Abstract

Delicate horticultural products undergo high stress in the post-harvesting phase. Value losses are considerable. From a consumer viewpoint, a reduction in produce freshness is of special importance. Applying a chain-overlapping model as an approach for forecasting freshness should help develop the basics for assessing the specific, freshness conserving program for horticultural postharvest chains. Preliminary computations based on transpiration-dependent outside loss could exemplarily calculate the freshness status under postharvest conditions for washed carrots and predict their perishability. The inclusion of more freshness parameters as well as economic aspects are planned.
