Abstract
Mutagens were formed in seven out of 12 brands of Chinese wine tested after treatment with nitrite at pH 3. Most of the non-distilled wines were found to contain the precursors of mutagens while the distilled wines did not. The majority of Chinese wine is non-distilled and this, coupled with the over use of sodium nitrite in food processing in China, could be a cause of the high incidence of several types of cancer among Chinese people.
