Abstract

I was fascinated to read the communication 'Shake up in segregation theory' from Tony Rosato (Physics Bulletin September 1987 p328), but I was disappointed that he omitted what must be the most common, and probably the earliest, observation of the phenomenon. Every housewife making pastry observes the effect as she shakes the bowl to bring to the top of the mixture pieces of fat not yet properly combined with the flour.
