Abstract

Summary1. Studies have been made of the concentration in the tissues of the rat of enzyme that catalyzes the hydrolysis of olive oil and tributyrin. 2. Serum liberated from an emulsified olive oil substrate an average of 6.6 micromoles of fatty acid per ml during the first hour of hydrolysis. 3. Liver, kidney and spleen were found to contain 3 to 6 times as much enzyme that splits olive oil as observed in serum. Pancreas showed 6000 times as much enzyme that splits olive oil as found in serum. Brain yielded low and questionable values. 4. In analyses with emulsified tributyrin as substrate, tissue extracts liberated 4 to 100 times as much fatty acid as was split from olive oil under the same conditions.
