Abstract

The Betawi tribe is a native tribe of Jakarta. The Betawi tribe is experiencing a process of cultural assimilation from domestic and foreign immigrants. Betawi is famous for its various customs and culture. Food and drink are one component of community customs which are part of culture. This research aims to determine the existence of gabus pucung, the meaning of gabus pucung in Betawi culture, and how efforts can be made to preserve gabus pucung. The research method used in this research is qualitative using literature study methods, distributing questionnaires, and interviews with several sources. Questionnaires were distributed to 300 Jakarta residents and 90 Betawi people. The results of this research are that snakehead fish is very rare, this is because it is difficult to get snakehead fish, which is the main ingredient and very few restaurants offer this food. Gabus Pucung has meaning in the Mengkeng ceremony and the Nyorok tradition which continues today. Even though conservation efforts have been stated in the 2014 Ministerial Regulation, the government has not implemented them consistently. Conservation efforts carried out by the government can be carried out in various forms, starting with addressing the root of the problem, namely the scarcity of snakehead fish, which is important in preparing Gabus Pucung. In addition to devising solutions to ensure a sustainable supply of this essential ingredient, governments can also spearhead outreach programs, hold seminars, and organize culinary exhibitions and competitions
