Abstract
Visando aproveitar os resíduos pós-fermentativos de vinagre de banana (M. balbisiana Colla), desenvolveu-se projeto para verificação dos constituintes básicos deste resíduo (massa fermentada) para seu possível aproveitamento racional como fonte alimentar, na fabricação de ração animal, como também minimizar e problema de poluição ambiental. Foram realizados os procedimentos para obtenção e preparo da matéria-prima, acompanhamento dos processos e análises físico-químicas.
