You make gumbo with the end in mind. Before I begin cooking gumbo, I rehearse my mother’s recipe, which is my grandmother’s recipe, which is her mother’s recipe, and so on. Acadiana spans across multiple parishes in southern Louisiana. Cajun culture varies across Acadiana, and this particularly arises in cooking. Lafayette Cajuns put boiled eggs into their gumbo. My mother’s family is from Churchpoint and Opelousas. Her gumbo is a meat stew of chicken and sausage. Occasionally, she makes crawfish and sausage, my favorite gumbo. My great-aunt from down the way makes seafood gumbo, rich with oysters and crabs. Gumbo tells the story of where you are from. It divides us into our parishes, into our families that spread across the bayous. The way we make our spices, the darkness of the roux, it roots us. My...
