Abstract
Q is a Taiwanese word for a food texture that forms a distinctive part of the island's cuisine. Squishy and yielding, Q makes a surprisingly refreshing accompaniment to a wide range of flavors, but it is not exactly a familiar, or even welcome, mouth feel for someone, such as the author, whose previous gastronomic preferences were defined by the typical standards of mainstream America. However, approached with an open mind, Q can prove to be quite addictive, as well as a "gateway drug" to other unfamiliar and exquisite culinary experiences. For the author, Q has certainly been an acquired taste. Embracing it, along with other strange and unexpected experiences, has enriched and opened the author’s mind considerably.
