Abstract

Many kinds of authentic fatty acids, including hydroperoxy and hydroxy acids, were found to be not only detectable by liquid chromatography-mass spectrometry (LC-MS) with an atmospheric pressure chemical ionization interface system, but also measurable quantitatively by LC-MS installed with a spectrophotometer. We used LC-MS with spectrophotometry to analyse fatty acids split from lecithins after phospholipase A 2 treatment. Thus, some hydroperoxy fatty acids split from photo-oxidized lecithin could be identified.
