Abstract
Molecular products formed upon the dissolution of γ-irradiated crystalline sucrose were identified by means ofHPLC, UV spectroscopy, and chemical analysis techniques. The effects of the storage time of irradiated sucrose crystals, the pH of the solvent, and the presence of oxygen in the solvent on the composition of the final solutions of this carbohydrate were studied. The formation routes for certain final products of lyochemical reactions were determined by comparison of the buildup and decay kinetics of particular types of free radicals in irradiated sucrose with the amount of various molecular compounds in solutions of these crystals.
