Abstract
Understanding the stability of the shrimp allergen tropomyosin (TM) in shrimp powder at different temperatures is necessary to develop shrimp oral immunotherapy (SOIT). We evaluated the shrimp TM stability for different storage times for utilization in a SOIT clinical trial and determined the specific IgE (sIgE) binding capacity of raw and cooked shrimp allergen extracts.
