Abstract

Lupinus mutabilis, also termed Andean lupin, has gained increasing interest in recent years. In the literature, there is a lack of information about the detailed chemical characteristic of L. mutabilis seeds cultivated in the Europe region. Providing basic knowledge about the seeds’ composition is essential for emerging their cultivation in Europe. The main nutrients present in the studied seeds were proteins and fat that constituted 44.7 % d.m. and 15.4 % d.m., respectively. Detailed analysis revealed that the proteins mainly consisted of α- and β-conglutin fractions (>80 % of all proteins isolated from the seeds). The main TAGs in the oil fraction were identified as LOO (16.43 %), LnOP (14.72 %), LLO (13.77 %), and LnLP (10.17 %). Other analyses revealed the presence of such pro-healthy compounds as oligosaccharides, tocochromanols, carotenoids, phytosterols, and flavonoids. The high content of proteins and fat that was determined in L. mutabilies seeds allows to consider them as a dual source of nutrients. Moreover, the wide range of bioactive compounds that were identified in the seeds suggests their application for the production of food with health-beneficial effects.
