Abstract
Today, more than ever before, many young children spend the greatest part of their day away from home at a day care center. As a result, the day care profeSSional has become an important part of a child's life. Early childhood educators must be trained in the important aspects of children's daily needs. One of those needs is food and nutrition. Many children at day-care centers are eating up to two meals and two snacks each day away from home. The goal of this project was to instruct early childhood educators in the basic nutritional needs of preschoolers, by developing and implementing a series of four workshops with the preschoolers' special needs in mind. The workshops were held weekly and each was one and one-half hours in length. Providers from federally-funded programs, such as Head Start, private nonprofit centers, and family day care homes attended. The varied background of the providers and the length of the series differentiated it from other day care programs. Each workshop had a set of separate objectives which were measured by weekly preand post -tests. An overall evaluation form was given to the participants at the end of the last class. Questions included: What do you feel you learned during the workshops?, Which areas covered were most helpful to you? and Is there any subject you feel should have been included?
