Abstract

Soybean oil is a natural extract from whole soybeans. Soybean oil has a high smoking point, facilitating the cooking process. The crude soybean oil of good quality has a light amber colour, which upon alkali refining turns to yellow. Soybean oil is low in saturated fatty acids without any cholesterol and hence considered as heart-healthy oil. Soybean oil is obtained from the seeds either by pressing or solvent extraction method. Soybean products being nutritive are more susceptible to spoilage during storage. The training is organized for preparation of soy milk and soy paneer, full fat soy flour, and soy based bakery products and snacks. The enterprises process soybean mainly for production of soy milk, soy paneer, soy flour, soy based bakery products, soy nuts, etc. Soy milk/soy paneer plant, textured soy protein plant and soybean oil plant are categorised into small, medium and large scale units respectively.
