Abstract

ABSTRACT The perilla oil rich in polyphenols was obtained by the co-extraction of perilla seeds and perilla leaves using supercritical carbon dioxide. The effects of the operating conditions on the properties of the obtained oil were investigated by single-factor analysis and response surface methodology. Under the optimum conditions, the values of the oil yield, the DPPH scavenging activity, and the alpha-linolenic acid yield were 7.43 ± 0.15 g/60 g sample, 69.41 ± 1.17%, and 49.14 ± 1.38%, respectively, which were in good agreement with the predicted values. Additional, the co-extraction product was observed high total polyphenol content and good oxidation stability.
