Abstract

Access to export markets for Australian perishable produce can be affected by several factors, technical and non-technical. A template for resolving some of these issues was developed initially for pork into Singapore and is now being used for other chilled products. The template includes understanding the market requirements for a product and ensuring that supply chains deliver those attributes. The major impact on current product attributes such as food safety and shelf life was found to be temperature control. Strategies to improve cold chain management include application of predictive microbiology models.
