins should be supplied in optimal proportions . In Kazakhstan, wheat is industrially produced only millet and semi-artisanal products such as " tari ", " talkan " and " zhent " are produced . And wheat is an ideal product that can be attributed to the right raw materials , since the fact that it does not contain gluten , the raw materials are rich in B vitamins and protein . The research and development of the technology of the national cereal product talkan , creates an opportunity to expand the range of products , enrich the food market and the consumer's diet with a new cereal product rich in irreplaceable components , and developed taking into account forgotten original traditions and national culture . The analysis was carried out in the laboratory of Almaty Technological University. The calculated part of the finished product was analyzed to determine the chemical composition , the content of micro and macroelements . We have developed the technology of PN Talkan preserving all the useful properties . At the stage of approval of regulatory and technical documents for the production of PN Talkan . In this research work , the traditional product was improved in a new , most useful format . The technology of low-calorie millet talkan has been developed .
