Abstract
By identifying 27 yeasts isolated from orangeades, orangeade bases, sugar syrups and orange concentrates, the dominating position ofSaccharomyces andCandida yeasts within the soft-drink flora was confirmed.Candida pelliculosa andKloeckera javanica were isolated from this habitat for the first time. Seven yeasts — exclusively belonging to the genusSaccharomyces — excreted polygalacturonase (PG) under favourable conditions, wheares no yeast produced pectinesterase or pectinlyase. Three of the PG-producing yeasts destabilized the cloud of commercial orangeades (pH 3.4) after suitable reproduction. The cloud-destabilizing activity ofSaccharomyces yeasts is primarily based on their PG activity. It may occur in orangeades of pH values between 2.7 and about 4.0, if the degree of esterification of the cloud pectin is low enough to allow degradation. A possible mechanism of cloud coagulation is discussed.
