Abstract

In this fast paced jet age, mlost Americans have a way of life quite different from their grandparents-less hard physical labor, more sitting and less walking, and new types of stresses. Quite recently, doctors have begun to ask if our diets have kept in step with our changing pace of life. They have many reasons for suspecting that the diet of the days of the walking plow and the hoe may not be the best one for us today, and that many chronic degenerative diseases may reflect imbalances in our diets. One aspect has a direct bearing on future markets for edible fats and oils. This is the growing awareness that, although the various fats have equivalent energy values, they miiay differ noticeably in nutritional values.
