Abstract

Polyphenols are a large group of organic compounds found in plants, microorganisms, fungi, but they cannot be synthesized in animals. Polyphenols have biological activities and play an important role in human life needs. The purpose of this study is to provide data on enhancing the ability to extract polyphenols from Paramignya trimera plants (Xao Tam Phan) through the Response surface methodology (RSM). Concentration of polyphenols is tested for content by Folin-Ciocalteu method. The anti-oxidant is tested by DPPH free radical scavenging and reducing capacity. The results showed that the extract with the highest polyphenol content was 45.380 mg/g dry sample under optimal conditions of 58% alcohol concentration, sample: solvent ratio was 1:54 at a temperature of 66°C within 39 minutes.
