Abstract
AbstractAn extension of the Statistical‐Mechanics model for the inclusion complex of amylose with iodine is developed to take into account the influence of the degree of polymerization (x) of the polysaccharide. Good agreetment is found with the experimental data, in particular the iodine binding capacity (IBC) vs x is well reproduced by the model.
