Abstract
The aqueous solutions of two isomers, α- and β-glycyrrhizins (α-G and β-G), are studied by the spin probe method using two spin probes, 17β-hydroxy-4′,4′-dimethylspiro[5α-androstane-3,2′-oxazolidin]-3′-yloxyl(I) and 2-(3-carboxylpropyl)-4,4-dimethyl-2-tridecyl-3-oxazolidinyloxyl(II). The spectra of probe I in α-G solution changes gradually in the temperature region from 70 to 10°C. On the other hand, the spectra in β-G solution changes drastically between 60 and 50°C as the result of the gelation of the solution. The spectra in the course of temperature lowering is different from those of temperature elevation, suggesting that the gelation occurs irreversibly. In the case of probe II, residual mobility due to the internal rotation was always observed in both solution, regardless of the gelation. The apparent A ̄ = values and the rotational correlation times were measured and were discussed in connection with the structure of the solution.
