Abstract

Capillary electrophoretic methods were developed to investigate the possibility of prolamin identification of four rice varieties i.e. Thai white fragrant rice KD105, Korkhor15, Thai white rice A, and a Chinese white rice H20. Two extraction methods were compared and varietal identification of rice prolamins was successfully accomplished by capillary electrophoresis in pH 2.5, sodium phosphate buffer containing 20% acetonitrile and 0.05% hydroxypropylmethylcellulose.
