This comprehensive review paper delves into the nutritional value of millets and their multifaceted role in global nutrition and sustainability. Millets, a group of small-seeded grains, have garnered increasing attention due to their exceptional nutritional composition and potential to address contemporary challenges related to food security, health, and sustainable agriculture. Our exploration begins with an introduction to the various types of millets and their significance in global nutrition.
