Abstract

Fruits have a short storage life when compared with other commodities. Harvesting of fruits at the optimum maturity is a major factor in order to avoid post-harvest damage. Due to the effects of artificial ripening agents, we have to harvest the fruits at the proper maturity stage. The level of maturity actually helps in the selection of storage methods, estimation of shelf life, selection of processing operations for value addition, etc. Presently, non-destructive testing (NDT) covers a wide group of techniques, provide a real-time result, avoid raw material damage and increases the shelf life during storage. There are numerous method to identify the fruit maturity and quality through the non-destructive method. This review provides a various method of fruit maturity identification. Depending upon the efficiency, accuracy, future trend to identify maturity methods like image processing, sensor identification, deep learning are discussed in this review article.
