Abstract

The objective of this study was to evaluate the economic viability of small scale industrial production of a fermented symbiotic smoothie-type containing fruit pulp, by analyzing the indicators of net present value (NPV), internal rate of return (IRR), payback period (PP) and break-even point (BEP). Fruit pulp concentration and fermented milk were combined in the proportion of 40:60 (wt/wt), and the inulin prebiotic and HOWARUTM Bifido strains used. The results showed that the investment would be economically feasible and that the product would be able to compete in the market.
