Abstract

In addition to xylose isomerase and sorbitol dehydrogenase activities, Candida boldinii contains aldose reductase activity. This aldose reductase does not appear to contribute to sorbitol formation because it has negligible activity with glucose as a substrate. The high activity of this aldose reductase with non-sugar aldehydes suggests that there may be industrial potential for this or other yeast aldose reductases in the production of various diols and triols, particularly since this enzyme acts irreversibly on these aldehyde substrates.
