Abstract
An α-galactosidase capable of α-galactosyl transfer on to a 4-position of sugar acceptors was isolated from Aspergillus niger and purified to homogeneity. The enzyme was characterised with respect to its pH and temperature optima and stability, molecular mass and p I. Inhibition by compounds relevant to a potential application of the enzyme for oligosaccharide synthesis was investigated.
