Abstract

Abstract The application of photonics to quality control in food processing can assist food processors in achieving their goal of a high quality and consistent food product. Technologies which have been employed include near‐infrared, mid‐infrared, Raman and fluorescence spectroscopy. Four broad areas of application of these technologies in food processing are reviewed. They are quality, safety, authenticity and process control applications.
