Abstract
The safety of food and water has recently been under intense media scrutiny. This is especially true in the wake of large-scale outbreaks of illness caused by emerging pathogens such as Escherichia coli 0157:H7 and Cryptosporidiumparvum ( (1) Ollinger-Snyder P. Matthews M.E. Food safety issues press reports heighten consumer awareness of microbial safety. Dairy, Food, Environ Sanit. 1994; 14: 580-589 Google Scholar ). In addition to these high-profile microbial hazards, other food and water safety issues have made headlines and are frequently covered in the popular press ( (1) Ollinger-Snyder P. Matthews M.E. Food safety issues press reports heighten consumer awareness of microbial safety. Dairy, Food, Environ Sanit. 1994; 14: 580-589 Google Scholar ). These issues include chemical and physical contamination, food additives, allergies, intolerances, and sensitivities.
