Abstract
The adhesion and biofilm formation of Listeria monocytogenes on new and used boning knives (handle and blade) was observed and the number of pathogens on both surfaces increased with the contact time, forming biofilm after 2h. L. monocytogenes removal with peracetic acid and hot water were effective at all contact times and concentrations evaluated. The biguanide showed lower efficiency on used surfaces, increasing the effectiveness at concentrations of 2.0%. The new blades showed a lower roughness and flattening morphology in comparison to used surfaces. In this way it was possible to observe a greater adherence on used boning knifes.
