Abstract

UD. Fatimah Jaya is a producer of raw cassava crackers in Kesilir Village, Jember Regency. UD. Fatimah Jaya produces 75-80 kg of raw materials in 1 day. This manufacturer has quality problems resulting in losses. The quality problem is in the thickness of the product is not the same, the appearance is not intact, and the bearing. The purpose of this study was to identify and analyze the defects of cassava Crackers products in UD. Fatimah Jaya. Identify the factors that cause product defects cassava crackers UD. Fatimah Jaya. The research time was conducted in February 2023. Analysis tools used are check sheet, Pareto diagram, and fishbone diagram. The results of the study total disability cassava Crackers products in 1 month (February) observation of 49 kg. The most product defect attributes are non-uniform thickness with a percentage of 47%, 31% incomplete appearance, and 22% bearing defect attributes. In the fishbone diagram obtained the results of the main factors that cause product defects are machine, man, method, and environment.
