Abstract

Normal 0 MicrosoftInternetExplorer4 The purpose of this study was to determine total polyphenols and flavonoids content of a black radish alcoholic syrup as well as its scavenging activity against free radicals, comparatively with the syrup ingredients (black radish juice and honey) and vitamin C. Black radish alcoholic syrup showed high quenching effects against superoxide anion and hypochlorite anion. Against hydrogen peroxide and singlet oxygen, black radish alcoholic syrup showed prooxidant activity.
