Abstract
Currently, modernization has had a negative effect on Mexican culinary traditions and this has an impact on the environment. The Milpa diet is a traditional Mexican food pattern that uses beans, corn, chili and pumpkin as a base, and also integrates the consumption of other local and traditional foods such as a wide variety of vegetables. One of these vegetables is quelites, it is a type of edible leaves, which provide an important source of vitamins and minerals. Rescuing the consumption of these foods is of utmost importance for a sustainable and healthy diet. Therefore, the objective of this study is the nutritional value of a recipe based on the “Milpa Diet”: Quelites pancakes. To inform about the relevance and health benefits of consuming this type of recipes.
