Abstract

Pseudomonas fluorescens is a specific spoilage organism (SSO) of most seafood. Its spoilage characteristics, such as production of extracellular protease, biofilm formation and virulence factors, are significantly related to its quorum sensing (QS) system. Our previous research found that hesperidin is a quorum sensing inhibitor (QSI) against P. fluorescens, but the insolubility and instability characteristics of hesperidin limit its application. Therefore, in this study, polylactic acid/hesperidin electrospun fiber was prepared and its properties were characterized. The quality of Scophthalmus maximus coated with electrospun fiber was assessed during cold storage. Results showed that the electrospun fiber had good thermal stability, tensile strength, hydrophobicity, slow-release character and other properties. The hesperidin released from the electrospun fiber significantly inhibited the production of bacterial water-soluble extracellular polysaccharides and Ca2+-ATPase activity in Scophthalmus maximus fillets. The results indicated that QSIs combined with the electrospun fiber will provide a new way to improve the freshness, quality and shelf-life of seafood.
