Abstract

The genetics of lactic acid bacteria has seen very significant advances over the past decade, leading to a detailed molecular understanding of several key industrial properties and to the development of sophisticated technology for genetic manipulation. It is relevant to dairy interests that the most advanced species in terms of genetic understanding and technical sophistication is Lactococcus lactis, although other dairy species have also advanced rapidly. An introduction to the genetics of lactic acid bacteria with an emphasis on L. lactis is presented here. The reader is urged to consult the many excellent reviews that are available for a more complete treatment of individual topics.
