Abstract
This paper presents the characteristics and the specificities of the Aosta Valley Fontina DOP cheese, and it points out that the DOP trademark represented a strategic element for the creation of a specific market, both on a national and international level. Furthermore, the potential link to the preservation of locally based products for the protection of a socio-cultural heritage, and for the sustainable development is emphasised.
