Abstract
ACH inspector on the processing line examines 12 to 16 turkeys per minute (3 to 5 seconds per bird). During this period it must be determined whether the whole bird shall be condemned, affected parts removed, or the entire carcass passed as wholesome. The inspector is not required to diagnose the diseased conditions observed, yet in respect to tumors he must make a decision equivalent to a diagnosis. Under "Tumors-Not of the Leukosis Complex" are the following criteria (pages 3637 of the Poultry Inspector's Handbook) 11: "If there is a tumor or multiple tumors, the following considerations should be given: "1. If the size, position, or kind of the tumor or tumors is such that the general condition of the bird is toxic, the whole carcass shall be condemned. "2. If the tumor or tumors involve the parietal peritoneum and other tissues of the carcass, the whole carcass is to be condemned. "3. If the tumor or tumors involve the viscera only, the viscera is condemned and the carcass passed as wholesome. "4. If the size, position or kind of an encapsulated tumor or tumors is such that the general condition of the bird is not affected the tumor shall be removed and the carcass passed as wholesome."
