Abstract
Wine is a product from Vitis vinifera L. fruits that presents qualitative and quantitative differences in its phenolic composition which directly depends on the grape variety from which it is made. Red wine shows the most antioxidant, neuroprotective and cardioprotective effects, because of its high polyphenols content. Recent studies have shown that the dealcoholized fraction of wines can have important neuroprotective properties which depend on a wide number of factors such as climatic and cultivation process, winemaking technology, conditions of wine storage, etc. [1]
