Abstract
Effects of moisture adsorption on low-moisture rice were recognized as early as 1930. However, as rice production became mechanized, research emphasis changed to drying. Effects of moisture adsorption by low-moisture wheat grains were also observed. For the last 25 years, the moisture adsorption phenomenon has been gaining recognition and is rapidly becoming an area of primary research in post harvest rice technology.
