Abstract

The object of the study was the bull-calves of the Kazakh white-headed breed of the Trans-Volga inbreed type and their crosses with the Ural Hereford of different generations. During the control slaughter at 18 months of age, the morphological and varietal composition of meat products was studied. The manifestation of the effect of crossing on the quality indicators of meat products is established. At the same time, the bulls of the Kazakh white-headed breed were inferior to the Hereford crossbreeds in the specific gravity of the edible part of the carcass by 0.9–2.2 %, the meatiness index 0.12–0.38, and the yield of premium meat by 0.6–1.6 %. The most significant manifestation of the crossing effect was observed in crossbreeds of the first generation. The second-generation crossbreeds were inferior to them in the studied indicators by 1.3, 0.26, 1.0 % respectively. The obtained experimental materials can be used to perfect cattle of the Kazakh white-headed breed.
