Abstract
Transglycosylation to stevioside by β-1, 3-glucanase from Flavobacterium dormitator var. glucanolyticae FA-5, in the presence of β-1, 3-glucans has been observed to give a series of glycosylated steviosides. One of the glycosylated steviosides derived from stevioside and laminaran by the β-1, 3-glucanase, ST-1, was purified by silicagel column chromatography. By chemical modification and 13CNMR spectroscopy, the ST-1 was identified as a β-1, 3-monoglycosyl stevioside which was glycosylated at the terminal glucose residue of C-13 sophorose side chain of stevioside molecule. Other products of the glycosylated steviosides were identified as a series of steviosides having different lengths of linear β-1, 3-linked glucose residues.
